ONE-EYED MONSTER CUPCAKES
Celebrate Halloween or fall with this fun and "scary" dessert. These cupcakes are made using Betty Crocker™ Super Moist™ chocolate cake mix and decorated with Betty Crocker® frosting and decorating gel.

Steps:
- Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups. Make and bake cake mix as directed on box for cupcakes, using water, oil and eggs. Cool 10 minutes; remove from pans to cooling racks. Cool completely.
- Stir green food color into 1 container of the frosting. Stir purple food color into remaining container of frosting. Spoon each color frosting into separate decorating bags fitted with star tip. Pipe frosting on cupcakes to look like monster's fur.
- Place 1 candy eye on each cupcake. With decorating gel, draw mouths. Insert 3 sour straw pieces into frosting on each cupcake to look like hair.

HALLOWEEN CYCLOPS CUPCAKES
These cyclops cupcakes are perfect for Halloween or for a kid's birthday party if your child likes one-eyed monsters. I used grapefruit leather for the mouth, but you can use other colored fruit leather as well.

- Preheat the oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.
- Sift cocoa powder into a large bowl and add 5 tablespoons boiling water. Stir into a thick paste, adding more water, 1 tablespoon at a time, if needed. Add 3/4 cup butter and 3/4 cup plus 2 tablespoons sugar and beat with an electric mixer until smooth and creamy. Beat in eggs one at a time, beating well after each addition, until batter is smooth.
- Mix flour and baking powder in a bowl and stir into the batter until well combined. Spoon batter into the prepared muffin cups, filling each 2/3 to the top using an ice cream scoop.
- Bake in the preheated oven until tops spring back when lightly pressed and a toothpick comes out clean, 10 to 15 minutes. Allow to cool in muffin tin for a few minutes; transfer to wire rack and cool completely, about 1 hour.
- Beat cream cheese and 1/4 cup butter together in a bowl until creamy. Mix in vanilla extract. Stir in 1 cup confectioners' sugar gradually until frosting is smooth. Mix in green food coloring.
- Frost each cupcake with a thin layer of green frosting and refrigerate for 30 minutes to make decorating easier. Frost with a second thin layer of green frosting.
- Draw a small dot with the black decorating gel on each candy-coated milk chocolate piece for the pupil. Cut marshmallows into 4 slices with a sharp knife and stick 1 blue pupil in the center of each marshmallow piece.
- Cut fruit leather into crescent shapes or semi-circles for the mouths using small sharp scissors.
- Mix 2 tablespoons confectioners' sugar with lemon juice in a bowl to make icing. Glue silver dragees onto the fruit leather mouths using a toothpick dipped in icing.
- Assemble cyclops by placing a mouth and one marshmallow eye onto each cupcake. Stick 2 sunflower seeds on top of the cupcake for the horns.

- Spray nonstick skillet with pam.
- using a cookie cutter, cut a hole in center of bread slices.
- Place bread slices in skillet and break 1 egg into center of each one.
- Let bottom brown and flip over to brown other side. You can add cheese if you wish. Here's lookin' at you !

ONE-EYED MONSTER FINANCIER WITH BLOOD ORANGE AND CHOCOLATE GANACHE
Steps:
- For the financier: Preheat the oven to 325 degrees F. Spray a 15-cavity mini half-sphere silicone mold with nonstick spray.
- Whisk together the almond and cake flours and set aside. Cream together the butter, confectioners' sugar and baking powder in the bowl of a stand mixer on medium speed. Add the flour mixture and beat until smooth. Add the egg whites and continue mixing until combined and smooth. Spoon into the prepared silicone mold and bake until springy to the touch and lightly golden at the edges, 12 to 15 minutes. Transfer to cooling rack for 5 minutes, then unmold and let cool completely, 10 to 15 minutes.
- For the ganache: Heat the cream to a bare simmer over medium heat. Pour the hot cream over the chocolate and let stand for 2 to 3 minutes. Stir to combine until smooth and glossy. Cover and cool in the refrigerator until set to a scoopable consistency, 1 to 2 hours or overnight.
- To assemble: Roll the fondant out to 1/8-inch thin. Cut into 15 rounds with a fluted 3-inch round cookie cutter. Place a financier, dome-side up, on a work surface. Top with 1 blood orange segment, then a small scoop of ganache (1 to 1 1/2 teaspoons), and finally a fondant round, pressing the sides around to make a little dome. Adhere a candy eye to the top, using a little water, and dust with a little black glitter. Repeat with the remaining cakes.
