This fun, tasty appetizer will have your guests wondering, "What are those?" But these breaded olives are sure to be a hit.

1 cup shredded Cheddar cheese (4 ounces)
1/4 cup butter or margarine, softened
1/4 teaspoon Worcestershire sauce
1 cup Original Bisquick™ mix
1 jar (5 ounces) pimiento-stuffed olives

Steps:

  • Heat oven to 400°F.
  • Stir together cheese, butter and Worcestershire sauce; stir in Bisquick mix until dough forms (work with hands if necessary). Pat olives completely dry on paper towel. Shape 1 teaspoon dough around each olive. Place about 1 inch apart on ungreased cookie sheet.
  • Bake about 10 minutes or until light golden brown.

We used to eat fried olive bites at the State Fair of Texas but they got dropped due to the supplier not supplying them . I came up with my own version to satisfy our craving. Good as is but we like to dip in a creamy Greek dip. These can be made ahead and frozen. Allow to come to room temp approx 30 minutes before frying.

1/2 cup chopped black olives (packed)
1/4 cup chopped green olives (packed)
3 (21 g) wedges soft cheese spread with herbs, room temp (such as Laughing Cow)
1 ounce cream cheese, room temp
1 teaspoon red pepper flakes
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/3 cup shredded monterey jack cheese (packed)
2 tablespoons grated asiago cheese
2 eggs, beaten
1 1/2-2 cups Italian seasoned breadcrumbs, as needed

Steps:

  • Mix cheeses and spices together till lump free.
  • Add olives and gently mix till combined.
  • Chill 30 minutes.
  • Use a small cookie scoop and portion out filling. (100 disher).
  • Drop into bread crumbs to coat and gently roll into balls.
  • Place on baking sheet and freeze 20 minutes.
  • Dip balls into beaten eggs a few at a time to coat.
  • Use a fork to lift balls out of eggs and roll in bread crumbs.
  • Freeze for 20 minutes.
  • Repeat rolling in eggs and bread crumbs.
  • Allow to dry for 15 minutes.
  • Fry a few at a time at 350 till deeply browned.
  • Drain on paper towels.

OLIVE, PEPPERONI & MOZZARELLA BITES

1 can of medium whole black olives
1 package of pepperoni
1 pound block of Mozzarella cheese
Pizza Sauce (optional)

Steps:

  • Slice Mozzarella cheese into 1/2" x 1/2" cubes. Drain olives from liquid. Using a toothpick, skewer an olive and push 1/3 way up the toothpick. Fold a piece of pepperoni into half or quarters and skewer next. Finally skewer mozzarella. Do not push toothpick all the way through mozzarella, only half way through as you do not want guests poking themselves in the mouth with the toothpick. If making ahead of time, arrange on tray and cover with saran wrap so that it does not dry out. When serving, serve plain or with a drizzle of pizza sauce on platter.

1 clove garlic (grated fine)
1/3 cup breadcrumbs
1/4 cup grated Parmigiano-Reggiano cheese
1 large egg
2 tablespoons chopped fresh chives ((or 1 tablespoon dried chives))
1 tablespoon chopped fresh parsley ((or 1/2 tablespoon dried))
1 teaspoon chopped fresh basil ((or 1/2 teaspoon dried))
1 teaspoon chopped fresh oregano ((or 1/2 teaspoon dried))
pinch of salt and pepper
tomato sauce (for dipping)

Steps:

  • Preheat oven to 400˚F. Lightly coat a baking sheet with olive oil or non-stick spray. Set aside.
  • Use a box grater to grate the zucchini into a clean towel. Roll up the towel and twist to wring out the moisture.
  • Grate the garlic using the small holes on the box grater.
  • Add the shredded zucchini, garlic, egg, breadcrumbs, parmesan, chives, parsley, basil, oregano, salt and pepper to a medium bowl. Mix well to combine.
  • Shape a tablespoon of the mixture into your hands, pat into small balls, and place on the baking sheet.
  • Bake for 15-18 minutes in the preheated oven until golden. Serve warm with marinara sauce. Recipe makes about 16 bites.

1 stick butter (softened)
1 jar Kraft Olde English Cheddar cheese
1 1/4 cups all-purpose flour
1 dash salt

Steps:

  • Gather the ingredients.
  • Pat olives with paper towels to dry thoroughly.
  • Line a baking sheet with parchment paper or leave it ungreased.
  • In a medium bowl, cut the butter and cheese into the flour. Add salt.
  • Form into small balls around olives; seal well.
  • Arrange the cheese balls on the prepared baking sheet and chill for at least 1 hour, or chill overnight in the refrigerator.

1/2 cup unbleached all-purpose flour, plus extra for dusting
5 tablespoons unsalted butter
1/3 cup grated Cheddar
1/4 cup grated Parmesan
20 olives stuffed with pimientos

Steps:

  • In a mixing bowl, combine the flour and butter until the mixture resembles bread crumbs. Mix in the Cheddar and Parmesan and knead lightly to combine. Form the mixture into a disk. Wrap it in plastic wrap and refrigerate for at least 30 minutes.
  • Unwrap the dough, take a small piece and cover an olive, making sure the pastry surrounds the olive and there are no gaps. Flour your hands and roll the olive-encased pastry into a ball; put it on an ungreased baking sheet. Repeat the process with the remaining pastry and olives. Chill in the refrigerator for at least 1 hour. (Can be made a day ahead and held in the refrigerator.)
  • Preheat the oven to 425 degrees F. Put the baking sheets on the middle shelf of the oven and bake until the pastries are light golden, about 10 minutes. Remove the bites from the oven and arrange on a serving platter.

3 parsnips (1 1/2 pounds), peeled and chopped into 1/2-inch rounds and halved if large (4 cups)
2 tablespoons extra-virgin olive oil
Coarse salt
8 ounces dried chorizo, chopped into 1/2-inch rounds and halved if large
1 1/2 cups pitted green olives, such as Castelvetrano

Steps:

  • Preheat oven to 425 degrees. Toss parsnips with oil and season with salt on a rimmed baking sheet. Bake, tossing halfway through, until golden and tender, 25 to 30 minutes. Toss in chorizo, return to oven, and bake until chorizo is warmed through and releases orange oil, about 5 minutes more. Remove from oven and toss in olives. Serve on skewers.

combine equal volumes (eg: 1 cup each) of shredded cheddar cheese
all-purpose flour
and unsalted butter. Blend until forms a dough. Form into quarter-sized diamener logs
and chill.

Steps:

  • Drain a jar of pimento-stuffed spanish olives. Pinch off piece of the dough log the size of the olive, flatten, and wrap around olive, rolling between palms to smooth. Put on a baking tray, and freeze. Bake at 350 degrees for 10-15 mins, dust with pimenton, and serve.
