1 8 oz. package cream cheese, softened
1 stick margarine or butter (softened)
2 T. green olive juice
1 7 oz. jar green olives (cut up)
2 3.8 oz. small cans sliced black olives

Steps:

  • Drain 1 jar green olives into a bowl. Reserve 2 tablespoons of the green olive juice to add to the olive dip.
  • Remove olive juice.
  • Place 8 ounce softened cream cheese and 1 stick of margarine or butter in a bowl. Add the 2 tablespoons reserved green olive juice.
  • Put olive juice in cream cheese.
  • Mix until well combined.
  • Mix cream cheese.
  • In a bowl, place the drained jar of green olives.
  • Places green olives in bowl.
  • Chop the green olives. We used the Rada Food Chopper to easily chop our olives.
  • Chop green olives.
  • Add 2 small cans of sliced black olives to the green olives and continue to chop. Continue chopping until the olives are fully chopped.
  • Chop black and green olives.
  • Combine the olives with the cream cheese and mix until blended.
  • Blend cheese and olives.
  • Chill the olive spread before serving.
  • Puts cream cheese in bowl.
  • Serve the olive dip and enjoy!

2 garlic cloves, or more depending on how garlicky you want it
2 tablespoons capers, drained
1/2 teaspoon dried oregano
2 teaspoons chopped fresh rosemary
2 teaspoons chopped fresh thyme
3 tablespoons finely grated parmesan cheese
Pinch sea salt, if you have it try truffle salt
Fresh ground pepper, to taste
Pinch crushed red pepper flakes, optional to make it spicy
1/2 cup extra-virgin olive oil, plus more as needed
Crusty bread, cubed

Steps:

  • Finely mince the garlic and capers. Add to a bowl along with the oregano, rosemary, thyme and cheese. Season with a small pinch of salt and pepper. Use the back of a spoon to smoosh the herbs into the garlic and capers.
  • Make one or two mounds of the garlic-herb mixture on a rimmed plate. Drizzle the olive oil on top. Serve with cubes of bread.

Well, I have taken that idea a few steps (decades!) further and turned it into a dip that is amazing with veggies or crackers. So full of flavor you won't be able to resist it!

1 (8 ounce) package cream cheese, softened
1/3 cup mayonnaise
1 Tablespoon dill pickle relish (or finely chopped dill pickle)
8 large Spanish Olives (pimento stuffed) chopped
1 teaspoon olive juice
1/2 teaspoon freshly cracked black pepper
1 Tablespoon chives
1 green onion, sliced (the whole thing)
2 ribs of celery, finely diced

Steps:

  • With a mixer, cream the cream cheese until smooth.
  • Add in mayonnaise, mix.
  • Add in dill pickle relish, chopped olives and olive juice. Cream together.
  • Fold in green onion and celery. (reserve a little green onion and/or sliced olive for serving if desired.)
  • Mix in ground black pepper and chives.
  • Store in a bowl in the fridge until you are ready to serve.
  • Serve with celery, carrots, bell pepper, crackers and chips.

2 cups green olives, pitted and washed to remove salt
1/2 cup tahini (plain sesame paste)
2 tablespoons fresh cilantro, chopped
1 -2 tablespoon lemon juice
2 garlic cloves, crushed
1/8 teaspoon cayenne
1 small tomatoes, finely chopped
1 tablespoon olive oil

Steps:

  • Place all ingredients except the tomatoes and olive oil in a blender; blend until smooth. This may take a little while since the dip is pretty thick. Add a little more lemon juice to thin it out only slightly if you need to.
  • Place in a flat serving dish and refrigerate for 1 hour.
  • Then spread the tomato pieces on top,and drizzle with olive oil before serving.

1/2 cup (115 g) mayonnaise

Steps:

  • Chop the olives into small pieces. You can do this with a knife or a food processor. Use short pulses and check after each pulse if using a food processor.
  • Make the dip. In a medium bowl, mix the cream cheese and mayonnaise until fully combined, then mix in the olives. You can add red pepper flakes to taste to make the dip spicy. Cover the bowl with plastic wrap and place in the refrigerator. Chill for at least 30 minutes to allow the flavors to bloom.
  • Serve. Remove the dip from the refrigerator about 10-15 minutes before serving for best texture and flavor.

I'm not sure why this recipe is titled as a dip. It was given to me by a co-worker. It's always a hit for people who love olives. I usually serve it as a spread. The secret to this recipe is using Unico's olives & marinated artichoke hearts and to refrigerate overnight.

2 cups pimento stuffed olives, drained
1 cup pitted black olives, drained
6 fluid ounces marinated artichoke hearts, undrained
1 hot banana pepper
1 sweet red pepper
2 garlic cloves, minced
1/2 teaspoon dried basil
1/2 cup olive oil
1 tablespoon fresh lemon juice

Steps:

  • Remove seeds & dice the red pepper.
  • Remove seeds & dice the hot banana pepper. We love spicy foods, so I don't discard the seeds.
  • In a food processor, gently blend olives and artichoke hearts to a medium chopped consistency.
  • Add the hot banana pepper, red pepper, garlic and basil.
  • Dizzle olive oil & lemon juice over the mixture.
  • Gentley blend to a finely chopped consistency.
  • Transfer to a bowl, and refrigerate overnight. It's really important to follow this step, I've learned this from experience.
  • Serve with fresh baguette thinly sliced and/or crackers.
