CREAM CHEESE AND TOMATO OMELET WITH CHIVES



Cream Cheese and Tomato Omelet with Chives image

This omelet is light, fluffy, and delicious! Perfect with tomatoes and chives fresh from the garden. Use garlic chives to make this omelet extra flavorful.

2 eggs
1 tablespoon milk
salt and ground black pepper to taste
3 tablespoons cream cheese, softened
2 tablespoons seeded and diced tomato
1 tablespoon chopped fresh chives

Steps:

  • Whisk eggs, milk, salt, and pepper together in a bowl.
  • Heat a 6-inch nonstick skillet over medium heat; pour egg mixture into the hot skillet, tilting so egg mixture covers the entire bottom of skillet. Slowly cook egg mixture until set, 5 to 10 minutes.
  • Arrange small dollops of cream cheese onto half the omelet; sprinkle tomato and chives over cream cheese. Fold omelet in half over the fillings. Remove skillet from heat and cover until cream cheese has softened, 2 to 3 minutes.

Something I put together recently but the idea for using lavender in an omelet has been swimming through my brain for a year or two. To residents of the Pacific Northwest: I tried two different varieties of chèvre for this recipe: River's Edge 'Roasted Hazelnut and Frangelico' and 'Up in Smoke' ("smoked fresh chèvre, wrapped in smoked maple leaves which are spritzed with bourbon for extra smoky flavor". I don't make this stuff up.) Note-this is the recipe I use to prepare the omelet: Recipe #171221. I debated on adding shallots to the omelet...

Number Of Ingredients 8

3 eggs, unshelled (placed in a bowl of warm water for 5 minutes)
salt and black pepper, to taste
1 teaspoon butter or 1 teaspoon olive oil
1 -1 1/2 ounce chevre cheese, crumbled
1 teaspoon fresh lavender, minced (ok to use 1/2 teaspoon dried lavender-crush between your fingers)
cracked black pepper
one sprig fresh lavender
fresh herb, your choice

Steps:

  • Prepare omelet recipe up to the beginning of Step #5 and proceed as follows:.
  • Distribute the chèvre cheese on top of the omelet.
  • Add a sprinkle of cracked black pepper and garnish with a sprig of lavender.
  • If desired, garnish the top of the omelet with a light sprinkle of fresh herbs of choice: chives, French tarragon, Italian parsley, etc.

Add crème fraîche, yolks, flour and parsley, crumble in half the chèvre, season to taste and stir to combine.
  • Heat remaining butter in a 25cm-diameter frying pan over medium heat until foaming, add egg mixture, shaking pan gently to level. Cook until base is golden (1-2 minutes), scatter remaining leek mixture and chèvre over one half of the omelette, then grill until light golden (1-2 minutes). Carefully slide onto a warm serving plate, folding in half as you go. Serve hot with toasted baguette slices.

  • Place the pan back on the low-medium heat; melt butter in the pan. Pour in beaten egg. Cook for 3-4 minutes or until almost done. Season to taste.
  • Spoon mushroom mixture over one half of the omelette. Sprinkle chèvre crumbles over mushroom mixture.
  • Using a spatula, fold the empty half of the omelette over the side with the mushroom and chèvre mixture. If needed, cook for a moment more otherwise, remove from heat.
