BREAKFAST SAUSAGE PATTIES
Plan ahead the pork mixture must be refrigerated for 24-48 hours to blend the flavors together before making the patties. I usually get about 18-20 patties out of this, but the yield will vary depending on how large you make them --- you may adjust the amount of sugar but I recommend making the first batch using the stated amount, you might prefer it sweeter but for my family 1 tablespoon is just the perfect amount --- these are very good between biscuits :)

Steps:
- In a small bowl mix all the spices together.
- Place the ground pork into a large bowl; add in the spices to the pork and mix using clean hands until well combined.
- Cover and chill for 24 hours.
- Place the pork mixture between two pieces of greased waxed paper; using a rolling pin, roll out the pork to about 1/2 inch thickness (or to desired thickness, gathering up the ends to re-cut).
- Remove the top piece of waxed paper.
- Using a 3-inch biscuit cutter cut into rounds.
- Place the rounds onto a baking sheet and freeze until ready to use.

This recipe was copied from a little sausage booklet and has been well enjoyed over the years. Make these for those special holiday weekend breakfasts. The aroma alone has everyone up waiting for breakfast to be served. You can double or triple the recipe as these freeze well.

- Place all ingredients in a large bowl,mixing well to assure spices are evenly distributed.
- Form into patties, refrigerate several hours to allow spices to blend.
- Fry over medium heat until well browned and cooked through, with no pink showing.
- NOTE this mixture may be stuffed into small casings, making 3-4 inch links, your guests will be so impressed!
OLD-FASHIONED
The old-fashioned is one of the oldest mixed drinks in the cocktail canon. (Original name: whiskey cocktail, which became old-fashioned whiskey cocktail, and then just old-fashioned.) It is a stirred drink, usually built in the glass in which it is served. Both rye and bourbon are suitable base spirits. For the sweetener, purists muddle up a sugar cube with water and a couple dashes of bitters, but simple syrup works as well. Twists can be orange, lemon or both (known as "rabbit ears"). A fruited version of the drink came into vogue after Prohibition and involves the muddling of a cherry and orange slice along with the sugar. That version remains widespread, but we advocate the more elemental rendition that took hold in the late 1800s, one that allows the flavors of the whiskey to shine.

Steps:
- Muddle the sugar cube and bitters with one bar spoon of water at the bottom of a chilled rocks glass. (If using simple syrup, combine bitters and one bar spoon of syrup.) Add rye or bourbon. Stir.
- Add one large ice cube, or three or four smaller cubes. Stir until chilled and properly diluted, about 30 seconds. Slip orange twist on the side of the cube.
EASY BREAKFAST SAUSAGE PATTIES
This reminds me of the sausage my Dad made with venison. I didn't like eating "Bambi", but I loved his sausage. While I am not normally a breakfast eater, I have seen some rather luscious pancake and French toast recipes posted. Add some maple syrup and I'll join you for brunch! The recipe is from Bon Appetit 1989. Prep time includes refrigeration.

Steps:
- Soak bread in milk in a large bowl for 5 minutes, tear bread into small pieces, gently squeeze out excess milk and return to bowl after discarding milk.
- Heat 1 tbls oil in a heavy skillet, add onion and sautee until soft.
- Add onion and remaining ingredients to the bowl and stir until mixture pulls away from the sides of the bowl.
- With wet hands, form into 24 balls, then flatten each ball until 1/2 inch thick.
- Cover and refrigerate 1 hour or make the day before.
- Cook sausage patties in the remaining 3 tbls of oil over medium about 5 minutes per side and drain on paper towels.
