3 Tablespoons Unsalted Butter ((sliced & softened) - 43 grams)
2 1/4 Cups Bread Flour (- 270 grams)
3/4 Cup Old Fashioned Oatmeal ((oat flakes) - 68 grams)
1/4 Cup Light Brown Sugar
1 Teaspoon Salt (- 5 milliliters)
1 Teaspoon Bread Machine Yeast (- 5 milliliters)
1 1/2 Cups Milk ((lukewarm) - 345 milliliters)
4 Tablespoons Unsalted Butter ((sliced & softened) - 57 grams)
3 Cups Bread Flour (- 360 grams)
1 Cup Old Fashioned Oatmeal ((oat flakes) - 90 grams)
1/3 Cup Light Brown Sugar
1 1/2 Teaspoons Salt (- 7.5 milliliters)
1 1/2 Teaspoons Bread Machine Yeast (- 7.5 milliliters)

Steps:

  • Bread machine settings - 1.5 or 2 pound loaf, light color and "basic" bread setting
  • Unplug the bread machine & then remove the bread pan.
  • Add all ingredients starting with the milk into the bread machine "bucket" (loaf pan). Make sure the yeast is last and does not touch the milk or salt. Some people like to make a small "divot" on top of the flour in order to hold the yeast in one spot before the machine starts.
  • Place the bread pan (with ingredients) back into the bread machine.
  • Plug in bread machine. Enter the correct settings (for either 1.5 lb or 2 lb loaf version) and press the "start" button.
  • Optional - After the bread machine has finished kneading and before the baking cycle commences, sprinkle some old fashioned oatmeal flakes on top of the bread dough.
  • When the bread machine has finished baking the bread, unplug the bread machine. Remove the bread and place it on a cooling rack. Use oven mitts when removing the bread machine container (bread loaf pan) as it will be very hot!
  • In our Sunbeam bread machine, the baking takes about 3 hours for a 2 pound bread loaf (and 2:53 hours for a 1.5 lb bread loaf) at the light color & basic bread settings. However, some machines can differ and you don't want to be away from home when the bread machine "finished" alarm goes off! Your bread machine should show you the length of the baking time after you have entered the settings into the machine. This will allow you to know when to be in the kitchen in order to remove the bread.
  • Before using your bread machine, you should read the bread machine manufacturer's instructions in order to use the bread machine effectively and safely.

Simple Homemade White Bread image

A delicious old-fashioned white bread recipe just like Grandma used to make!

Number Of Ingredients 5

1 package dry yeast (about 2 1/4 teaspoons)
1 cup warm water (about 30-40 seconds in the microwave is perfect)
3 cups bread flour (if you can't find this go ahead and use all-purpose)
1 teaspoon salt
1 tsp honey

Steps:

  • In a large bowl, mix the honey and warm water together, add the yeast and stir until dissolved.
  • Add 2 1/2 cups of the flour and the salt to the yeast mixture.
  • Stir until you get a ball of dough. The dough will be soft.
  • ---all of these parts are super handy to do if you have a mixer!
  • Put the dough on a floured surface. Knead until smooth and stretchy (about 9 minutes) adding in the remaining flour as needed to keep the dough from becoming too sticky.
  • ---if you have a mixer with a dough hook...use it here!
  • Place the dough in a bowl sprayed with cooking spray or coated with oil.
  • Put the bowl in a warm place and cover with a towel (or use my warm water in bowl method above :)) or plastic wrap sprayed with cooking spray.
  • Let the dough rise until doubled in size. (about 45 minutes)
  • Punch your down and then cover and wait 5 minutes.
  • Gently shape the dough into a loaf.
  • Place in loaf pan coated with spray, butter, shortening.
  • Cover (again with a towel or sprayed plastic wrap) and let rise until doubled again (about 45 minutes)
  • Preheat oven to 450 degrees F (230 degrees C)
  • Bake at 450 degrees for about 20 minutes.
  • if you like...apply a egg or milk wash before baking.

This is a rich, old-fashioned white bread I've improved on from my grandmother. It is a must to make several batches because this bread just disappears around people.

2 cups milk
⅓ cup white sugar
⅓ cup honey
2 teaspoons active dry yeast
6 cups bread flour, or as needed - divided
1 teaspoon salt
¼ cup butter, softened

Steps:

  • Pour milk in a heatproof bowl, and gently warm in a microwave oven set on Low until milk is about 100 degrees F (38 degrees C), about 15 seconds. Mix in the sugar and honey, and stir to dissolve. Mix in the yeast, and let stand until the yeast activates and forms a creamy layer on the milk, about 15 minutes.
  • Place 4 cups of bread flour and the salt into the mixing bowl of a stand mixer; pour in the yeast mixture, and mix on slow speed with a mixing paddle until thoroughly combined, about 1 minute; dough will be very wet. Add the butter, and mix in the remaining 2 cups of bread flour, or as needed, until the dough begins to gather itself into a ball. Change the fitting from the mixing paddle to a dough hook, and machine-knead the dough until smooth and springy, about 4 minutes.
  • Transfer the dough onto a well-floured work surface, and knead until you see the surface of the dough begin to break during folding and kneading. Roll dough into a ball, and place into a lightly floured large bowl. Cover the bowl with a kitchen towel, and set into a warm place to rise until doubled, about 1 hour.
  • Spray 2 9x5-inch loaf pans with cooking spray.
  • Punch down the dough, remove to the floured surface, and knead for 2 more minutes; cut the dough in half with a sharp knife. Form the dough into logs, adding more flour if necessary, and place the loaves into the sprayed pans. Cover the pans with a kitchen towel, and place into a warm place to rise until doubled, about 1 more hour.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Place the bread loaves into the preheated oven, and turn the heat down to 350 degrees F (175 degrees C). Bake until the tops are golden brown and the loaves make a hollow sound when thumped, about 25 minutes. Cool the pans on baking racks for about 5 minutes before turning the bread loaves out to finish cooling on racks. Cover the loaves with a kitchen towel as they cool.

1 1/8 cup Milk (24-30°C/75-86°F - 1/8 cup = 2 tbsp)
1/4 cup Butter (room temperature)
3 cups Bread flour
1 1/2 tbsp Sugar
1 1/2 tsp Salt
2 tsp Active dry yeast

Steps:

  • Attach the kneading blade to the Bread Maker pan.
  • Place ingredients into the bread pan following the recipe order (or following the order and method specified in your Bread Maker manual - mine is: FIRST, liquid ingredients; SECOND, dry ingredients; LAST, yeast). Note: With a finger or a knife, make a small indentation in the middle of the flour. Add yeast to indentation, making sure it does not come into contact with the liquid ingredients.
  • Carefully insert the bread pan into Bread Maker and gently close the lid.
  • Select "Basic" bread setting. If available, choose crust colour (I usually set Medium, but if you prefer, set Light or Dark) and loaf size (1.5LB) and Press the Start button.
  • It will mix and bake the bread. When the baking cycle is complete, press the stop button and unplug the breadmaker.
  • Open the lid and while using Oven Mitt, firmly grasp the bread pan handle and gently pull the pan straight up and out of the machine. CAUTION: The Bread Maker and pan may be very hot! Always handle with care.
  • Use non-stick Spatula to gently loosen the sides of the bread from the pan.
  • Turn the bread pan upside down onto a Wire Cooling Rack or clean cooking surface and gently shake until bread falls out onto the rack.
  • Cool for about 10-15 minutes before slicing.
  • To make perfect slices every time use a Bread Slicer with an Electric Knife.
