ROCKY ROAD FUDGE BARS
This is a recipe from my soon to be Mother in Law. It's a family favorite that I made for the first time with rave reviews. I've been told it was originally a Pillsbury Bake-Off recipe.

Steps:
- Heat oven to 350.
- Grease 9x13 pan.
- In large saucepan, melt butter and chocolate over low heat.
- Add remaining bar ingredients and spread into pan.
- In small bowl combine all the filling ingredients except for the nuts and chocolate chips.
- Beat one minute at medium speed and stir in the nuts.
- Spread over bar mixture.
- Sprinkle with chocolate chips.
- Bake at 350 for 25-35 minutes or until toothpick comes out clean.
- Sprinkle with Marshmallows and bake 2 minutes longer.
- Meanwhile in large saucepan, melt the remaining butter, chocolate and cream cheese and milk over low heat.
- Remove from heat and stir in powdered sugar and vanilla until smooth.
- Pour over marshmallows and swirl together.
- Chill until firm, cut into squares.

Steps:
- Combine butter, chocolate chips and butterscotch chips in 4 quart saucepan. Cook over low heat stirring constantly, until melted. (4-6 min.)
- Stir in peanut butter until well mixed.
- Remove from heat.
- Add cereal & marshmallows, toss until well coated.
- Press mixture onto bottom of buttered 13x9 inch baking pan.
- Refrigerate until firm (about 30 minutes).
- Cut into bars.
- Store refrigerated.

ONE PAN - TACO SKILLET

Steps:
- Brown beef in skillet, drain fat.
- Add pkg of chili seasoning mix, Tomato Soup, then half cup (or half can of water).
- While slowly bringing to a boil, cut flour tortilla shells in one inch squares. A pizza cutter comes in handy to cut 2 at a time!
- Throw in shells. Add the can of tomatoes with green chilies, can of corn, beans (rinsed and drained) and 1/2 cup of cheese.
- Cover, bring down to low simmer. Stirring until well blended and tortillas have softened. Add remaining 1/2 cup of shredded cheddar.
- Serve hot with a heaping spoon of sour cream (if desired).

- Heat oven to 350°.
- Put flour, sugar, cocoa, salt, and pecans into ungreased 8-inch square baking pan. Stir with a fork until blended.
- Add oil and eggs; stir to mix well.
- With rubber spatula, scrape any ingredients clinging to sides, corners, and bottom of pan into batter.
- Bake 15 minutes or until top feels firm.
- Sprinkle with marshmallows and return to oven. Bake 5 minutes longer or until marshmallows have softened.
- Cool in pan on rack; cut into 16 bars.

I don't remember where this original recipe came from, I think it might have been an old Safeway newsletter, but I ADORE it... they're like cake/brownies (I eat them with a fork) and are great for parties!

- Preheat oven to 350 degrees.
- Bars:.
- In a large microwave safe bowl, heat butter and Coca Cola until butter melts.
- Stir in flour, sugar, cocoa and salt.
- Whisk in eggs, buttermilk, baking soda and vanilla.
- Pour into greased 9"x13" baking pan.
- Bake for 30 minutes or until toothpick inserted into the center comes out clean.
- Frosting:.
- Bring butter, Coca Cola, coffee granules and water to a boil on top of a stove or in microwave.
- Stir in powdered sugar and cocoa until well blended.
- Fold in nuts and marshmallows.
- When cake is done, pour frosting over the hot cake, spreading it to cover.
- Cool completely (Cake may be stored at room temperature for several days or frozen).
- Before serving, cut into 1 1/2 inch bars.
