OLD BAY TOFU CAKES
From the Concious Cook cookbook by Chef Tal Ronnen. Chef Tal serves these with pan roasted summer vegetables, horseradish cream, apples, and beets. UUMMMM!! Prep. time includes cooling time.

Steps:
- Place a small saute' pan over medium heat. Sprinkle the bottom with a pinch of salt and heat for 1 minute.
- Add the oil and heat for 30 seconds, (do not let the oil smoke).
- Add the onion and carrots and saute' 3 to 5 minutes.
- Add the garlic, saute 1 minute.
- Set aside to cool.
- Hold the nori sheet with tongs, toast it by fanning it over a low flame, be sure to toast of the sheet.
- Break the nori sheet and place it into a grinder, pulse until powdered.
- Crumble it as finely as possible, either with your hands or a motar.
- Place the onion mixture, nori powder, 1 tablespoon sea salt and the remaining tofu cake ingredients into a food processor,.
- Pulse until combined but still chunky.
- Transfer to a bowl, cover and refrigerate 30 minutes.
- To cook the cakes:.
- In a shallow dish stir together the bread crumbs, Old Bay and 1 teaspoon each salt and pepper. Pour the soy milk in a seperate bowl. Using your hands make 12 small cakes from the tofu mixture. Dip both sides in soy milk, then into bread crumbs, coating well. Place the cakes on a baking sheet lined with parchment paper. Refrigerate 30 minutes or until firm.
- Place a small saute' pan over medium high heat. Sprinkle bottom with a pinch of salt and heat 1 minute. Add the oil and heat 2 minutes.
- Saute' the tofu cakes until browned on both sides, 2 to 3 minutes on each side.

- Preheat oven to 350 degrees. Make Tartar Sauce: Mix all ingredients until evenly combined. Cover and chill in refrigerator until ready to serve. Make Shrimp Cakes: Place all ingredients except canola oil in a bowl and use your hands to thoroughly combine. Heat canola oil in a large cast-iron skillet over medium heat. Form shrimp mixture into 6 hockey-puck-size round patties. Add patties to pan and pan-fry until browned all over, about 3 minutes per side. Transfer skillet to oven and bake until cooked through, about 3 minutes more. Serve shrimp cakes with tartar sauce for dipping.

Originally a Scottish recipe. Very little sugar and no white flour. Easy to make and a wonderful addition to breakfast.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Line a heavy baking sheet with parchment paper.
- Mix oats, whole wheat flour, sugar, salt, and baking soda together in a bowl. Rub in butter with your fingers until mixture is chunky. Pour in enough water to form a thick dough.
- Spread a thin layer of oats and whole wheat flour on a flat work surface. Turn out dough and pat to an even thickness. Cut into circles using the rim of a drinking glass. Transfer to the prepared baking sheet.
- Bake in the preheated oven until golden brown, 20 to 30 minutes.

SHRIMP CAKES WITH OLD BAY®
Steps:
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler to low.
- Place shrimp in the bowl of a food processor; pulse until shredded.
- Transfer shrimp to a large bowl and add bread crumbs, bell peppers, seafood seasoning, parsley flakes, salt, pepper, onion salt, Italian seasoning, and dry mustard; mix until well combined.
- Mix egg, mayonnaise, and hot sauce together in a small bowl. Add to shrimp mixture and mix until fully incorporated. Form into 5 patties and place on a baking sheet.
- Place under the preheated broiler for 5 minutes. Turn broiler to high and cook until tops are well browned, about 5 minutes longer. Flip shrimp cakes and broil on high until the other sides are browned, about 5 more minutes.
