OMEGA GRANOLA BARS

These little guys are a great alternative to the packaged ones in the grocery isle. You can control how much sugar and butter you put in and you can also flavour them how you like.

Number Of Ingredients 7

5 cups old fashioned/large flake oats
¼ cup butter (melted)
1 heaping teaspoon cinnamon
1 can condensed milk
1 cup walnuts (chopped)
1 cup dried cranberries
1 cup flax seeds (ground)

Steps:

  • Preheat oven to 375° F.
  • Add the oats, butter and cinnamon and give a good stir.
  • Now add the condensed milk, nuts, cranberries and flax seeds and give a real good stir. It will probably take a few minutes to distribute the gooey condensed milk.
  • Transfer the mix into a 9 by 13 in. baking/casserole dish. If the dish is a little bigger or smaller then your bars will be a little thinner or thicker respectively. Now you really want to pack the mix down with the bottom of a clean measuring cup or even just your hands, but make sure that it is firmly pressed together.
  • Pop it into the middle of the oven for 20 - 25 minutes depending on how you like your granola bars. 20 minutes and it will be a little chewy where as 25 will make it a little more crispy. If you would like it to be a little more or less crispy, take note of the time and adjust accordingly.
  • Remove from the oven, cool and then cut into desired size. Store in an airtight container for 3 or 4 days or freeze for up to 1 month.

2 cups rolled oats
½ cup shredded coconut
½ cup honey
2 tablespoons creamy peanut butter
1 teaspoon vanilla extract
⅛ teaspoon salt

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9-inch square baking dish.
  • Spread the oats and coconut evenly across a baking sheet.
  • Toast oats and coconut in preheated oven until browned, about 10 minutes; transfer to a large mixing bowl.
  • Mix honey, peanut butter, vanilla extract, and salt in a saucepan over medium-low heat. Cook and stir until smooth. Pour the honey mixture over the oats and coconut; stir to coat. Spread the mixture evenly into the prepared baking dish.
  • Bake in preheated oven until beginning to dry, about 15 minutes for crunchy granola bars, less if you like them chewy. Cool completely before cutting.

1/2 cup brown rice syrup (or honey, will be sweeter)
1/4 cup canola oil
1/2 cup almond butter (or 1/2 cup more peanut butter and 3/4 cup chopped almonds)
1/2 cup peanut butter
1 cup walnuts, chopped
1/2 cup pumpkin seeds
1/2 cup ground flax seeds (flaxseed meal)
1/2 cup sesame seeds
3 cups brown Rice Krispies

Steps:

  • Heat syrup, canola oil, and nut butters over medium heat until soft and smooth. Stir in nuts, seeds, and rice cereal. Press into a prepared 9 x 9 pan.

Number Of Ingredients 9

4 tablespoons walnut oil, divided
3/4 cup (packed) dark brown sugar
1/4 cup egg whites
1/2 teaspoon (scant) coarse kosher salt
3 cups organic old-fashioned oats
1 cup walnut halves, broken in half
1/2 cup flaxseed meal*
1 cup pitted dates, coarsely chopped or torn into pieces
1/4 cup honey

Steps:

  • Preheat oven to 350°F. Brush heavy large rimmed baking sheet with 2 tablespoons oil. Whisk 2 tablespoons oil, sugar, egg whites, and salt in large bowl. Add oats, walnuts, and flaxseed; toss well.
  • Spread mixture evenly on prepared sheet. Bake 15 minutes. Using metal spatula, stir granola. Bake 15 minutes longer. Stir again. Sprinkle dates over; drizzle with honey. Bake until golden brown, about 10 minutes longer. Stir to loosen. Transfer to clean baking sheet to cool completely. DO AHEAD: Can be made 1 week ahead. Keep chilled in airtight container.
  • Ground flaxseeds; available at natural foods stores.
