OLD FASHIONED ENGLISH BREAKFAST SAUSAGE (OR SAUSAGE PATTIES)
This recipe was copied from a little sausage booklet and has been well enjoyed over the years. Make these for those special holiday weekend breakfasts. The aroma alone has everyone up waiting for breakfast to be served. You can double or triple the recipe as these freeze well.

Steps:
- Place all ingredients in a large bowl,mixing well to assure spices are evenly distributed.
- Form into patties, refrigerate several hours to allow spices to blend.
- Fry over medium heat until well browned and cooked through, with no pink showing.
- NOTE this mixture may be stuffed into small casings, making 3-4 inch links, your guests will be so impressed!
GRANNY'S OLD FASHIONED PORK SAUSAGE
Want to try your hand at making homemade sausage? This simple recipe yields great, consistent results. Kitchen Aid has a meat grinder attachment for its stand mixers which makes this a breeze.

Steps:
- Trim any excess fat from the pork and cut into chunks. Place the meat through a meat grinder. Combine the ground meet and remaining ingredients in a bowl and mix well. Shape the sausage into patties. The sausage can be cooked immediately but for best flavor wrap the sausage patties in plastic wrap and freeze for 1-2 weeks. Thaw before cooking.

- Mix all ingredients except the olive oil into a large bowl and massage with your hands until well combined. Divide the meat mixture into eight equally sized patties.
- Put the olive oil in a large cast-iron pan or skillet over medium-high heat.
- Pan-fry the patties for 2 to 3 minutes on each side or until golden brown, making sure there is enough space between each patty.

This old time recipe can be made as is or to your liking and tastes. I have also, doubled the recipe and used 1/2 pork and 1/2 turkey and added extra spices. This is easy and worth the effort. Very Tasty!

- 1. In a large bowl or roast pan, put all ingredients in and mix together well with your hands.
- 2. Form into two logs about 3 inches in diameter. Wrap the logs in plastic wrap. Refrigerate 8 - 12 hours. Remove the logs one at a time from the refrigerator. Slice Patties about a half inch thick. Place on baking sheet and freeze. When they are totally frozen, put them in zipper bags with wax paper between the layers.
- 3. When ready to use, thaw the desired amount out. Cook over medium heat in a skillet for 5 minutes then turn over and cook 4 more minutes. Drain on paper towels and serve hot.

- Toss all the ingredients in a stainless steel bowl until well combined. Cover and refrigerate for 2 hours.
- If using a meat grinder: Put your meat grinder parts or attachment in the freezer to chill at the same time you put the ingredients in the refrigerator. Set up your meat grinder with the smallest die according to the manufacturer’s directions. Working in batches, feed the meat mixture into the grinding tube and grind the sausage mixture into a separate bowl. - Measure about 2 ounces (57 grams or about 1/4 cup) sausage and gently press it between your palms into a 2-inch (5 cm) patty that’s about 1/2 inch (12 mm) thick. Repeat until all the sausage has been used. [Editor’s Note: We prefer sausage patties for their ease of making and cooking. If you prefer sausage links and have the know-how, by all means, go ahead and put the sausage mixture in casings.] Place the sausage patties in a resealable plastic bag, separated by squares of wax or parchment paper, and stash in the fridge for up to 4 days or in the freezer for up to 6 months. (If freezing the sausage, be sure to safely thaw the meat prior to cooking.)
- To cook the sausage patties, warm a cast-iron skillet or a sauté pan over medium heat for 1 minute. Add a few patties, being careful not to crowd the pan, and cook, turning every couple of minutes, until browned on both sides and cooked through in the center, about 10 minutes. The pork should register at least 145°F on an instant-read thermometer. Serve immediately.
