- In a large bowl, combine sausage, biscuit baking mix and cheese. Form into walnut size balls and place on baking sheets.

- Trim any excess fat from the pork and cut into chunks. Place the meat through a meat grinder. Combine the ground meet and remaining ingredients in a bowl and mix well. Shape the sausage into patties. The sausage can be cooked immediately but for best flavor wrap the sausage patties in plastic wrap and freeze for 1-2 weeks. Thaw before cooking.

- Combine all ingredients in a stand mixer then mix at low speed using the paddle attachment (or mix by hand) until all ingredients are evenly combined.
- Roll dough into 1 1/2 inch balls and place on a baking sheet one inch apart. I used my handy-dandy cookie scoop to make quick work out of portioning these.
- Bake at 350 degrees for 20-25 minutes or until lightly browned on the bottom.

- Preheat oven to 425° F.
- Add all your ingredients to a food processor and puree until well blended. Add your scallions last and pulse 1-2 times to incorporate.*If you don't grate your cheese ahead of time, it will be difficult to blend.*If you don't have a strong food processor, you can mix by hand!
- Use a mini ice cream scooper to neatly and evenly scoop out ½ ounce. Use your hands to roll them into round balls. Place on a nonstick baking sheet or parchment paper.
- The bottom of your sausage balls will bake flatter so if this bothers you, place them in the freezer for about 10 minutes to firm them up a bit. Then remove and re-roll them in between the palms of your hands to round them out again.
- Bake for 6-8 minutes or until the internal temperature reaches 160°F. Do not overbake!
- Serve hot with scallions as a garnish and ketchup or maple syrup for dipping!

OLD FASHIONED HAM BALLS
Old Fashioned Ham Balls are straight from Grandma. These meatballs are a combination of ground pork, beef and ham with a surprise sweetness coming from graham cracker crumbs. The brown sugar glazed is just the icing on the top made with a base of tomato soup.

- Preheat oven to 350 degrees F.
- In a large bowl, combine ground beef, ground pork, ground ham, beaten eggs, graham cracker crumbs and milk until mixed.
- Roll into 1 1/2 inch balls. Arrange in a baking dish. (2) 13 x 9 inch baking dishes work perfectly.
- In a bowl, mix tomato soup, brown sugar, dry mustard and apple cider vinegar.
- Spoon or pour over the ham ball.
- Bake, uncovered, for 1 hour.
- Serve with the brown sugar glazed spooned over top.
