ONE-PAN VEGGIE LASAGNA



One-Pan Veggie Lasagna image

This is a fab veggie version of that comfort food favorite lasagna - just without all the pots and pans to wash up!

2 tablespoons olive oil
2 small onions, finely chopped
3 garlic cloves, crushed
3 zucchini, chopped
250 grams (9 ounces) cremini or button mushrooms, sliced
One 400-gram (14-ounce) can chopped tomatoes
200 grams (7 ounces) baby spinach
400 grams (14 ounces) fresh pasta sheets, sliced into strips
Handful of fresh basil leaves, torn
80 grams (3 ounces) Parmesan cheese, grated
Two 125-gram (4-ounce) mozzarella balls, sliced

Steps:

  • Heat the oil in a deep, ovenproof saute pan. Add the onions and fry over a medium heat for 5 minutes until softened, then add the garlic and cook for a minute more.
  • Add the zucchini and mushrooms, increase the heat and fry for about 5 minutes until they are lightly browned. Add the chopped tomatoes and 400 milliliters (1 3/4 cups) boiling water and season well with salt and pepper. Bring to a simmer and cook for 10 minutes over a medium heat.
  • Preheat the broiler to high. Stir the spinach and pasta strips into the pan and, once the spinach has wilted, stir in the basil and two-thirds of the Parmesan and half the mozzarella. Scatter the rest of the cheese over the top and put under the broiler for 3 to 5 minutes until bubbling and oozingly melty.

Steps:

  • In a large skillet, cook beef and garlic over medium heat until meat is no longer pink; drain. Stir in tomatoes and spaghetti sauce; heat through. Transfer to a large bowl., In a small bowl, combine the soup, eggs, cottage cheese and Italian seasoning., Return 1 cup meat sauce to the skillet; spread evenly. Layer with 1 cup cottage cheese mixture, 1-1/2 cups meat sauce and half the noodles, breaking to fit. Repeat layers of cottage cheese mixture, meat sauce and noodles. Top with remaining meat sauce. Bring to a boil. Reduce heat; cover and simmer for 15-17 minutes or until noodles are tender., Remove from the heat. Sprinkle with shredded cheeses; cover and let stand for 2 minutes or until melted.

Steps:

1 10-ounce box of lasagna noodles*
1 teaspoon olive oil
1 pound ground Italian sausage
1 24-ounce jar of Marinara sauce
3 cups full-fat ricotta cheese
2 large eggs
2 tablespoons dried parsley
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 pound grated mozzarella cheese
1/2 cup grated Parmesan cheese

Steps:

  • First, cook the lasagna noodles, if you're not using the no-cook noodles. Drain the noodles, toss lightly with olive oil and lay flat on paper towels.
  • In a large skillet over medium-high heat, add the sausage, and cook while crumbling with a wooden spoon. When the sausage is fully cooked and brown, stir in the Marinara sauce. Set the sauce aside.
  • In a large bowl, whisk together the ricotta cheese, eggs, parsley, salt and pepper.
  • Have the mozzarella and Parmesan cheese ready on the side.
  • It's time to assemble the first lasagna: add a small amount of red sauce on the bottom of an 8x8" dish, and smear it around to coat the bottom. Place 3 lasagna noodles on top--tuck under the ends of the noodles, or leave them sticking up to get crispy in the oven. Add a one-quarter of ricotta mixture and spread it evenly across the noodles. Top with one-quarter of the meat mixture. Add one-sixth of the grated mozzarella. Add another layer of noodles, making sure they face the opposite direction. Follow with another one-quarter of the ricotta mixture, another one-sixth of the mozzarella, and then one-quarter of the meat mixture. Finally, add another one-sixth of the mozzarella on top and sprinkle over 1/4 cup of the Parmsan cheese.( Basically, it's two layers of noodles, meat sauce, and ricotta cheese mixture, but three layers of grated mozzarella).
  • Repeat with the remaining ingredients into a second pan, preferably an 8x8" freezer-safe foil pan.
  • Preheat the oven to 350, and cook the lasagna for 30-40 minutes, until evenly hot and bubbling around the edges.
  • For the lasagna meant for the freezer, cover it with the lid, wrap tightly in plastic wrap and foil, and then freeze for up to 3 months. To eat, remove the lasagna from the freezer and let thaw in the fridge for up to 12 hours. Remove the plastic wrap and lid, but keep the foil on the top of the lasagna. Preheat the oven to 350, and cook the lasagna for 55-65 minutes, or until evenly hot and bubbling around the edges. If the lasagna comes straight from the freezer, expect 75-90 minutes of cook time, but be sure to keep it covered with foil the entire time.

2 cloves garlic, finely chopped
1 medium onion, chopped
2 cups marinara sauce, divided
6 lasagna sheets
1 cup ricotta cheese
1 cup mozzarella cheese
2 tablespoons fresh basil, chopped

Steps:

  • Preheat oven to 350° F (180°C).
  • Heat the oil in a cast-iron skillet over high heat.
  • Cook the beef, salt, and pepper until the moisture has evaporated and the beef is starting to brown.
  • Add the garlic and onion and cook until onions are starting to become translucent.
  • Add one cup (260 g) of the marinara sauce and cook until the sauce has reduced to a paste.
  • Using a large spoon or a spatula, push some of the beef mixture toward the side of the pan, creating a gap that allows you to slide lasagna sheets underneath the beef. Break about two lasagna sheets in order to fill in the cracks.
  • Top the beef mixture with the rest of the lasagna sheets. Spread the rest of the marinara sauce on top of the sheets. Dollop the ricotta on top of the sauce and spread evenly.
  • Sprinkle the mozzarella cheese over the ricotta, and top with the basil.
  • Bake for 25 minutes until cheese is bubbly and golden brown.
  • Cool, slice, then serve.

1 (8-ounce) can tomato sauce
1 teaspoon dried oregano

1/2 teaspoon garlic powder
1/2 teaspoon crushed red pepper flakes, optional
8 ounces farfalle pasta
Kosher salt and freshly ground black pepper, to taste
1 cup shredded mozzarella cheese
1/4 cup freshly grated Parmesan
1 cup ricotta cheese
2 tablespoons chopped fresh parsley leaves

Steps:

  • Heat olive oil in a large skillet over medium high heat. Add Italian sausage and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks; drain excess fat. Stir in diced tomatoes, tomato sauce, oregano, basil, garlic powder and red pepper flakes; season with salt and pepper, to taste. Bring to a simmer and stir in pasta and 2 cups water. This easy slow-cooker lasagna is satisfying in all the ways that matter: Rich ricotta-Parmesan-spinach layers alternate with tender noodles, melted mozzarella and tomato. (A slow cooker will not give the crispiness that an oven does, but you may not even miss it.) It's also petite compared to many other lasagnas, perfect for feeding a family, not a crowd. If you've ever had a one-pot pasta, the texture of the noodles will be familiar to you: They are tender and starchy. Don't use no-boil or fresh noodles, as they will overcook. If you like, brown some loose Italian sausage in a skillet, pour off the fat and add it with the tomato sauce layers.

1 (10-ounce) bag or box frozen spinach, thawed and squeezed dry
3 ounces finely grated Parmesan (about 1 scant cup)

1 (32-ounce) jar good-quality marinara sauce
9 lasagna noodles (7 to 8 ounces)
8 ounces shredded mozzarella (2 cups)

Steps:

  • In a large bowl, stir together the ricotta, spinach, Parmesan, basil, garlic, oregano, onion powder, ¼ teaspoon salt and a generous amount of black pepper.
  • Lightly grease the bottom and sides of a 6- to 7-quart slow cooker with olive oil. Ladle about 1 cup of the marinara sauce in the bottom of the slow cooker, and spread it evenly.
  • Make two layers: Lay 3 lasagna noodles on top of the sauce, breaking the noodles to make a roughly even layer. (This doesn't need to be perfect; it's fine if the noodles overlap slightly, and if there are small spots the noodles don't cover.) Ladle about ¾ cup of sauce on top of the noodles and spread evenly. Evenly dollop about half of the ricotta mixture over the sauce, and use the back of a fork to press it into a roughly even layer. Sprinkle about a third of the shredded mozzarella over the ricotta. Repeat to make one more layer, using three noodles, the ¾ cup sauce, the remaining half of the ricotta mixture, then about half of the remaining mozzarella.
  • To finish, lay down the remaining 3 lasagna noodles and spread with the remaining sauce. (Reserve the remaining mozzarella.) Cover and cook on low until the internal temperature in the center is at least 140 degrees and the noodles are tender, 3 hours 30 minutes to 4 hours.
  • Turn off the slow cooker and sprinkle the top of the lasagna with the remaining mozzarella. Remove the crock from the base that contains the heating element and let the lasagna rest with the lid on for 20 to 30 minutes, otherwise it will fall apart when you try to slice it. Sprinkle the top with more torn basil, to your taste. Cut the lasagna with a knife and scoop out servings with a spatula to serve.
