SLOW COOKER TURKEY CHILI

Slow Cooker Turkey Chili image

Cocoa powder may seem a bit out of place in chili, but it has two jobs in this mole-inspired version: It adds depth of flavor and helps thicken the sauce. We suggest serving the chili with tortilla chips, but it would also be great with cornbread.

Provided by Food Network Kitchen

Categories     main-dish

Time 8h15m

Yield 8 to 10 servings

Number Of Ingredients 17

2 tablespoons vegetable oil
3 tablespoons tomato paste
3 tablespoons chili powder
1 tablespoon ground cumin
1/2 teaspoon cayenne pepper
3/4 pound ground turkey (preferably dark meat)
Kosher salt
One 28-ounce can fire-roasted diced tomatoes
2 3/4 cups low-sodium chicken broth, plus more for thinning the chili if needed
1/4 cup unsweetened cocoa powder
2 tablespoons red wine vinegar
1 tablespoon dried oregano
Two 15-ounce cans pinto beans, strained and rinsed
1 medium onion, chopped
2 cups crushed corn tortilla chips, plus whole for serving
3 cloves garlic, chopped
Sliced scallions, shredded Cheddar, sour cream and chopped pickled jalapeno, for serving

Steps:

  • Heat the oil in a large nonstick skillet over medium-high heat. Add the tomato paste, chili powder, cumin and cayenne and cook, stirring, until the oil is brick-red and the mixture is dry, about 2 minutes. Add the ground turkey and 1 teaspoon salt and cook, stirring and breaking up into smaller pieces, until the mixture is combined (the turkey doesn't need to be cooked all the way through at this point). Transfer the mixture to the insert of a 6-quart slow cooker.
  • Add the tomatoes, chicken broth, cocoa powder, vinegar, oregano and 1 teaspoon salt to the skillet over medium-high heat and bring to a simmer, whisking. Cook for about 2 minutes. Add the tomato mixture, beans, onions, crushed tortilla chips and garlic to the insert and give the mixture a good stir. Cover and cook on low for 6 to 8 hours.
  • Add chicken broth to thin the chili, if necessary. Season with salt. Serve with scallions, Cheddar, sour cream, pickled jalapeno and tortilla chips.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Turkey Recipes

Time 45m

Number Of Ingredients 14

3 tablespoons safflower oil or butter
1 small onion, thinly sliced
1 tablespoon minced garlic (from 2 large cloves)
1 tablespoon minced peeled ginger
Kosher salt
1 tablespoon tomato paste
1 teaspoon ground cumin
1 1/2 teaspoons ground coriander
2 Yukon Gold potatoes, peeled, cut into a 1-inch dice
2 1/2 cups no-sodium-added chicken broth
1 Thai chile, split (seeds removed for less heat, if desired), plus more, sliced, for serving
2 cups coarsely shredded cooked turkey
1/4 cup plain yogurt (not Greek), plus more for serving
Cooked basmati rice and fresh mint or basil leaves, for serving

Steps:

  • Heat oil in a medium saucepan over medium-high. Add onion, garlic, ginger, and 1 teaspoon salt. Cook, stirring frequently, until onion is golden at edges, 5 to 7 minutes. Stir in tomato paste, cumin, and coriander. Cook 1 minute more.
  • Add potatoes and broth. Bring to a boil, then add chile, reduce heat, and simmer, partially covered, until potatoes are tender, 15 to 18 minutes. Mash some potatoes against side of pot to thicken. Add turkey; heat through. Remove from heat, stir in yogurt, and season with salt. Serve over rice, with a dollop of yogurt, and mint and sliced chiles.

INSTANT POT TURKEY CHILI

Instant Pot Turkey Chili image

Browning the ground turkey and aromatics on the "sauté" setting of the Instant Pot before simmering is essential for depth of flavor in this one-hour chili.

Provided by Riley Wofford

Categories     Food & Cooking     Ingredients     Meat & Poultry     Turkey Recipes     Ground Turkey Recipes

Time 1h

Yield Serves 6 to 8; Makes 8 cups

Number Of Ingredients 13

2 tablespoons extra-virgin olive oil
1 pound ground dark-meat turkey
1 large white onion, cut into 1/4-inch pieces (2 cups), divided
1 large poblano chile, seeds and ribs removed, cut into 1/2-inch pieces (1 cup)
3 cloves garlic, minced (1 tablespoon)
Kosher salt and freshly ground pepper
2 tablespoons chili powder
2 teaspoons ground cumin
2 tablespoons tomato paste
1 can (28 ounces) diced tomatoes
1 can (15 ounces) chickpeas, drained and rinsed
1 cup frozen corn kernels
Shredded Monterey Jack cheese, cilantro leaves, and sliced jalapeno, for serving

Steps:

  • Heat oil in a 6-quart multicooker set to the high "Saute" setting. Add turkey, breaking up meat with the back of a spoon, until cooked through, 4 to 5 minutes. Using a slotted spoon, transfer to a paper towel-lined plate to drain. Add 1 3/4 cups onion, poblano, garlic, 2 teaspoons salt, and 1/2 teaspoon pepper to multicooker; cook, stirring occasionally, until vegetables are softened, 6 to 8 minutes. Add chili powder, cumin, and tomato paste; cook 2 minutes. Stir in tomatoes, chickpeas, corn, cooked turkey, and 1 cup water. Secure lid of multicooker.
  • Cook on high "Bean/Chili" setting for 20 minutes. Once time is complete, allow pressure to release naturally. Carefully remove lid. Adjust seasoning as desired. Serve with remaining 1/4 cup onion, cheese, cilantro, and jalapeno. To store, let chili cool to room temperature, then refrigerate in airtight containers up to 3 days.

CHEF JOHN'S TURKEY CHILI

Chef John's Turkey Chili image

I served mine with some beautifully ripe slices of avocado that gives the final bowl another layer of silky richness. By the way, don't let the cocoa powder in our chili spice mixture throw you off! It's only a small amount and it really works. My chili was garnished with sour cream, diced jalapeno, cilantro and avocado.

HOW TO COOK A TURKEY

How to Cook a Turkey image

The biggest myth in all of American cookery is that a juicy, perfectly cooked turkey is difficult for the novice cook to achieve. Even if this is your first time, don't play scared, this will work! There is nothing to fear but the fear of dry turkey itself.

Provided by Chef John

Categories     Meat and Poultry Recipes     Turkey     Whole Turkey Recipes

Time 3h45m

Yield 24

Number Of Ingredients 10

1 onion, coarsely chopped
1 stalk celery, coarsely chopped
1 carrot, coarsely chopped
1 (12 pound) whole turkey, neck and giblets reserved
2 tablespoons kosher salt
1 tablespoon ground black pepper
1 teaspoon cayenne pepper
3 tablespoons butter
4 sprigs fresh rosemary
½ bunch chopped fresh sage

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place onion, celery, and carrot in a large, shallow roasting pan.
  • Place turkey, breast side up, on top of the vegetables in the roasting pan. Pat the outside and inside of the turkey dry with paper towels.
  • Combine salt, black pepper and cayenne pepper in a small bowl. Season the inside of the turkey with about 1/3 of the salt mixture. Fold wing tips under the bird.
  • Melt butter in small saucepan over medium heat until the edges begin to turn golden, about 2 minutes. Cook and stir rosemary and sage for 1 minute.
  • Place rosemary and sage inside the cavity of the turkey; reserve melted butter. Tie the legs together with twine.
  • Brush outside of the turkey completely with the melted butter. Season with remaining 2/3 of the salt mixture.
  • Bake turkey, uncovered, in the preheated oven until no longer pink at the bone and the juices run clear, about 3 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the turkey from the oven and allow to rest in a warm area 10 to 15 minutes before slicing.
