Virginia Brunswick Stew image

A pride and joy of Virginia culture, Brunswick Stew is a Southern classic that has been enjoyed for hundreds of years!

Number Of Ingredients 14

4 slices (about 5 ⅓ oz) thick-cut bacon, chopped
2 onions, diced
4 cups chicken broth
2 medium russet potatoes (about 1 lb.), peeled and cut into ½-inch dice
2 tablespoons tomato paste
1 rotisserie chicken (about 3 lbs.), meat removed and chopped (about 4 cups)
1 (28 ounce) can diced tomatoes, NOT drained
4 cups fresh or frozen corn kernels
2 cups fresh or frozen lima beans
2 cups fresh or frozen sliced okra (optional)
1-2 tablespoons brown sugar
1 tablespoon distilled white vinegar
1 teaspoon Worcestershire sauce
Salt and pepper, to taste

Steps:

  • In a large pot, cook the bacon over medium-high heat until almost crisp, about 5 minutes. Add onion and cook until softened, about 5 more minutes. Add chicken broth and potatoes; bring to a boil. Boil until potatoes begin to soften, about 10 minutes.
  • Reduce heat to low. Stir in the tomato paste. Add chicken, diced tomatoes, corn, lima beans, okra (if using), brown sugar, vinegar, Worcestershire sauce, salt and pepper. Stir well.
  • Cover and simmer for about 1 hour, stirring occasionally. The stew should be very thick. To thicken the stew, simmer uncovered. To thin, add more broth or water. Taste and season with additional salt and pepper, if necessary. Ladle into bowls and serve!

This is 1 of the many recipes that I have developed over my lifetime of outdoor life.

Number Of Ingredients 15

5 - 6 squirrels or 3 rabbits
4 c water to cover meat
1 large onion, sliced
1 c celery with leaves, chopped
1 medium carrot, scraped and sliced
2 tsp salt
1/4 tsp black pepper
1/2 c cold water (for gravy)
DUMPLINGS:
2 c sifted flour
3 tsp baking powder
1 tsp salt
2 Tbsp shortening
1/4 c parsley, optional
1 c water, approximately

Steps:

  • 1. Directions for Squirrels: Combine meat, water, vegetables, salt and black pepper in a large kettle with tight cover.
  • 2. Cover, heat to a boil and simmer until meat is tender (about 1 to 1 & 1/2 hours).
  • 3. Remove meat from broth and pick out bones.
  • 4. Strain broth and mash vegetables through strainer into broth.
  • 5. Add water to make 5 cups.
  • 6. Return to heat and boil.
  • 7. Stir 1/2 cup cold water into 6 Tablespoons flour to make gravy, stirring constantly until gravy thickens and boils (about 1 minute).
  • 8. Season to taste.
  • 9. Directions for Dumplings: Mix flour, baking powder and salt in a bowl.
  • 10. Cut in shortening until crumbly, stir in parsley and enough water to moisten flour. Dough should be soft.
  • 11. Drop dumpling batter into steaming kettle in 12 or more mounds.
  • 12. Cover and cook for 20 minutes. Enjoy!
  • 13. OPTIONAL: Serve on platter with gravy seperate.

1 squirrel, cut up
flour
salt and pepper
2 1/2 tablespoons butter
7 cups boiling water
1 teaspoon thyme
1 cup corn
3 potatoes, cubed
1/4 teaspoon cayenne
3 medium onions, sliced
2 cups canned tomatoes with juice

Steps:

  • Roll the squirrel pieces in flour, salt, and pepper.
  • Brown in butter.
  • Add squirrel and all other ingredients, (with the exception of the tomatoes), to the boiling water, cover, and simmer for 1-1/2 to 2 hours.
  • Add the tomatoes and continue to simmer another hour.

1 can tomatoes - (15 oz) drained
2 cups diced potatoes
2 cups fresh or frozen lima beans
2 cups fresh or frozen corn

Steps:

  • Place the squirrels in a stew pot, add water and bring to a boil. Reduce heat and simmer until the meat pulls easily from the bone, about 1 1/2 to 2 hours. Skim the surface of the water occasionally. Separate meat from bones, and return the meat to the broth. Add the remaining ingredients, except corn, and cook for one hour. Add corn, and cook 10 minutes more. This recipe yields ?? servings.
