PAN-ROASTED SWEET POTATOES WITH DRIED CHERRIES & PECANS



Pan-Roasted Sweet Potatoes with Dried Cherries & Pecans image

Dried cherries and nuts give this healthy sweet potato side dish recipe a traditional feel. The addition of some bacon for lushness and Aleppo pepper for a little bite really kicks things up.

2 pounds small sweet potatoes, peeled if desired
3 tablespoons extra-virgin olive oil, divided
2 tablespoons butter, divided
1 tablespoon honey
2 teaspoons reduced-sodium tamari
½ teaspoon Aleppo pepper (see Tip)
½ teaspoon ground turmeric
¼ teaspoon kosher salt
Freshly ground pepper to taste
2 slices bacon, chopped
2 tablespoons dried sour cherries
2 tablespoons coarsely chopped pecans or walnuts

Steps:

  • Halve sweet potatoes lengthwise, then cut crosswise into 1/2-inch-thick slices. Heat 1 tablespoon each oil and butter in a large skillet over medium-high heat. Add half the sweet potatoes and cook, turning once, until starting to brown in spots, 2 to 4 minutes total. Reduce heat to medium-low and cook, turning frequently, until tender, 3 to 5 minutes more. Transfer to a large bowl; cover to keep warm. Repeat with 1 tablespoon oil and the remaining butter and sweet potatoes. Transfer to the bowl and keep covered.
  • Meanwhile, combine honey, tamari, Aleppo pepper, turmeric, salt and pepper in a small bowl.
  • Add the remaining 1 tablespoon oil and bacon to the pan and cook over medium-low heat, stirring often, until the bacon is crispy, 6 to 8 minutes. Add the honey mixture and simmer, stirring, for 30 seconds. Remove from heat.
  • Return the sweet potatoes to the pan along with cherries and nuts; toss to coat. Serve warm or at room temperature.

1 small sweet potato, diced
1 lemon, sliced, seeds removed
1 cup green beans, trimmed
1 tablespoon olive oil
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 clove garlic, minced
½ teaspoon salt, plus more to season
¼ teaspoon ground black pepper, plus more to season
1 boneless, skinless chicken breast
¼ teaspoon paprika

Steps:

  • Preheat oven to 375˚F (190˚C).
  • Add the sweet potatoes, lemon slices, green beans, olive oil, rosemary, thyme, garlic, salt, and pepper to a large bowl (or parchment paper-lined sheet tray) and toss until fully coated.
  • Season the chicken breast with salt, pepper, and paprika.
  • Transfer to a parchment paper-lined sheet tray and place the chicken breast on top of the vegetables (if you tossed your vegetables in a bowl).
  • Bake until vegetables are tender and chicken is cooked through, about 20 minutes.

Quick and easy oven roasted sweet potatoes recipe, made with simple ingredients in one pan/ pot. This 30 minute side dish has hints of cinnamon and ginger.

3 medium Sweet potatoes (About 2 pounds, Peeled and cut into 1 inch cubes)
2 tbsp Olive oil
1/4 tsp Cinnamon powder
1/8 tsp Ginger powder
1/4 tsp Paprika
Salt (To taste)
Pepper (To taste)

Steps:

  • Spread potatoes in a baking tray, lined with foil paper.
  • Drizzle olive oil and sprinkle cinnamon, ginger, paprika, salt, pepper.
  • Mix until evenly coated.
  • Spread out the potatoes so that they are not overlapping and bake evenly.
  • Bake at 425 degrees for 20-25 minutes or until crisp and golden brown on the outside but soft on the inside. Be sure to toss everything halfway through.
  • Serve immediately and enjoy!

4 sweet potatoes (about 1.2kg), peeled
2 tbsp olive oil
sliced red onions, unpeeled garlic cloves, thyme sprigs or other veg or herbs of your choice (optional)

Steps:

  • Heat the oven to 230C/210C fan/gas 8. Chop the sweet potatoes into 2-3cm cubes.
  • Tip into a large, shallow roasting tin, drizzle with the oil and season with salt and pepper. If you're adding additional veg or herbs, such as sliced red onions, garlic cloves and thyme, tip these in as well. Toss everything together to coat in the oil, then roast for 20 mins. Toss again to ensure the potatoes cook evenly, and roast for another 15-20 mins until the potatoes are lightly browned on the outside and tender when pierced with a fork or knife.
