MEATY COUNTRY BREAKFAST SCRAMBLE



Meaty Country Breakfast Scramble image

A meaty, stick to your bones, simple dish that will please the whole family. A real meat and potatoes basic dish, a definite comfort food. I developed this on my own after not being fully satisfied from frozen pre-made skillet/scrambles. For this dish I recommend you break out two large skillets. The meal, in my opinion, almost tastes better the second time around. A definite meal ideal for leftovers.

Number Of Ingredients 12

1 (16 ounce) O'Brien potatoes
1 (1 lb) breakfast sausage
1 (8 ounce) ham, diced (or julienne works just as well)
2 bell peppers, chopped (color of your choice, I mix it up depending on the season)
1 (8 ounce) button mushrooms, sliced
12 large eggs
8 green onions, chopped
3 teaspoons salt (or to taste)
4 teaspoons black pepper (or to taste)
4 teaspoons vegetable oil
2 cups cheddar cheese, shredded
1 cup milk

Steps:

  • Get 2 large skillets / sauce pans.
  • In the first pan put enough oil to lubricate and brown the potatoes O'Brien on med to high heat, stirring occasionally (per package directions, yours may vary).
  • In the second pan brown the breakfast sausage.
  • In a bowl beat the eggs along with the milk and set aside.
  • Just as the sausage finishes browning, toss in the ham with it to put a little color on it (it's diced and pre-cooked generally, so this should go quick).
  • Right after you add the ham to the sausage, add the green onions, bell peppers, and mushrooms to the potatoes O'Brien in the first pan, and sauté the potatoes and veggies together for about 5 minutes.
  • Once the ham has browned slightly, drain the fat, and add the sausage and ham to the first pan with the potatoes and veggies and stir the mixture together, then stir occasionally.
  • After dumping the sausage and ham, put the pan back on the heat and use it to scramble your eggs (the grease from the sausage will do a wonderful job lubricating the pan and imparting a little flavor to the eggs).
  • Once the eggs are scrambled fold them into the first pan, do not over mix, or you will turn the texture to mush.
  • Top the mixture with cheese, and gently stir to mix in the cheese,.
  • Serve and enjoy!

1 lb breakfast sausage
1 pkg 2.64 ounce country gravy mix
6 large potatoes diced small
1 large anaheim pepper, sliced small
1 medium onion, diced
1 c shredded cheddar cheese
6 large eggs, lightly beaten
1 c water
1/2 c milk
2 Tbsp melted butter
dash(es) paprika to taste

Steps:

  • 1. How to Make it: Brown sausage in a large skillet; drain most of fat. In this skillet you will scramble your eggs so just set it aside.
  • 2. In a pot Mix gravy cook till thick or as directions on gravy, add sausage to gravy and keep warm. Heat another skillet and put some oil in, when hot Combine potatoes with Anaheim pepper,onions and spread evenly across the bottom of the skillet and cook till nice and brown. Whisk together eggs, water, milk, and butter; add mixture to skillet from cooking the sausage till eggs are fluffy and sprinkle with paprika, salt and pepper to taste. Now add eggs gently to potato skillet and mix and then stir in cheese to this mixture
  • 3. Spoon potato and scrambled egg mixture onto your plates and top with Sausage Gravy. Serve Hot and Enjoy a hearty Country Breakfast

6 medium red new potatoes, cubed
10 eggs
1/3 cup milk
1/4 tsp salt
1/8 tsp pepper
1 Tbsp butter
1/2 of a 9.6 oz pkg of Johnsonville fully cooked sausage (I used original), sliced
4 green onions, sliced
1 cup shredded cheese (I like to use pepper jack)

Steps:

  • Heat 1 inch water to boiling in 2-quart saucepan. Add potatoes. Cover and heat to boiling; reduce heat to medium-low. Cover and cook 6 to 8 minutes or until potatoes are tender; drain.
  • Beat eggs, milk, salt and pepper with fork or wire whisk until a uniform yellow color; set aside.
  • In a large skillet, melt butter and add potatoes, and sausage to skillet. Cook for about 3 to 5 minutes, turning potatoes occasionally, until light brown. Stir in green onions. Cook 1 minute, stirring constantly.
  • Pour egg mixture into skillet. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook 3 to 4 minutes or until eggs are thickened throughout but still moist. Sprinkle with cheese. Serves 6.

This is a recipe that my sisters and I often made for breakfast/brunch on the weekends, but we didn't measure the amounts. To make things easier, we used Ore Ida's Potatoes O'Brien Hash Browns, so no cleaning or dicing of the potatoes, onions and peppers, and we loved that it was a one dish meal. This recipe was found in my Taste Of Home Magazine, and uses fresh ingredients and lists the amounts. I would cut down the amount of green peppers for our taste, so adjust to your tastes.

8 slices bacon, diced
2 cups red potatoes, diced
1/2 cup onion, chopped
1/2 cup green pepper, chopped
8 eggs
1/4 cup milk
1 teaspoon salt
1/4 teaspoon pepper
1 cup cheddar cheese, shredded

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain.
  • Cook and stir potatoes in drippings over medium heat for 12 minutes or until tender.
  • Add onion and green pepper.
  • Cook and stir for 3 or 4 minutes or until crisp-tender; drain.
  • Stir in the reserved bacon.
  • In a large bowl, whisk the eggs, milk, salt and pepper; add to skillet.
  • Cook and stir until eggs are completely set.
  • Sprinkle with cheese and let stand until cheese has melted.

1 Can of Cresent Rolls
4 oz. Cream Cheese
16 oz. Roll of Breakfast Sausage
5 Eggs
1 Cup of Shredded Cheddar

Steps:

  • Preheat your oven to 350 degrees.
  • Grease a 9 x 9 casserole dish.
  • Flatten half the can of crescent rolls onto the bottom of the greased dish.
  • Microwave cream cheese approximately 20 seconds.
  • Spread cream cheese across rolls.
  • Brown your sausage in a skillet then add it to the casserole dish on top of the cream cheese.
  • Scramble the eggs into a bowl and pour onto the sausage.
  • Add your shredded cheese. (Again, here you can pick another type of cheese but for this particular recipe that we love in my family I always use cheddar.)
  • Mash the rest of the crescent rolls along the top.
  • Bake in preheated oven near the middle for 20 minutes.
  • The breakfast scramble is finished when the top row of crescent rolls turns a light golden brown.

1 package Simply Potatoes Shredded Hashbrowns
1 medium Onion diced
3-5 Sweet Peppers
1 cup Shredded Cheese (I prefer Colby Jack...and if you shred it yourself it has a creamier taste so I always get the bar cheese)
1 cup Diced Ham
8 Eggs mixed well
1 package refrigerated Crescent Rolls

Steps:

  • Directions:
  • Preheat oven to 350 degrees.
  • Spray 9x9 casserole dish with non-stick cooking spray.
  • Cover bottom of baking dish with Simply Potatoes Shredded Hashbrowns.
  • Top hashbrowns with onions, peppers, ham, and cheese.
  • Pour eggs over casserole.
  • Bake at 350 degrees for 30 minutes or until eggs are almost cooked completely through.
  • Top with crescent roll dough...just unroll and place on top of casserole.
  • Return to oven and bake for additional 10-12 minutes or until crescent rolls are done.

  • PREP: Coarsely chop the onion and red pepper; we don't want these finely diced but chopped to about 1/2 inch pieces. Wash and dry the red potatoes. Peel if desired ( I leave the peel on). Cut into small pieces; about 1/2 inch. The potatoes need to be small to get tender in time and onions/pepper large enough they don't burn in the time it takes to cook the potatoes.
  • ONION, PEPPER, AND POTATOES: In a very large nonstick skillet (12 inches) heat 4 tablespoons butter to medium heat. When the butter has melted, add in the prepared red pepper, onion, and potatoes. Season to taste with salt and pepper, and cook over medium heat for about 10-12 minutes, stirring occasionally. If anything begins to burn, turn down the heat, if it's not sizzling and cooking, slightly increase the heat. Once done (crisp on the outsides, tender on insides), empty the veggies onto a plate to sit while we cook the eggs.
  • EGGS: Combine the eggs, milk (or half-and-half or heavy cream), Cajun seasoning, and salt and pepper to taste. Briskly whisk with a fork to beat air into the eggs and mix until smooth and combined. In the empty skillet, add the remaining 1 tablespoon butter and heat to medium high. Use a silicone spatula to spread the butter to coat the skillet. As soon as the butter is melted, pour the eggs into one even layer. Let stand for 30 seconds without touching. Then use the spatula to push the eggs from one side of the skillet to the other, tipping the skillet so uncooked eggs fill the empty space of the skillet. Continue this process until eggs are cooked, but still slightly wet and shiny. Do not over-cook/over scramble. As soon as the eggs are set, empty on top of the potatoes. Let pan slightly cool and then return to the burner at low heat.
