WINE JELLY
This jelly is a lovely accompaniment to crackers and cream cheese. You can use any kind of wine, red or white.

Steps:
- Combine wine, lemon juice, and pectin in a large saucepot. Bring to a boil, stirring frequently. Add sugar, stirring until dissolved. Return to a rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam off top, if necessary.
- Ladle hot jelly into hot, sterilized jars, leaving 1/2 inch headspace. Tighten 2 piece lids. Process for 5 minutes in boiling water bath.

WHITE ZINFANDEL JELLY
We make Christmas baskets every year and fill them with homemade "goodies". I am always looking for something fun and unusual to put in them. This jelly was well received and everyone liked it. You can substitute the white zinfandel with champagne, rose wine or sangria if you like. The original recipe came from the Sure-jell website. (Cooking time includes, prep, cooking and processing).

Steps:
- Bring boiling water canner, half-full with water, to simmer.
- Wash jars and screw bands in hot soapy water, rinse with warm water.
- Pour boiling water over the flat lids in saucepan off the heat.
- Let sand in hot water until ready to use.
- Measure the wine into a 6 or 8 quart saucepan.
- Stir pectin into wine in the saucepan.
- Add butter (if desired) to reduce foaming.
- Bring mixture to a full rolling boil (a boil that does not stop bubbling when stirred) on high leat, stirring constantly.
- Stir in all sugar quickly.
- Bring to full rolling boil and allow to boil exactly 1 minute, stirring constantly.
- Remove from heat.
- Skim off any foam with metal spoon.
- Ladle quickly into prepared jars, filling to within 1/8" of rim.
- Wipe jar rims and threads.
- Screw bands tightly.
- Place jars on elevated rack in canner.
- Water must cover jars by 1 to 2 inches, add boiling water if needed.
- Cover, bring to a gentle boil and process for 5 minutes.
- Remove jars and place upright on a towel to cool completely.
- After jars cool, check seals by pressing middle of lid with finger, if it springs back, it did not seal completely and refrigeration would be necessary.
HOMEMADE GRAPE JELLY RECIPE
Homemade grape jelly made from grapes or natural grape juice.

Steps:
- Wash the grapes. If making jelly from grape juice, skip to step 6
- In a large bowl, add enough grapes to fill the bottom of the bowl. Using a potato masher, crush the grapes.
- Add the crushed grapes to a large non-reactive stockpot. Repeat until all the grapes are in the pot.
- Add enough water to the pot just until the grapes are barely covered. Bring the grapes to a boil over medium-high heat, stirring frequently. Reduce heat and simmer for 10 minutes.
- Pour the mixture into a jelly strainer or in a colander lined with cheesecloth over a large bowl. For best results let the mixture strain overnight.
- In a small bowl, add the pectin and ½ cup of sugar and mix together. Set aside.
- Place a metal spoon in a glass of ice water and set aside.
- Pour the strained grape juice into a large stockpot and add the pectin/sugar mixture. Over medium-high heat cook the juice until it begins to boil.
- Stir in the remaining sugar and bring it back to a rolling boil. Let it continue to boil for 1 minute and test the thickness using the cold spoon. Fill the teaspoon half full and set it on a plate. Once It cools to room temperature, turn the spoon sideways. If the gel has thickened to the desired consistency you can begin to fill the sterilized mason jars, leaving ¼ inch head space. If not, continue the boiling process and retest until it thickens.
- You can freeze the jelly in freezer-safe mason jars or process in a hot water bath for 5 minutes (adjusting for altitude as needed) for both half-pint and pint jars.

- Sift flour then measure. Combine baking powder, salt, and eggs in bowl. Beat with egg beater adding sugar gradually until mixture becomes thick and light colored. Gradually fold in flour, then vanilla. Turn into 10x15-inch pan, which has been lined with paper then greased. Bake in hot (400°) oven 13 minutes or until done. Turn cake out on cloth or towel, dusting with powdered sugar. Quickly remove paper and cut off crisp edges of cake. Roll and wrap in cloth. Let cool about 10 minutes, unroll, spread cake with jelly, and roll again. Wrap in cloth; place on cake rack to finish cooling.
