Steps:
- Preheat the oven to 200 degrees F.
- Spray 4 of the tortillas with cooking spray (or brush with olive oil). Lay the oiled tortillas on a large cutting board oiled-side down. Brush with the mustard and sprinkle with about half of the cheese. Top each evenly with a thin layer of ham, onions and some pepper, and then finish with the remaining cheese.
- Brush the apple butter evenly on the remaining tortillas. Place one apple-butter tortilla on top of a ham-and-cheese tortilla (filling sides in), and firmly press the tortillas together to make a quesadilla.
- Heat a large nonstick skillet over medium heat. Lay a quesadilla oiled-side down in the pan and cook until golden brown and the cheese starts to melt, about 2 minutes. Spray the top of the quesadilla with cooking spray, turn and cook until the other side browns and the cheese is melted, 2 to 3 minutes more. Transfer to a baking sheet and keep warm in the oven. Repeat with the remaining quesadillas.
- Cut the quesadillas into 4 wedges and arrange on plates. Toss the apples with lemon and juice and cinnamon to taste. Serve with the apple slices.

Steps:
- Begin by getting your fry pan ready on the counter. Butter one side of the bread with 1/2 tbsp of butter. Place the bread butter side down in the fry pan.
- Take half of the broken up peices of cheese and place them on top of the bread, trying to cover all the available places on the bread.
- Take the ham and twist each peice loosely so it folds in a small mound. Continue to do this with each piece, stacking them next to each other to cover the top of the cheese.
- Take the remaining cheese pieces and top the ham with the cheese.
- Butter the top piece of bread with another 1/2 tbsp of butter and place it, butter side out, on top of the cheese.
- Place the fry pan onto the stove over medium heat/low heat.Take your time grilling the bread as if you brown the bread too quickly, the cheese will not be melted. Keep an eye on the bottom piece and when it's nicely toasted, carefully flip the sandwich to the other side.
- Placing a lid on the fry pan helps with melting the cheese slightly faster.
- When the other side is nicely grilled to golden brown, remove the sandwich onto a plate. Let it rest for a few minutes as the cheese will be LAVA hot!! Cut in half after the wait time is done, and enjoy!

- Place 1 tortilla on a plate or cutting board, spread half of the ham, cheese, and then bell pepper over the tortilla. Place a second tortilla over ham, cheese, and bell peppers. Carry the quesadilla on the plate or cutting board over to the hot pan and carefully slide it onto the hot pan.
- Let the tortilla cook for a minute or so, until lightly browned, and then carefully flip it over and cook on the other side. The goal is to have warm meat and melted cheese without burning the tortillas, so keep an eye on things and lower the heat if the tortillas are cooking too fast, or if your stove tends to cook hot, start with a lower temperature.
- Remove the warm quesadilla from the pan and transfer to a cutting board. Using a knife or pizza roller, cut the queadilla into 6 or 8 wedges.
