2 ounces rye whiskey
1 or 2 dashes Angostura bitters
1 or 2 dashes orange bitters
1 strip lemon peel

Steps:

  • Spoon sugar into a shaker and add about a teaspoon of very hot water for a simple syrup. Stir until dissolved, adding a little more water if needed.
  • Add whiskey and bitters, and stir again. Add several ice cubes and stir well to chill. Strain into an old-fashioned glass, add 2 or 3 big ice cubes, twist lemon peel over the top and drop it in.

New York Deli-Style Rye Bread image

American "deli rye" is descended from traditional breads in Middle and Eastern Europe, where rye and wheat grow together and "bread spice" (a combination of caraway, coriander, anise and fennel seeds) is common. This kind of rye bread spread across the United States in the 20th century along with Jewish delicatessens, where it served as the perfect foil for rich fillings like pastrami and chopped liver -- not to mention tuna melts. The sour tang and chewy texture of the original breads have largely been lost over time, because rye bread today is made mostly from wheat flour and just a scant amount of rye. This recipe restores some of the original charm, but is still quick and easy for home baking.

2 cups/310 grams bread flour
1 cup/155 grams light rye flour
2 teaspoons/6 grams caraway seeds (optional)
2 teaspoons/10 grams kosher salt
1 1/2 teaspoon/5 grams active dry yeast
2 teaspoons honey
2 teaspoons flavorless vegetable oil, such as grapeseed or canola
1 teaspoon cornstarch

Steps:

  • In the bowl of a standing mixer, whisk together the flours, caraway seeds (if using), salt and yeast. Put 1 1/4 cups lukewarm water into a small bowl, then stir in the honey and oil.
  • Using a dough hook attachment at low speed, gradually pour in the liquid mixture. Mix just until a cohesive dough starts to form and no streaks of dry flour remain, about 2 minutes. Scrape down sides of the bowl halfway through. Cover bowl tightly with plastic wrap and let dough rest for 20 minutes.
  • Turn mixer to medium-low and knead until smooth and elastic, easily clearing the sides of the bowl, about 8 minutes. The dough should be moist but not sticky; if needed, add more flour 1 tablespoon at a time.
  • Lightly oil a medium-size mixing bowl. Transfer the dough to a lightly floured surface and knead 30 seconds, shaping dough into a smooth round ball. Place seam side down in the oiled bowl. Cover with plastic wrap and let rise until doubled in size, 1 1/2 to 2 hours.
  • Stack 2 rimmed baking sheets and line the top sheet with aluminum foil. Punch the dough down to deflate. Turn out onto a lightly floured surface. Press and stretch into a rough 6-inch square.
  • Lift and fold top 2 corners of dough into the center of the square and press gently to seal. Lift and fold down the upper third of the dough toward the center and press gently to seal. Lift and fold down the top half of the dough to form a loaf, and pinch the seam closed. Turn the loaf seam side down, gently slide hands underneath, and transfer to the prepared pan. You should have an oval loaf about 8 inches by 4 inches; use hands to shape as needed. Cover with oiled plastic wrap and let rise until loaf increases in size by about half, 30 minutes to 1 hour.
  • Meanwhile, place a rack in the lower third of oven and heat to 450 degrees. When the dough has risen, make 3 deep slashes across the top, using a sharp paring knife or razor blade. Place in oven, reduce heat to 375 degrees and bake until deep golden brown, 35 to 40 minutes, rotating pan once during baking.
  • Meanwhile, dissolve cornstarch in 1 cup cold water. Simmer in saucepan or microwave until clear and syrupy. Transfer hot, baked bread immediately to a wire rack and brush top and sides with cornstarch mixture until glazed and shiny. Let cool completely before slicing.

2 cups unbleached bread flour (such as King Arthur®)
1 cup dark rye flour
3 tablespoons dry potato flakes
2 tablespoons caraway seeds
1 ½ tablespoons demerara sugar
2 ½ teaspoons instant yeast
1 ½ teaspoons sea salt
1 cup warm water
¼ cup canola oil
¼ cup sour pickle juice

Steps:

  • Place bread flour, rye flour, potato flakes, caraway seeds, demarara sugar, yeast, and sea salt in the bowl of a large stand mixer. Turn mixer to low and thoroughly mix dry ingredients. Beat warm water, canola oil, and pickle juice into dry ingredients. Fit dough hook onto mixer and beat until dough is rough and shaggy-looking.
  • Cover bowl with plastic wrap and let rest for exactly 30 minutes. Remove plastic wrap and knead dough in stand mixer with dough hook until smooth, firm, and only slightly sticky, 6 to 8 minutes. Turn dough onto a floured work surface and knead until smooth, 1 to 2 more minutes.
  • Form dough into a ball, place dough into an oiled bowl, and turn dough around several times in bowl to coat with oil. Cover the bowl with plastic wrap, set into a warm place, and let rise until nearly double, about 1 hour.
  • Grease a 5x9-inch loaf pan. Turn dough onto a lightly oiled surface, shape into a log, and place into prepared loaf pan. Cover with a cloth kitchen towel and let rise until top of dough has risen slightly over top of pan, 60 to 90 minutes.
  • Place rack in middle of oven and preheat oven to 350 degrees F (175 degrees C).
  • Bake loaf until golden brown and cooked through, about 35 minutes. The internal temperature of the bread should be 190 degrees F (90 degrees C). If loaf browns too quickly, cover loosely with a tent of aluminum foil with shiny side out. Remove from pan and cool on wire rack.

1/3 cup packed brown sugar
1/4 cup molasses

Steps:

  • In a large bowl, combine the oats, brown sugar, molasses, 4 tablespoons butter and salt; stir in boiling water. Let stand until mixture cools to 120°-130°, stirring occasionally., In a large bowl, combine 2 cups bread flour and yeast. Add the molasses mixture just until moistened. Stir in rye flour and enough of the remaining bread flour to form a medium stiff dough., Turn onto a floured surface; knead about 6-8 minutes. Place in a large bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down dough; cover and let rise in a warm place until doubled, about 30 minutes. , Punch down dough. PUMPERNICKEL RECIPE

This recipe bakes one large loaf (tin size 33 cm long x 10 cm wide) and one very small loaf (tin size 17 cm long x 10 cm wide).

Number Of Ingredients 8

50 g rye sourdough starter (350g fine to medium cracked rye, 350g water)
200 g rye berries (200g boiling water)
150 g fine to medium cracked rye (150g water)
550 g fine to medium cracked rye
150 g water
22 g salt
120 g maple syrup (traditionally cane sugar syrup is used but I prefer maple syrup)
1 tbsp rapeseed or sunflower oil (for the tin)

Steps:

  • Prepare the preferment. Combine in a bowl, cover and leave to ripen for 16 - 24 hours.
  • Prepare the scalded rye. Pour the boiling water over the rye grains and leave overnight.
  • Prepare the rye soaker. Combine in a bowl, cover and leave overnight.
  • 11.30am - Add one litre of water to the scalded rye soaker, bring to a boil and simmer for approx. 1 hour until soft.
  • 12.30pm - Strain the rye and discard any remaining water. Set aside to cool.
  • 1pm - In a large bowl combine 700g of sourdough (the rest goes back into the fridge for your next bake), the cracked rye soaker, the cooked and cooled rye berries, the 550g extra cracked rye, the water (150g), salt (22g), maple syrup (120g) and mix until the dough comes together well. Mix for a few minutes (I just do this with my hands). Once this is done, cover the bowl and leave to rest for 30 minutes.Note: The dough should not be wet. It should stick together well and not fall apart. It should peel off the side of the bowl easily and stick on a spoon when held up.
  • 1.45pm - Oil a large and a small loaf tin (I use a silicone brush to do this), then place the dough into the baking tins. Again, just use your hands to do this and even out the dough surface across the tin. Fill the tins only half full. Cover the tins - if you are using Pullman forms, use the Pullman tin cover, otherwise use a polythene bag to ensure the dough doesn't dry out.
  • 2pm - Leave to prove for 3 hours (depends on room temperature, so do keep an eye on the dough during this time). The dough will have risen, probably not quite to the top of the tin, but it should have visibly risen.
  • 4.30pm - Preheat the oven to 150°C.
  • 5pm - Brush the top of the dough with a little water. Fully wrap the baking tins with two tight-fitting layers of tin foil to avoid the steam escaping and the dough drying out during the long baking process. Note, that I cover even the Pullman tin in these additional layers. Place the wrapped tins at the bottom shelf of the oven and bake for approximately 14 hours (best done overnight).
  • 6pm - Turn down the temperature to 120°C.
  • 7am - After baking, turn off the oven and leave the baking tin in the cooling oven for another hour.
  • 8am - Take the loaf out of the baking tins and wrap in a kitchen towel for another 24 hours.
  • Cut into thin slices and enjoy with butter and jam or smoked fish for a hearty breakfast!

2 to 2 1/2 cups Gold Medal™ Better for Bread™ flour or Gold Medal™ all-purpose flour
1/3 cup Betty Crocker™ mashed potatoes
2 tablespoons packed brown sugar
1 teaspoon salt
3/4 teaspoon caraway seed
1 package regular active or fast-acting dry yeast
1 cup buttermilk
1/2 cup water
2 tablespoons vegetable oil
1 1/2 cups rye flour
Cornmeal
Additional caraway seed, if desired

Steps:

  • In large bowl, mix 1 1/2 cups of the all-purpose flour, the mashed potatoes (dry), brown sugar, salt, 3/4 teaspoon caraway seed and the yeast. In 1-quart saucepan, heat buttermilk, water and oil over medium heat, stirring frequently, until very warm (120°F to 130°F); stir into potato mixture until blended. Stir in rye flour and enough remaining all-purpose flour to make dough easy to handle.
  • Place dough on lightly floured surface; gently roll in flour to coat. Knead about 8 minutes or until smooth and springy. Grease large bowl with shortening or cooking spray. Place dough in bowl, turning dough to grease all sides. Cover; let rise in warm place about 1 hour or until dough has doubled in size. (If using fast-acting yeast, do not let rise 1 hour; cover and let rest on floured surface 10 minutes.)
  • Grease large cookie sheet with shortening or cooking spray; sprinkle with cornmeal. Roll dough into rope, about 3 inches thick and 25 inches long. Curl dough into coil shape; tuck ends under. Place on cookie sheet. Cover; let rise in warm place 30 to 45 minutes or until dough has doubled in size.
  • Heat oven to 400°F. Brush water over dough; sprinkle with cornmeal and additional caraway seed. Bake 23 to 28 minutes or until loaf is golden brown and sounds hollow when tapped. Remove from cookie sheet to cooling rack; cool.

TRADITIONAL SWEDISH WHOLE RYE BREAD

This whole rye bread is compact, dense, and loaded with flavor. It's perfect for a Danish smørrebrød or why not with just some butter and your favorite cheese for breakfast.

150 gram sunflower seeds
25 gram flax seeds
25 gram sesame seeds
40 gram pumpkin seeds
250 gram whole rye flour
200 gram water
80 gram sourdough starter (100% hydration)
530 gram levain
400 gram water
440 gram rye flour
50 gram bread syrup
18-24* gram salt (Look in recipe notes for required amount of salt.*)

Steps:

  • Soak the seeds in hot water the night before it's time to bake. Place the seeds in a pan or other heatproof container and pour over boiling water. The water shall cover all the seeds. Cover with a lid and let the mixture sit overnight.
  • Prepare a levain by mixing 200 grams of water, with 250 grams rye flour and 80 grams mature sourdough starter. Let it ferment overnight, approximately 8 hours in room temperature, about 71ºF/21ºC.
  • Drain the seeds through a strainer and mix with the levain and the rest of the ingredients. Mix thoroughly so that the seeds are distributed throughout the dough, and so that there is no dry flour left.
  • Let the dough bulk ferment for 4 hours at a temperature of 71ºF/21ºC. If you want a more sour taste you can let it ferment longer in a colder environment, but be careful. The taste can become a bit overwhelming.
  • Distribute the dough into two bread forms that you have oiled and sprinkled with a thin layer of flour. Use a fine strainer or a sieve. Smooth the surface with a spatula.
  • Let the dough proof for 2. 5 hours at a temperature of 73ºF/22ºC. It should rise about 25-30% of its initial volume.
  • Preheat your oven to 480ºF / 250ºC. You don't have to bother about steam when baking this bread. But it requires some time in the oven, at least 90 minutes. Bake on the high temperature for 20 minutes, then turn it down to 390ºF / 200ºC. It's a good idea to place an extra oven plate over the bread. That will prevent it from being burned on the top. Check if it's ready with a thermometer. The internal temperature should be about 215ºF / 100ºC. Turn the oven temperature down to 215ºF / 100ºC, but don't turn it off.
  • Let the bread cool in the form until you can handle it. Take the bread out of the form and place it in the oven again for about 5 to 10 minutes. That will create a crust on the sides and the bottom of the bread that will prevent it from molding.

EASY HOMEMADE SOURDOUGH BREAD RECIPE FROM 1869

This homemade sourdough bread recipe is based on an old-fashioned 19th century bread recipe, and it is a very easy recipe to make. You only have to knead the bread lightly once and the timing for letting it rise is more flexible than with yeasted bread recipes.

3 cups flour (You any type of wheat, spelt, or einkorn flour for this recipe)
1 cup water
1/2 cup sourdough starter
2 Tbs molasses (or sugar)
1 tsp salt
(Optional) 1/2 tsp baking soda

Steps:

  • In a large mixing bowl, combine flour and salt, stirring until combined.
  • Add sourdough starter, molasses (or sugar), and water, stirring until combined. Unlike other bread recipes, the dough for this bread will feel wet and sticky rather than dry.
  • (Optional: If you do not want any sour flavor or tang in your finished loaf, add the 1/2 tsp. of baking soda and mix until well combined. Be aware, though, that the bread will not be true sourdough bread with the addition of the baking soda.)
  • Knead the wet dough for a minute or two. This part will be messy. I usually just keep the dough in the bowl to knead it to avoid extra mess on the counter. This type of bread doesn't need to be kneaded as thoroughly as other bread recipes.
  • Place dough into a greased 9x5 inch bread pan. Cover with a damp dish cloth or tea towel, with another dry towel over it and let rise for about 8-14 hours, or until fully risen. You want the dish towel touching the bread to stay damp because that will help to prevent the top of the dough from drying out and forming a crust, which could prevent the dough from rising as much. (I find it convenient to prepare my bread dough in the evening and then bake it the next morning.)
  • Once it has risen, the dough should be light and fluffy and form an indentation when you press your finger into it. (If you have a glass bread pan, you can see little bubbles in the dough through the sides and bottom of the pan.)
  • Bake at 350 degrees for about 45-50 minutes or until bread is golden brown and sounds hollow when you tap on it.

700 g wholegrain rye flour
600 ml water (lukewarm up to 30°C/ 86°F)
10-12 g sea salt

Steps:

  • The Rye SpongeUse 180g of the flour and 300ml of water from total to build the rye starter. In the late afternoon, mix 60g rye flour with 100ml warm water in a medium-sized bowl. Keep it covered in a warm spot and whisk occasionally. Give it two feedings (60g+100ml) during the next day. Whisk air in between feedings. In the next morning, the starter is ready for baking. The sponge has runny porridge-like consistency. It taste sour and has lots of tiny bubbles on surface to show activity.
  • Building the rye doughMeasure the rest of the ingredients, and build the dough in a bigger bowl. Whisk water into the sponge and add more rye flour little by little. When the dough is too heavy to be mixed with a whisk, let the dough rest for a while so that the rye flour will set. Then, add more rye flour and continue mixing with a wooden spoon. Give the dough a second pause. Finally, add the rest of the flour with salt but don't forget to take a piece of unsalted dough aside for your next bake. Store this fresh dough in an air-tight box in the fridge, it's fresh up to 2 weeks.
  • Now, knead the wet dough carefully and patiently by hand (5-8 minutes will do). Give the dough 2-4 hours rest at room temperature to build volume. The dough should double its size before shaping & baking. The old fashioned way is to press a cross over the dough to bless the bread. This cross sign will also communicates when the dough has risen enough.
  • Shaping the rye doughDust your working desk properly with rye flour. Shaping the wet dough into a pyramid-sharp boule is a challenge and you should be quick not to let the dough stick. Flour your hands multiple times and lightly add more flour whenever needed. Decide whether you bake 1 or 2 loaves and dust one or two more spots on the working surface where you place the shaped bread to rise (dusted parchment paper as a good assistant to load a loaf into the oven). If baking the loaves in a tin, prepare them with parchment paper.
  • Dust the bread surface lightly with rye flour, cover with a kitchen towel and let it/the loaves rise for an hour. In the meanwhile, preheat the oven to 225-240°C/437-460°F with a baking stone at least 45min in advance.
  • Baking the 100% rye sourdoughThe surface of the bread now shows crackling and the pyramid like boule shape has flattened. Now we want to emphasize the crackling a bit more:press the top dome down lightly while supporting the bread from the sides.
  • Do not score the bread. Instead, prick the surface of the loaf multiple times before loading into the oven.
  • Bake on a baking stone for 40-60 minutes (lower rack). After the first 10 minutes, adjust the temperature to 200°C/392°F. Smaller loaves bake in 40 minutes whereas a bigger loaf can take over an hour depending on the oven.
  • You know the bread is done when the knock on the bottom sounds hollow. Let the loaf rest on a cooling rack for a while (10 minutes) before tucking it in a kitchen towel. Let the rye sourdough rest covered and tucked in the tea towel overnight before cutting slices.
  • How to store 100% rye sourdoughThe rye sourdough gets better and better the longer it sits on the table. Store it tucked in a tea towel in a cool place. The bread is good up to a week. Alternatively, you can freeze a loaf. Cut the loaf in half or slice it and freeze in plastic bags.

5 ½ to 6 cups sifted all-purpose flour cornmeal

Steps:

  • Sprinkle yeast into ½ cup of the very warm water; stir in 1 tsp of the molasses. Stir until yeast dissolves. Let stand, undisturbed, to proof until bubbly and double in volume, about 10 minutes. Combine remaining water and molasses with salt and shortening in a large bowl; stir in yeast mixture, rye flour and caraway seeds; add enough all-purpose flour to make a soft dough. Turn out onto lightly floured surface. Knead until smooth and elastic, about 10 minutes, using enough of the remaining flour to keep dough from sticking. Place in buttered large bowl; turn dough to bring buttered side up. Cover with towel. Let rise in a warm place, away from draft, 1hour, or until double in bulk. Butter large cookie sheet. Sprinkle lightly with cornmeal. Punch dough down; turn out onto lightly floured surface; knead a few times; invert bowl over dough; let rise 10 minutes. Divide dough in half and knead each half a few times. Shape into 2 loaves. Place at least 4 inches apart on prepared cookie sheet. Let rise again in a warm place, away from draft, 45 minutes, or until double in bulk. Brush tops with water. Bake in 400˚ oven for 35 minutes or until browned and loaves sound hollow when tapped. Remove from cookie sheet to wire rack; cool completely.
