- Divide a tube of refrigerated French bread dough into 12 pieces; roll into balls and place in oiled mini-muffin cups. Brush with a beaten egg and sprinkle with sesame seeds. Bake at 350 degrees F until golden, about 15 minutes. Remove from the pan and let cool. Form 1 pound ground beef into twelve 2-inch patties, place on a foil-lined baking sheet and bake 15 minutes. Split the buns; fill with the patties, sliced cheddar cheese, pickles, ketchup and mustard.

- Preheat oven to 375°F Separate dough into breadsticks; cut each breadstick into 3 equal pieces. Working with one piece at a time, tuck ends under to meet at center, pressing to seal and form very small bun about Wz inches in diameter and Vz inch high.
- Place buns seam side down on ungreased baking sheet. Bake 11 to 14 minutes or until golden brown. Remove to wire racks.
- While buns are baking, prepare burgers. Gently mix ground beef and seasoning mix in large bowl. Shape beef mixture into 36 patties, using about 2 teaspoons beef per patty.
- Heat large skillet over medium heat 30 seconds. Place half of patties in skillet; cook 4 minutes on one side or until browned. Turn and cook 3 minutes or until burgers are cooked through; top with slice of cheese, if desired. Repeat with remaining patties.
- To assemble, split buns in half crosswise. Top bottom halves with burgers, pickle slices, small dollops of ketchup and tops of buns.

- For the buns: In a large bowl add the flour and sugar, then on one side of the bowl add the salt, and add the yeast to the other side (yeast doesn’t like direct contact with salt). Set aside.
- In a jug, add the water, milk and butter, and heat in the microwave until the butter has melted and the liquid is hot, but not so hot it would burn you. Add the liquid to the flour mixture, then give it a stir with a wooden spoon and add in half of the beaten egg. Give it all a good mix with your hands and then tip out onto a lightly floured surface and knead for about 4 or 5 minutes. It will be sticky, but try not add too much more flour as it will make the buns tougher. Gather the dough into a ball and place in a bowl that’s been lightly greased with olive or vegetable oil. Cover with clingfilm and leave for about 20 minutes.
- Empty the dough out onto a floured surface, knock the air back out of it, then cut the dough into little portions of approx. 7g each. Roll these portions into balls and place onto a couple of non-stick baking trays. You should get approx. 40 to 50 buns out of this. Place the trays in a plastic bag and leave to prove in a warm, draught free room for about an hour.
- Preheat your oven to 190c. After an hour, the buns should have risen. Gently brush the tops with the remaining egg mix and scatter the sesame seeds over the buns. Put in the oven and cook for 6-7 minutes until golden brown. Take out and leave to cool.

- Combine the ground chicken, shallot, garlic, almond flour, Buffalo sauce, salt and pepper in a large bowl. Mix until just blended.
- Add burgers to the hot skillet. Cook 4-5 minutes, then flip and cook an additional 4-5 minutes, or until the burgers are cooked through and no longer pink in the center. The internal temperature should reach 165°F when checked with a meat thermometer inserted into the center.

- Tear one hamburger bun into pieces. Place in food processor or blender container. Cover; pulse on and off, to form fine crumbs.
- Combine Ground Beef, 1/2 cup bread crumbs, onion, egg white, garlic, salt and pepper in medium bowl, mixing lightly but thoroughly. Lightly shape into eight 1/2-inch thick mini patties.
- Place patties on grid over medium, ash-covered coals. Grill, covered, 8 to 9 minutes (over medium heat on preheated gas grill, 9 to 10 minutes) until instant-read thermometer inserted horizontally into center registers 160°F, turning occasionally. About 1-1/2 minutes before burgers are done, place rolls, cut sides down, on grid. Grill until lightly toasted.
- Serve burgers in buns with Topping Variation(s), as desired. Close sandwiches. Mango-Pineapple Salsa: Combine 1/2 cup finely diced ripe mango or 1/2 cup finely diced drained jarred ripe mango, 1/3 cup finely chopped fresh pineapple or 1/3 cup drained canned crushed pineapple, 1/4 cup finely chopped tomato, 1 to 2 tablespoons finely chopped jalapeño pepper, 1 tablespoon finely chopped fresh mint, 1 tablespoon fresh lime juice and 1/4 teaspoon salt in small bowl. Refrigerate until ready to use. Makes 1 cup Spicy Caramelized Onions: Heat 1 tablespoon olive oil in large nonstick skillet over medium heat until hot. Add 3 cups thinly sliced yellow onions and 2 to 3 medium thinly sliced red or green jalapeño peppers or 6 thinly sliced baby sweet red bell peppers. Cook 5 minutes, stirring occasionally. Reduce heat to medium-low; stir in 1/2 teaspoon cumin. Cook 15 to 18 minutes or until onions are very tender and golden brown, stirring frequently. Season with salt, as desired. Makes 1-1/2 cups
