CLASSIC SOUTHERN PECAN PIE
Easy recipe for classic Southern pecan pie

Steps:
- Preheat oven to 350°F
- In a mixing bowl combine granulated sugar, brown sugar, salt, corn syrup, vanilla extract, melted butter, eggs and flour together with a whisk or spatula.
- Add the pecans to the bottom of a store bought pie shell.
- Line a sheet pan with foil and place the pie plate on the sheet pan. This will help with spills and it's easier to handle transferring the pie in and out of the oven.
- Pour the filling mixture over the pecans.
- Place the pie into the oven and then cover with a piece of aluminum foil.
- Bake for 30 minutes covered. Remove the foil and bake an additional 20 minutes or until set.
- Remove from the oven and cool completely before serving. A pecan pie can be made ahead of time and refrigerated. Allow to come to room temperature before serving.

Steps:
- Roll out half the dough (one disk) on a lightly floured sheet of parchment paper to 1/4-inch thickness (about a 12-inch circle). Fit into a 9-inch pie plate, crimping edges as desired. Refrigerate for 30 minutes to 1 hour.
- Preheat oven to 425°F.
- Combine maple syrup and next 3 ingredients in a 3 1/2-quart sauce-pan. Cook over medium heat, stirring often, until sugar dissolves, about 3 minutes. Remove from heat; let cool 5 minutes. Whisk in butter and salt. Whisk in egg yolks.
- Spread pecans evenly in prepared crust. Carefully pour syrup mixture over pecans.
- Place in preheated oven and reduce heat to 325°F. Bake for 45 to 50 minutes or just until filling is set and center jiggles slightly when gently shaken.
- Cool completely on a wire rack.

- Preheat oven to 400 degrees F (205 degrees C).
- Beat eggs slightly in medium bowl. Beat in sugar, and then blend in syrup, butter or margarine, vanilla, salt, and pecans. Pour filling into unbaked pie shell.
- Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and continue baking 35 to 40 minutes; the pie will be brown and slightly puffed.

- In a sauce pan, melt the butter, but don't let it brown.
- Mix in the sugar and corn syrup and cook, stirring over medium heat, until the sugar dissolves.
- Stir in eggs; mix well. Stir in pecans.
- Pour in pie shell and bake in 350°F oven for 1 hour, or until firm when shaken.

- Preheat oven to 350 degrees.
- Prepare pie crust. Roll it out and line a pie dish with it.
- In a large bowl, whisk together the eggs, sugar, corn syrup, vanilla, salt, cinnamon and butter.
- Pour chopped pecans into the unbaked pie crust. Pour the egg mixture over the chopped pecans, which will rise to the surface. Gently lay the whole pecans around the top of the pie in a decorative pattern (or chop them all up and do the whole pie with chopped pecans if you don't want to bother with making it look fancy.
- Bake the pie for 60-70 minutes until set. It's okay if it is slightly wobbly in the center still. Cool completely for at least 3 hours before slicing so the pie has time to set up.

- Make the pastry: Place flour and salt in a shallow mixing bowl and cut in shortening with a pastry blender until mixture resembles coarse meal. Sprinkle water over surface, 1 tablespoon at a time, and mix in lightly and quickly with a fork, just until pastry holds together.
- Shape gently into a ball on a lightly floured pastry cloth, then flatten into a circle about 1 inch thick, evening up rough edges. Using a lightly floured, stockinette-covered rolling pin and short, firm strokes, roll into a circle about 3 inches larger than the pan you plan to use.
- To transfer pastry to pan, lay rolling pin across center of pastry circle, fold half of pastry over pin and ease into pan; press lightly. Seal any cracks or holes by pressing dampened scraps of pastry on top. Trim pastry so it hangs evenly 1 inch over rim, roll overhang under even with rim and crimp or flute.
- Make pastry as directed and fit into a 9-inch piepan; do not bake. Arrange pecans in concentric rings over bottom of pastry.
