Grandma's Depression Cake image

This is an eggless, milkless, butterless cake. " A delicious spiced cake that's easy on the budget". I found this recipe in the "Guideposts" magazine (August 2009 issue). The recipe was part of a wonderful article with the same title written by Rosemary Marbach.

Number Of Ingredients 12

1 cup brown sugar, firmly packed
1 1/2 cups water
1/3 cup vegetable oil
2 cups dark raisins
2 teaspoons cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons water
2 cups flour
1 teaspoon baking powder

Steps:

  • Pre-heat oven to 325 degrees.
  • Combine sugar, water, vegetable oil, raisins, and spices in a saucepan, and bring to a boil. Boil for 3 minutes, stirring frequently. Take pan off heat and let cool for 10 minutes.
  • Dissolve baking soda and salt in 2 teaspoons of water and add to raisin mixture (it will foam).
  • Blend in the flour and baking powder. Mix well.
  • Pour the batter into a greased 9 inch square pan and bake for 55 minutes, or until a toothpick unserted in the center comes out clean.
  • Let cake cool for about 10 minutes before serving.

This was a recipe from Hilma Murphy, my best friend's mother. She passed away when I was 12. She always made this cake for us, and after her death, we looked through her recipes and I copied this one down. Easy to make, definitely a comfort cake that is wonderful when still warm!

1 cup raisins
2 cups water
1/2 cup margarine
1 3/4 cups flour
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 teaspoon baking soda
1 cup sugar

Steps:

  • In large saucepan boil 1 cup raisins with 2 cups water for 10 minutes.
  • Take from fire, add 1 stick margarine and let cool to room temperature.
  • In same saucepan with liquid, raisins and butter, stir in remaining ingredients until smooth.
  • Bake in 10x7 pan at 350 degrees for 30-35 minutes, or until center tests done.

1 cup brown sugar
1 ¼ cups water
1 cup raisins
⅓ cup shortening
½ teaspoon salt
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
2 cups all-purpose flour
5 teaspoons baking powder

Steps:

  • In a saucepan, combine brown sugar, water, raisins, shortening, nutmeg and cinnamon. Bring to a boil, and continue boiling for 3 minutes. Remove from heat and allow to cool.
  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square pan. Sift together flour and baking powder.
  • In a large bowl, combine the raisin mixture with the flour mixture. Pour into prepared pan.
  • Bake for 45 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean.

2 cups self-rising flour
1 cup sugar
1/2 cup cocoa
1 cup water
1 cup mayonnaise
2 teaspoons vanilla
1 teaspoon confectioners' sugar

Steps:

  • Heat oven to 350.
  • Grease and flour 10 inch tube pan.
  • In med.
  • mixing bowl; combine flour, sugar, cocoa and mix well.
  • In small bowl with wire whisk gradually beat water with mayonnaise until evenly combined; stir in vanilla.
  • Then pour this mixture into dry ingredients and mix well.
  • Spoon into prepared pans.
  • Bake 45- 50 minutes or until center springs back.
  • Cool cake for 10 minutes.
  • Then remove from pan and cool completely on baking rack.
  • When cool place on cake plate and dust with powdered sugar.

I found this recipe in the newspaper twenty years ago. I was impressed by the author's stories about life in the homefront during WWII so I decided to try this recipe. It was very good even without the allspice.

3 teaspoons cornstarch
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1 teaspoon allspice
1/2 teaspoon clove
1/2 teaspoon salt
1 cup brown sugar
1/3 cup oil
1 teaspoon lemon juice
1 teaspoon vanilla
1 cup water (approximately)

Steps:

  • Stir together flour, cornstarch, baking soda, spices and salt.
  • Cream sugar, oil, lemon juice and vanilla.
  • Add flour mixture to sugar mixture, a little at a time, alternating with up to 1 cup of water.
  • Mix briskly with fork until thoroughly blended.
  • Pour into lightly greased and floured 8 or 9 inch square pan and bake at 350 degrees for 30 minutes or until cake tests done.
  • Let cool in pan.
