This Strawberry Cake has fresh strawberries in the cake as well as the frosting. If you are a fan of strawberries, this is a must try!

- Preheat oven to 350 degrees.Grease and flour two 9" round cake pans. Combine cake mix, flour, oil, water, eggs and Jell-o in your mixer. I mixed for 2 minutes. Gently fold in frozen strawberries. Pour into prepared cake pans and bake for approximately 25 minutes. Use the "toothpick test" to make sure cake is done in the middle. Turn out on a cooling rack to cool completely. Pre-Pare the Frosting: Combine frosting ingredients until frosting is desired consistency. Add more sugar to thicken, more strawberries to thin. Frost in between layers, and the outside as you would any cake. Garnish with fresh strawberries if desired. Don't do this step too far in advance, as they will become syrupy.

I remember my Aunt Murna telling me she made this cake often when she was a young girl. Through the years, she made improvements to it, and her cake become a real family favorite. It has been a popular staple at our reunions.

- In a small bowl, combine raisins and pineapple; let stand for at least 30 minutes. , In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine dry ingredients; gradually add to creamed mixture alternately with jam and buttermilk, beating well after each addition. Stir in raisin mixture and nuts. , Spread into two greased and floured 9-in. round baking pans. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For icing, in a large saucepan, melt butter over medium heat. Stir in sugar and milk. Bring to a boil. Remove from the heat; cool until just warm. Pour into a large bowl; beat in enough confectioners' sugar to achieve a spreading consistency. Spread frosting between layers and over the top and sides of cake.

- Place 2 saucers in the freezer Prepare jars for sterilization by washing in warm soapy water and rinsing well. Wash, hull and halve the strawberries. In a large non-reactive pan add all ingredients. Warm gently without boiling and stir carefully with a wooden spoon to combine - Avoid breaking up fruit. Increase the heat and without boiling, continue to stir until the sugar is fully dissolved. Boil without stirring for 20 minutes. Sterilize jars in oven (120C for 30 minutes) Start to test for setting point - take mixture off heat and spoon a small amount of mixture onto chilled saucer, return to freezer for 30 seconds then draw your finger through the mixture. When the mixture has reached setting point it should leave a trail clean trail on the plate and not flood back over. If setting point not reached cook for another 5 min and repeat. It could take up to 40 minutes to reach setting point. When you are happy setting point has been reached, remove from heat and rest for 5 minutes. Remove any scum or froth that forms on the surface. Pour in to hot sterilized jars, seal and label.

OLD-FASHIONED STRAWBERRY LAYER CAKE

- Preheat the oven and position the oven rack: Preheat the oven to 350°F and position a rack to the center of the oven.
- Combine the wet ingredients: In a large glass measuring cup or medium bowl mix 3/4 cup of the strawberry preserves, plus the buttermilk, vanilla, and food coloring (if using), until smooth.
- Sift and combine the dry ingredients: Into a large bowl sift the flour, baking powder, and salt together. Set aside.
- Cool cakes: Cool the cake in the pans on a rack, for 10 minutes. Then, invert the pans, peel off the paper liners, and cool completely.

OLD FASHIONED STRAWBERRY PRESERVES/JAM
A simple easy preserve recipe that may be successfuly frozen, I freeze large quantities in plastic containers when berry season come around, it makes a lovely spread for toast, scones or waffles --- this also works well using fresh blueberries or raspberries :) --- 2 cups of sugar will give you a very sweet taste if you prefer a preserve that is not too sweet then use 1-1/2 cups sugar or even a little less.

- In a bowl coarsley mash the strawberries using a potato masher or fork, then place into saucepan.
- Cook the strawberries over medium heat stirring until beginning to thicken (about 6 minutes).
- Reduce the heat to low, add in sugar and lemon juice.
- Increase the heat to medium and simmer gently until the mixture thickenes and mounds on the spoon (about 20 minutes) stirring frequently.
- Remove saucepan from heat cool just slightly, then place in refrigerator for rapid jelling.
- The preserves will thicken more while chilling and will keep for 1 week in refrigerator if tightly sealed (or after cooled completely the preserves may be frozen in plastic containers if desired).

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour three 9-inch cake pans.
- Mix sugar, pecans, strawberry jam, butter, eggs, cinnamon, and nutmeg together in a bowl. Mix baking soda into buttermilk; add to the batter. Add flour a little at a time, mixing well, until combined.
- Pour batter evenly into the prepared cake pans.

- Spread between and over the top of the cooled cake layers, letting excess drip down the sides.

- Preheat oven to 325°F. Mix flour, salt, cinnamon, allspice and baking soda; set aside. Beat 2/3 cup butter and the granulated sugar in large bowl with electric mixer on medium speed until light and fluffy. Blend in jam, eggs and vanilla. Add flour mixture alternately with the buttermilk, mixing well after each addition. Gently stir in coconut. Pour into greased 10-inch tube pan or 12-cup fluted tube pan.

- In a mixing bowl, crush strawberries in batches until you have 4 cups of mashed berries.
- In a heavy-bottomed saucepan, mix together the strawberries, sugar, and lemon juice. Stir over low heat until the sugar is dissolved.
- Increase heat to high, and bring the mixture to a full rolling boil. Boil, stirring often, until the mixture reaches 220 degrees F (105 degrees C).
