EASY NO-FAIL LEMON CHICKEN MARINADE

Easy No-Fail Lemon Chicken Marinade image

This just might be the best chicken marinade, ever. It's incredibly versatile. Use for marinating chicken, turkey, pork, fish, shrimp, tofu or vegetables. When marinating meats and poultry, marinate at least 1 hour or overnight. When marinating something more delicate like fish, you only need to marinate 1 to 2 hours. You can also use this to baste while cooking or grilling, if you plan to do this, simply set a portion of the prepared marinade aside for basting. **This makes enough to marinate 2 to 2 ½ pounds of chicken.

Provided by Adam and Joanne Gallagher

Categories     Dinner

Time 10m

Yield Makes approximately 1/2 cup

Number Of Ingredients 9

Zest of 1 lemon, peeled or finely grated
1/4 cup fresh lemon juice, 1 to 2 lemons
2 tablespoons olive oil
1 tablespoon Dijon mustard
1/2 teaspoon fine sea salt
1/4 teaspoon to 1/2 teaspoon red pepper flakes, depending on how spicy you like things
1/2 teaspoon fresh ground pepper
3 cloves garlic, crushed with the side of a large knife or minced
1/4 cup chopped fresh dill, parsley, cilantro, basil or a combination, optional

Steps:

  • Whisk lemon juice, olive oil, mustard, salt, red pepper flakes and black pepper together until the salt has dissolved. Stir in the garlic, lemon zest and herbs (if using). Refrigerate and use within 1 to 2 hours.
  • To marinate chicken, add the marinade and chicken to a resealable food-safe bag or container and marinate in the refrigerator. Since this is so flavorful, even 20 minutes will work wonders. We don't recommend marinating more than a day in advance since the lemon in the marinade can cause the chicken to toughen.

Pinch of red pepper flakes
1 large lemon (zest and juice of)
2 tbsp olive oil
3 garlic cloves (grated)
2 tsp oregano (dried)
1/2 tsp salt
1/2 tsp ground black pepper
3 tbsp maple syrup or honey
2 tbsp soy sauce (I used Bragg's liquid aminos)
1 tbsp rice vinegar
1 garlic clove (grated)
1/2 tsp fresh ginger (grated)
3/4 cup yogurt or buttermilk
2 garlic cloves (grated)
1 tbsp olive oil
1 tbsp onion powder
1/2 tsp salt
1/2 tsp ground black pepper

Steps:

  • Combine marinade ingredients in a bowl and stir.
  • Pick flat container, baking dish or reusable silicone bag so chicken can lay flat for maximum flavor penetration.
  • Place chicken in a container, pour marinade over and mix to coat well.
  • Marinating time is anywhere from 30 minutes to 24 hours. Longer marinating time means more flavor but I wouldn't marinate past 24 hours because acid will cause flesh to break down.
  • When ready to cook, remove chicken from marinade and cook as per recipes.

  • In a mixing bowl, whisk together the chopped olives, olive oil, lime juice, garlic, honey, lime zest, red pepper flakes and oregano. Season the marinade with salt and pepper to taste.
  • Sprinkle the chicken pieces lightly with salt and pepper. Place chicken pieces in a 9x13 ceramic or glass baking dish. Brush the pieces evenly with olive marinade, using all of the marinade to coat. Cover the baking dish with plastic wrap and place it in the refrigerator for at least 2 hours, up to overnight (overnight is best).
  • Preheat oven to 375 degrees F. Remove the plastic wrap and cover the baking dish with parchment or foil. If using foil, pierce a few vents with a sharp knife around the outer edges. If using parchment, simply cover the dish loosely.
  • Place the covered dish in the oven. Let the chicken bake for 60 minutes, then remove the parchment or foil and cook for an additional 15-30 minutes, basting periodically, until well cooked and tender. At the end of cooking, you may broil it for a minute or two to brown the skin-- watch carefully to make sure it doesn't burn!Transfer chicken pieces to a platter. Carefully tip the baking dish so that the pan drippings and juices gather in one corner. Use a spoon to skim off the clear liquid fat, separating it from the solid drippings. Discard the fat.
