- In a large skillet, cook turkey, onion, shallot and garlic over medium heat until turkey is no longer pink and vegetables are tender, 8-10 minutes, breaking up turkey into crumbles; drain. Add tomato paste; cook and stir 1 minute longer., Add sweet potato, broth, smoked paprika, salt and pepper. Bring to a boil; reduce heat. Simmer, covered, until sweet potatoes are tender, about 10 minutes, stirring occasionally. Add kale and red pepper flakes; cook and stir until kale is wilted, about 2 minutes. Serve with avocado and if desired, mint. Freeze option: Freeze cooled mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth or water if necessary. Serve with avocado and, if desired, mint.

- In a cast iron-skillet, heat the olive-oil on medium-high-heat.
- Add the ground-turkey and garlic. Use a wooden-spoon to divide the turkey as it cooks. Stir occasionally and cook for 5minutes.
- Add the yellow-peppers and onions, cook till the onions are tender.
- Add the red-chili flakes, sweet-potato, pepper and salt.
- Cover the skillet and cook till the sweet-potatoes are tender. Do not forget to stir periodically. If needed, add more olive-oil or a tiny bit of water to cook the sweet-potatoes quicker.
- While the sweet-potatoes are cooking, preheat the oven to 400ºF.
- When the sweet-potatoes are tender, then add the shredded mozzarella-cheese, and set the skillet in the oven to melt the cheese.
- Once the cheese melts, remove from the oven and garnish with parsley.

- Put your sweet potatoes in your medium mixing bowl. Drizzle a tablespoon of of your olive oil over them and toss them until they are fully coated in it. Season with salt and pepper. Set aside. I like this step because I want to make sure my sweet potatoes are perfectly coated. You can surely just dump them in the pan after cooking down your onions and garlic and quickly mix in the oil, salt, and pepper-dealer's, ahem, chef's choice!
- Drizzle 2 tablespoons of your olive oil into your sauté pan over high heat.
- Add onions and garlic and move them around with your wooden spoon until softened and yellowed-about 3 minutes.
- Lower your heat to medium-high.
- Add your sweet potatoes.
- Add your remaining tablespoon of olive oil to your sauté pan.
- Use your fingers to separate bits of your ground turkey over your entire pan. Season with salt and pepper.
- Sprinkle on your thyme and rosemary.
- Use your wooden spoon to mix all of your ingredients evenly together.
- Move your turkey around until it's completely greyed and you can no longer see redness-about 8 minutes. Then, spread your mixture evenly across the sauté pan, cover the pan with its lid, and let it sit untouched for 2 minute intervals, then stir again, until your turkey has browning to its edges-about 7 minutes. Letting your turkey sit will help it to brown.
- Spread your arugula over the top of your ingredients. Sprinkle with salt and pepper. Cover your sauté pan again. Let it cook until wilted-roughly 3 minutes.
- Mix your arugula evenly through your dish. The arugula will clump together a bit, don't worry, you're doing everything right. Help separate it as much as you can without burning yourself.
- Pour just enough tomato sauce over your mixture to coat it. If you want a wetter dish to say put it over pasta, add sauce to your liking.
- Mix it all together.
- Serve hot!
