PRESSURE COOKER WHOLE CHICKEN
Once you make a whole chicken in the pressure cooker, you'll never want to roast one in the oven again. Pressure cooked whole chickens are hands-off way to make an amazing meal and come out fork-tender and perfectly moist every time. This recipe has a bit of a kick, but you can use this same method and your own favorite chicken seasonings if you prefer.

- Combine salt, paprika, cayenne, onion powder, thyme, black pepper, white pepper, and garlic powder together in a small bowl. Rub the outside of the chicken and inside the cavity generously with the seasoning mixture.
- Turn on an electric pressure cooker (such as Instant Pot®) and select Saute function. Pour oil into the pot and allow to get hot, 1 to 2 minutes.
- Brown chicken in the hot oil on each side (breast side and back side) for 2 to 3 minutes. Remove chicken from the pot and set it aside on a plate. Cancel Sauté function.
- Pour chicken stock into the pot and scrape the bottom with a wooden spoon to loosen any browned bits.
- Place a steamer rack trivet in the bottom of the pressure cooker pot, then place the whole chicken, breast side up, on top of the trivet.
- Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 25 minutes. Allow about 6 minutes for pressure to build.
- Let pressure release naturally according to manufacturer's instructions, 25 to 35 minutes. Unlock lid and remove.
- Open the lid and carefully remove the chicken from the pressure cooker. Allow the chicken to rest for 10 minutes before carving.

- Rub chicken on all sides with salt, pepper, garlic powder, rosemary, and parsley.
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat olive oil and add chicken, breast-side down. Cook until skin is browned, about 5 minutes. Use tongs to flip chicken and brown on the other side for another 5 minutes. Carefully remove chicken from the pot and set aside. Pour in chicken stock and deglaze the pan, scraping off all the browned bits.
- Place the rack insert into the pot and return chicken to the pot, breast-side up. Close and lock the lid.
- Select Poultry setting and set timer for 28 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid. Carefully remove chicken to a carving board to rest.
- Turn on Saute function and whisk cornstarch into the pot with the stock and drippings to make a gravy.

- Remove anything inside of bird. Gently rinse entire bird with cold water and pat dry with paper towels. Place in baking pan or platter and set aside.
- Preheat electric pressure cooker to saute mode, or start warming stove-top pressure cooker on stove top.
- In a small bowl combine rosemary, olive oil, garlic, paprika, salt, pepper, and lemon zest. After zesting, cut lemon in half and stuff in cavity of chicken. Spread spice mixture all over bird, massaging onto all sides. Drizzle some olive oil in your hot pan and place chicken breast-side down into pot. Leave for 3-4 minutes, until golden brown. Flip chicken over and repeat for other side.
- Remove chicken from pan and set back onto platter or baking dish where it was before. Add broth to pan and use a spatula to scrape off browned bits from pan. Cut onion into 4 wedges and place on bottom of pan, place chicken on top (breast-side up) and secure lid.
