The perfect quick keto bread is this 1-minute keto muffin in a mug. Grain free little snacks that can be made both sweet OR savoury depending on which flavours you decide to add.

Number Of Ingredients 4

1 eggs - medium
2 tsp coconut flour (or more depending on brand used)
pinch baking powder
pinch salt

Steps:

  • Grease a ramekin dish (or very large coffee mug) with coconut oil or butter.
  • Mix all the ingredients together with a fork to ensure it is lump free.
  • Cook the 1-minute keto muffin in the microwave on HIGH for 45 seconds - 1 minute. Alternatively, they can be baked in an oven, at 200C/400F for 12 minutes.
  • Cut in half and serve. (toasting or frying is optional)

Got this recipe from a message board for low carb'ers and wanted it here for my reference. Sadly, I don't know who the originator of this recipe is. This is quick easy, healthy, very low carb and high fiber. Works great as a sweet muffin as well as savory muffin (just omit the sweetener - goes well with soups). Original called for one packet of splenda as a sweetener. I only use stevia. Add in options; fruits, nuts, flavored sweeteners/syrups, cheese, bits of ham, vegetables or spices ... get creative and enjoy!

1/4 cup flax seed meal
1/2 teaspoon baking powder
1/4 teaspoon stevia powder
1 teaspoon cinnamon

Steps:

  • Mix all ingredients in a coffee mug.
  • Micorowave for one minute on high.
  • If using frozen berries, microwave for 1:30 on high.
  • Smooth on some butter and enjoy!
  • It will be moist at first, but as the muffin cools it goes away.

  • Mix all ingredients in a coffee mug.
  • Microwave for 1 minute on high. (If using fresh or frozen fruit, microwave for 1:30 on high.)
  • Dump out of coffee cup onto a plate.
  • Let it cool for 1 minute and enjoy!

This healthy double chocolate muffin takes just one minute to make (in the microwave!) or 12 minutes in the toaster oven and is accidentally healthy- Made with no butter, oil, flour or sugar! It's also suitable for those following a vegan, gluten free, paleo, refined sugar free and dairy free lifestyle!

Number Of Ingredients 10

1 tablespoon almond flour
1 1/2 tablespoon coconut flour (sifted)
1 tablespoon cocoa powder
1- tablespoon granulated sweetener of choice (I used a monk fruit blend*)
pinch vanilla extract
1/2 teaspoon baking powder
1 large egg or egg white (sub for 1 flax egg to keep it vegan)
1/4 cup + dairy free milk of choice**
1 tablespoon chocolate chunks of choice
1 tablespoon chocolate chips of choice

Steps:

  • In a mixing bowl, combine the dry ingredients and mix well.
  • In a separate small bowl, combine the dairy free milk with the egg (or flax egg) and whisk with the vanilla extract. Add the mixture to the dry mixture and mix until just combined. If batter is still crumbly, continue adding dairy free milk one tablespoon at a time, until a thick batter is formed. Stir through the chocolate chunks and chips, reserving a few for the top.
  • Grease a microwave or oven safe bowl and generously and pour the batter. Top with more chocolate chips and microwave for 50-60 seconds, depending on the microwave.
  • Enjoy immediately.
  • Follow as above but bake in a preheated oven (350 degrees) for up to 12 minutes, or until a toothpick comes out clean.

PALEO ONE-MINUTE MUFFIN

I love these first thing in the morning! I'm not a huge fan of using the microwave for anything, but these are pretty darn good! I like putting honey on mine as this recipe does not call for any sweeteners.

  • Stir almond flour, flax meal, egg, coconut oil, cinnamon, baking powder, and salt in a bowl. Divide almond mixture between ramekins.
  • Heat ramekins in the microwave for 30 seconds; let rest 5 seconds. Heat ramekins for an additional 30 seconds until muffins are risen and cooked. Remove from microwave and flip upside-down onto a plate to cool.

1 tablespoon butter, divided
1 tablespoon ground flax seed
2 tablespoons almond flour
1/4 teaspoon baking powder
1 egg, beaten
1 teaspoon cinnamon
12 drops Capella Double Apple Flavor Drops
2 tablespoons Swerve brown sugar sweetener
5 drops Vanilla liquid stevia drops

Steps:

  • Divide butter in half and add to the microwave safe custard cups or small ramekins. Heat for just 30 seconds to melt the butter. Swirl it around in the ramekins to grease the sides.
  • In a separate bowl mix all of the dry ingredients (flaxseed meal, almond flour, baking powder, sweetener, cinnamon) and the add the wet ingredients (egg, stevia, flavor drops). Finally split the muffin batter into the two ramekins and mix well to incorporate the melted butter.
  • Place them one at a time into the microwave and bake for 30 seconds. Check to see if it is done by looking at the center. It should be firm to the touch and not wet. You don't want to over cook these muffins or they will get very dry.
  • Let cool then eat. I like to place a lid and just heat up the second muffin the next day but you could just leave it as batter in the refrigerator and heat up the next day.
