- Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper or silpat mats.
- In a large microwave-safe bowl, heat the butter until very soft but not completely melted. Stir the sugars into the butter, mashing out any lumps with the back of the spoon; stir until well blended. Stir in the egg, vanilla, salt and baking soda until the mixture is well blended and smooth. Stir in the flour, just until incorporated. Gently stir in 1½ cups of the chocolate chips. If the dough is too soft to shape, stir in up to 2 tablespoons of additional flour to stiffen it slightly.
- Shape the dough into 1 to 1½-inch balls, spacing 2-inches apart on the baking sheets. Use the palm of your hand to flatten each ball slightly. Dot additional chocolate chips on the top of each ball of dough.
- Bake one sheet at a time until edges have lightly browned and they are not quite firm when pressed in the middle, 10 to 13 minutes. Let stand for 2 minutes or so before transferring them to a cooling rack.

- Prep: Preheat oven to 360 degrees F. Line baking sheets with parchment paper and set aside. Chop your chocolate roughly into chunks.
- Make: In a large mixing bowl, cream the softened butter. Add sugars and cream until well combined and light and fluffy, about 3-4 minutes. Add vanilla and egg and mix until just combined. Add baking soda, salt, and flours and mix until a dough forms. Stir in chopped chocolate. Chill dough for 30 minutes - see note below. Scoop into balls and drop onto lined baking sheet, leaving some room between them (as pictured above).
- Bake: Bake for 9-10 minutes. The cookies will look just set but like they could maybe use another minute. That's the best time to pull them out of the oven! Let cool on cookie sheet for a few minutes. Transfer to a cooling rack to cool completely before storing.
- Serve + Store: Enjoy warm! Store leftovers, covered well, at room temp for up to 5 days. (Good luck getting them to last that long!).

- Add brown sugar and sugar. Whisk or stir vigorously until smooth. Add egg and vanilla and whisk until silky.
- Fold in milk chocolate and semi-sweet chocolate chips. Cover bowl with plastic wrap. Place in the refigerator and CHILL for at least 30 minutes. The cookie dough gets better with time. If time is on your side, I suggest chilling it for 24-48 hours. Chilling for at least 30 minutes is essential.

- Preheat oven to 350F and line a large baking sheet with parchment paper. In a large mixing bowl, mix together the flax and water and set aside for a few minutes so it can thicken up. Whisk the flax egg again once thickened.
- Add the rest of the wet ingredients into the bowl with the flax egg (coconut oil, sunflower seed butter, brown sugar, cane sugar, and vanilla). With a hand-held electric mixer, beat the ingredients until combined and smooth.
- Now, beat in the dry ingredients, one by one, as you go down the ingredient list (baking soda, baking powder, salt, cocoa powder, oat flour). If your dough is a bit dry, add a teaspoon (or two) of non-dairy milk and beat the mixture again. The dough should be moist enough to form balls without cracking, but not super sticky.
- Finely chop the chocolate (it should be the size of peas). Beat the chocolate into the batter or simply stir by hand.
