SAUTEED GREEN BEANS WITH ALMONDS
A simple, but delicious, dish. The cooking method really brings out the flavor of fresh-from-the-garden green beans. Recipe serves 4-5 as a side dish, or 2 as a vegetarian main course over rice.

Steps:
- In saute pan, melt olive oil and butter over medium-low heat.
- Add shallots and saute 1 minute.
- Add green beans, garlic, salt, and onion powder. Stir to coat beans.
- Saute until beans are almost tender.
- Add almonds and continue to saute until green beans are crisp-tender.
- Serve warm as a side dish, or over rice as a vegetarian main course.

OLIVE --SAUTEED ALMONDS
Steps:
- Blanch the almonds 1 1/2 minutes in boiling water; drain. Plunge into cold water, then slip off the skins. Spread the almonds out on several thicknesses of paper toweling and pat dry. Transfer to fresh paper toweling and let dry 24 hours. Heat the oil in a 10-inch iron skillet over moderate heat about 2 minutes or until an almond, dropped into the oil, sizzles gently. Add half of the almonds to the oil and saute, stirring often, 4 to 5 minutes over moderately low heat until the color of light caramel. Dump the almonds into a colander set over a heatproof bowl; shake to drain off as much oil as possible, then drain on paper toweling. Return the oil to the skillet and fry and drain the remaining almonds the same way. Sprinkle with salt and cayenne and toss well; store in an airtight canister. Note: the sauteeing oil can be used to dress vegetables or salads.

- In a large skillet, saute almonds in 1 teaspoon of oil until lightly browned; remove and set aside. In the same skillet, saute asparagus in the remaining oil for 1 minute. Add the water, sugar, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 3-4 minutes or until asparagus is tender. Drain. Sprinkle with lemon juice; top with almonds.

- Heat a large flat-sided skillet, saucepan or Dutch oven over medium-high heat, then add 1 tablespoon of oil.
