ALMOST NO-KNEAD BREAD WITH OLIVES, ROSEMARY, AND PARMESAN



Almost No-Knead Bread With Olives, Rosemary, and Parmesan image

Another great version of Cook's Illustrated Almost No-Knead Bread. Makes an unbelievable loaf of bread! An enameled cast-iron Dutch oven with a tight-fitting lid yields best results, but the recipe also works in a regular cast-iron Dutch oven or heavy stockpot. Because of the high temperature required besure the pot (and lid) can handle the heat. You may have to improvise a new handle on the lid. I've also used my Romertofp clay baker and had wonderful results. This bread is so good, I'm tempted to invest in a La Cloche.

3 cups unbleached all-purpose flour, plus additional for dusting work surface (15 ounces)
1/4 teaspoon fast rise yeast
1 1/2 teaspoons table salt
4 ounces finely grated parmesan cheese
1 tablespoon minced fresh rosemary
3/4 cup water, plus
2 tablespoons water, at room temperature
1/2 cup chopped green olives (pitted)
1/4 cup mild-flavored lager beer, plus
2 tablespoons mild-flavored lager beer
1 tablespoon white vinegar

Steps:

  • Whisk together flour, yeast, salt, Parmesan, and rosemary in large bowl. Add water, olives, beer, and vinegar.
  • Using rubber spatula, fold mixture, scraping up dry flour from bottom of bowl until shaggy ball forms. (The dough will be very wet.).
  • Cover bowl with plastic wrap and let sit at room temperature for 8 to 18 hours.
  • Line inside of 10 inch skillet with a 12- by 18-inch sheet of parchment paper.
  • Spray paper with nonstick cooking spray.
  • Transfer dough to lightly floured work surface and knead 10 to 15 times. Shape dough into ball by pulling edges into middle.
  • Transfer dough, seam-side down, to parchment-lined skillet and spray surface of dough with nonstick cooking spray.
  • Cover loosely with plastic wrap and let rise at room temperature until dough has doubled in size and does not readily spring back when poked with finger, about 2 hours. (I've also retarded the rising by placing dough in the refrigerator for up to 12 hours.).
  • About 30 minutes before baking, adjust oven rack to lowest position, place a large heavy-bottomed Dutch oven (with lid) on rack, and heat oven to 500 degrees.
  • Lightly flour top of dough and, using razor blade or sharp knife, make one 6-inch-long, 1/2-inch-deep slit along top of dough.
  • Carefully remove pot from oven and remove lid.
  • Pick up dough by lifting parchment overhang and lower into pot (let any excess parchment hang over pot edge).
  • Cover pot and place in oven.
  • Reduce oven temperature to 425 degrees and bake covered for approximately 30 minutes.
  • Remove lid and continue to bake until loaf is deep brown and instant-read thermometer inserted into center registers 210 degrees, 20 to 30 minutes longer.
  • Carefully remove bread from pot; transfer to wire rack and cool to room temperature, about 2 hours.

I found this recipe in one of my "women's" magazines. I loved the idea of just a few ingredients. It smells and tastes great alone, toasted or for sandwiches.

2 2/3 cups self-rising flour
12 ounces beer, freshly opened,chilled or room temperature
1 cup pitted olive, coarsely chopped (black or kalamata)
1/2 cup grated parmesan cheese
1 1/2 teaspoons italian seasoning

Steps:

  • Preheat oven to 375 degrees.
  • Lightly grease a 9x5x3 loaf pan.
  • In a medium bowl, mix flour with olives cheese and seasoning.
  • Add beer, and stir with a rubber spatula just until moistened completely.
  • Scrape into a prepared pan.
  • Bake 50-55 minutes until top is lightluy browned, sides pull away from pan and pick inserted in middle comes out clean.
  • Cool in pan on wire rack for 5 minutes, then turn out onto rack to cool.
  • To serve, cut into 1/2 inch slices with a serrated bread knife.

Savory Zucchini Beer Bread image

Here, summer squash marries with scallions and Parmesan to create something much more flavorful and a bit more decadent than the average zucchini loaf.

Yield Makes 1 (8½ x 4½ -inch) loaf

Number Of Ingredients 11

2 medium zucchini or yellow squash (about 12 ounces total), coarsely grated
1 teaspoon salt, divided
¼ cup plus 1 tablespoon olive oil, plus more for greasing
3 cups all-purpose flour (substitute up to half whole-wheat flour)
1 tablespoon baking powder
1 tablespoon sugar
½ teaspoon freshly ground black pepper
2 scallions, green and white parts, thinly sliced
¼ cup coarsely shredded Parmesan cheese
2 tablespoons finely shredded Parmesan cheese
1¼ cups light and crisp beer, such as a lager, pilsner, or Kolsch

Steps:

  • Toss the zucchini with 1/2 teaspoon of the salt in a colander and let stand for 15 minutes. Gather it up in your hands and squeeze out as much moisture as you can.
  • Preheat the oven 375°F. Generously grease an 8 x 4-inch loaf pan.
  • Whisk together the flour, baking powder, remaining 1/2 teaspoon salt, the sugar, and black pepper. Add the zucchini, scallions, coarsely shredded cheese, and 1/4 cup of the olive oil, folding to combine, then pour in the beer. Let stand for a few minutes as the dry ingredients absorb the beer, then fold gently until everything is moistened. It'll be a dense and tacky batter. Scrape into the prepared pan.
  • Drizzle with the remaining 1 tablespoon olive oil and sprinkle with the finely shredded cheese. Transfer to the oven and bake until set in the center and a tester comes out clean, 75 to 80 minutes. Cool in the pan for 10 minutes, then unmold. This bread can be served warm (though it'll be a bit gooey inside) and should be eaten within a day or two, stored loosely covered at room temperature.
