NANA'S EASY MEATLOAF RECIPE

The classic meatloaf recipe with a twist - oatmeal and olives.

1.33 pounds organic ground beef
1/2 teaspoon salt
1/2 teaspoon lemon pepper
3/4 teaspoon garlic powder
1/2-3/4 teaspoon poultry seasoning (may substitute sage)
1-2 tablespoons worcestershire sauce
10-12 green olives, chopped
1/2 cup chopped onion, celery, & green peppers (1/2 cup total of the 3 veggies)
1 large egg, beaten
1/4 cup gluten free oatmeal
1/4 cup ketchup (for topping) (or more if you wish)
8 green olives, sliced (slice each olive into 3 sections for top of meatloaf)

Steps:

  • I start with a big bowl and spread out the ground beef around the bottom and sides of the bowl. Then I add the dry seasonings and the worcestershire and mix by hand literally getting my hands on the meat. Next I add the chopped vegetables and olives mixing that by hand as well. I beat the egg and add that in; then add the oatmeal. I mix by hand 'til all the ingredients are blended.
  • I add the mixed meat, seasonings, and vegetables to a greased glass loaf pan shaping it in on sides. Last I add enough ketchup to cover the top surface of the meatloaf spreading it over the top with my fingers. Then I arrange the sliced olives on the top of the ketchup for a decorative topping. Bake for an hour at 350 degrees. Cool, pour off excess fat and you're ready to serve your meat before it has time to loaf.

There's nothing more comforting than a gorgeous meatloaf made with top-quality meat, lightened up with festive flavours. It's a delicious, easy way to feed a big group of people. And when it comes out in a big tray it looks amazing, too.

4 medium bulbs of fennel
olive oil
2 onions
2 carrots
½ a bunch of fresh sage (15g)
½ a bunch of fresh rosemary (15g)
1 x 125 g ball of mozzarella cheese
200 g sourdough breadcrumbs
1 kg higher-welfare minced pork
1 kg minced beef
2 teaspoons wholegrain mustard
2 large free-range eggs
12 rashers of higher-welfare smoked streaky bacon
500 ml organic chicken stock
2 tablespoons quality blackcurrant jam
1 tablespoon sun-dried tomato purée

Steps:

  • Preheat the oven to 180ºC/350ºF/gas 4.
  • Trim each fennel bulb and chop into eight wedges, then place in a large roasting tray, drizzle with oil, season with sea salt and black pepper and roast for 30 minutes.
  • Meanwhile, peel and dice the onions and carrots, place in a large pan with 1 tablespoon of oil on a medium-low heat and cook for 20 minutes, stirring occasionally.
  • Pick the herb leaves, finely chop half of them and add to the veg pan, saving the rest for later.
  • Leave the veg to cool completely, then tear in the mozzarella and add the breadcrumbs, minced meat, mustard, eggs, and a good pinch of sea salt and black pepper. Scrunch and mix well, then shape into a loaf.
  • Make a space in the middle of the fennel tray and sit the meatloaf in the centre. Criss-cross the smoky bacon over the meatloaf, drizzle with a little oil, then cover the tray with tin foil.
  • Roast for 30 minutes, then remove from the oven and discard the foil.
  • Mix the chicken stock, jam and tomato purée together in a jug until smooth, then pour into the tray. Toss the reserved herbs with a little oil and scatter into the tray, then return to the oven for a final 45 minutes, or until cooked through.
  • If the juices need thickening at this stage, simply put the tray on the hob to reduce for a few minutes, until they're the consistency of your liking, skimming away any fat from the surface, if needed.
  • Serve the meatloaf, sweet fennel and juices with mash and seasonal greens.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
⅓ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

1/2 cup breadcrumbs
1 egg, beaten
1 package onion soup mix
20 green olives, cut in half
1/2 cup ketchup

Steps:

  • Preheat oven to 350.
  • Mix first 5 ingredients by hand in large bowl Spray a loaf pan with cooking oil.
  • Put mixture into pan and fold into a loaf.
  • Put the ketchup on and smooth so whole loaf is covered on top.
  • Put pan on middle rack.
  • Bake for 45 minutes.

  • combine sausage/ground pork and beef and kneed. mix in olives and sausage.
  • mix meets and bread crumb mix. mold into loaf pans to withing 3/4 inch of top.
  • combine butter, chili sauce, water and worcestershire. and cover top of loaves
  • bake in preheated oven at 375 for 1 hour and 15 min.

2 large eggs beaten

1 pound brined olives with pimentos (approx. 10 oz dry weight) - drained and rinsed an very roughly chopped
1 cup chopped celery
1/3 cup melted butter
1 cup chili sauce (Homestyle is prefered)
1 teaspoon Worcestershire sauce
2 tablespoons water

Steps:

  • Mix bread crumbs, milk, pepper, onion, celery, garlic, and eggs.
  • In seperate large bowl, kneed meats together
  • mix olives into meats and then mix in bread crumb mixture. mix throughly.
  • place mixture into loaf pans to within approx. 3/4 inch of top.
  • mix melted butter, chili sauce, worcestershire, and water and evenly apply to top of loafs.
  • bake in preheated, 375 deg. F oven for 1 hour 15 min.
  • Remove when done and let set of 5 min.
  • slice and serve with additional chili sauce

  • In a small skillet, heat the olive oil over med. high heat and sauté the onion and bell pepper for 3-4 minutes, remove from heat.
  • In a large bowl, add the meats, onion and peppers along with all remaining ingredients reserving 3/4 C. mozzarella cheese for topping.
  • Now, dive in there with the best tools God gave you, your hands and combine everything really good. Once it has all come together, place and mold the mixture in a baking dish of your choice. I used my oval Portuguese stoneware for ours.
  • Spoon 1/2 to 3/4 C. of the marinara sauce on top and spread around. Place in a 400 degree oven for 50 minutes. Remove from the oven and top with the remaining cheese and sprinkle a little dry basil over the top.
