ANCHOVY CRUMB STUFFED PEPPERS
Tender pepper wedges are topped with a tasty crumb mixture in this typical appetizer.

Steps:
- Preheat oven to 400 degrees F.
- Cut the peppers into quarters, and remove the seeds and membranes.
- Lay the peppers cut side up on a baking sheet, and bake for 15 minutes.
- While the peppers are baking, add the anchovies, olives, capers, garlic, parsley, and almonds into the bowl of a food processor and pulse until finely chopped.
- Season with salt, pepper, and the red chili if using.
- Drizzle in about 3/4 cup of olive oil, and pulse until blended.
- Place the breadcrumbs in a small bowl, and add about 1/3 to 1/2 of a cup of the anchovy mixture and stir to mix well. (Keep the rest of the anchovy sauce for another use)
- Remove the peppers from the oven and sprinkle the crumb mixture on top of each pepper.
- Return to the oven for another 10 to 15 minutes.
- Cool to room temperature before serving.

ROASTED RED PEPPERS WITH ANCHOVIES AND OLIVE OIL
You can serve these simple roasted pepper strips with toasted or grilled rustic bread as a light first course, or use them in sandwiches or salads.

- Place bell peppers directly over the flame of a gas-stove burner on high heat or on a grill. Roast peppers, turning with tongs, until blackened all over. (Alternatively, broil peppers on a baking sheet, turning, until skin has charred.)
- Transfer peppers to a large bowl, and cover immediately with plastic wrap. Set aside to steam, about 15 minutes. Peel peppers; discard skins. Remove stems, seeds, and ribs, and cut each pepper lengthwise into 8 strips. Transfer to a small non-reactive bowl.
- Toss peppers with garlic and 1 tablespoon oil; set aside to marinate, at least 1 hour or up to 2 days in the refrigerator.
- Arrange peppers on a serving plate, and top with anchovy strips. Sprinkle with red pepper flakes, if desired, and drizzle with remaining teaspoon oil. Serve immediately.

Steps:
- Fill a large pot with water and bring to a boil.
- Add the sliced fennel bulb and the bucatini and cook until the pasta is al dente, approximately 10 minutes.
- Meanwhile, place the 2 tblsps olive oil in a large skillet.
- Add the chopped fennel bulb and saute over medium heat for about 3 minutes.
- Add the garlic, half the wild fennel, the chopped anchovies and the red pepper flakes.
- Cook, stirring, for 6-8 minutes, or until the greens are tender.
- Drain the pasta, reserving a little of the cooking liquid.
- Chop the boiled fennel and add it to the sauce along with ¼ cup of the cooking liquid and the drained pasta.
- Drizzle with the Olive Oil with Anchovies and Chili Peppers.
- Add the remaining chopped fennel and toss well.
- Taste, adjust the seasonings to your liking, and serve immediately.

- Drain the anchovies and pat dry with paper towels.
- Chop 1 of the anchovies and place in a clean and absolutely dry 2-cup bottle.
- Add the whole anchovies and the chili pepper.
- Fill the bottle with olive oil, cover, and let stand in a dark place for a week, shaking from time to time, before using.
- This oil will keep for 3-6 months, stored in a cool, dark place.

SPAGHETTI WITH GARLIC, OIL AND HOT RED PEPPERS
This is the kind of quick, simple dish Italians often throw together after an all-night party or when spirits are flagging and an infusion of food is called for. Other types of long, thin pasta, like vermicelli, linguine or taglierini, may be substituted. If anchovies are omitted, adjust the salt in the sauce.

- Bring 5 to 6 quarts water to rolling boil.
- Peel garlic cloves, removing green sprout at center, if necessary, and chop coarsely. In pan large enough to hold all the drained pasta, cook garlic in oil very gently over medium-low heat. Cook just until garlic softens and starts to turn golden. Do not brown.
- Add at least 2 tablespoons salt to vigorously boiling water. Add spaghetti, stirring.
- If using anchovies, add them to oil and garlic. Cook briefly, mashing anchovy pieces into oil with fork. Stir in chili pepper and half of the parsley, and carefully add a ladleful of the pasta cooking water. Let simmer, and reduce slightly while pasta finishes cooking.
- Start testing pasta after it has cooked for 4 minutes. When it is still a little chewy in the center, drain and add it to pan with sauce. Turn heat up slightly, and cook, mixing pasta and sauce together well for 1 to 2 minutes, or until pasta is done to taste. Turn pasta into preheated serving bowl, sprinkle with remaining minced parsley, and serve immediately.

- Fill a pot or saucepan with water, lightly salt it, then bring the water to a boil on the stovetop. Add the spaghetti pasta to the water and cook as per instructions for the type of pasta you are using. Allow the pasta to cook until it’s al dente.
- Meanwhile, add minced garlic, anchovy paste, crushed red pepper flakes, and a pinch of salt and pepper to a large skillet with oil. Heat the ingredients together for around 2 minutes, stirring constantly.
- Next, empty the can of tomatoes into a blender and puree until smooth. Mix the pureed tomatoes with the ingredients in the skillet, then add olives and capers to the mixture. Gently heat, and keep stirring.
- When the pasta is al dente (cook for around 2 minutes less than the stated cooking time), drain the spaghetti, then pour into the skillet to mix with the pasta sauce. Heat gently for a few more minutes.
