AT the end of the summer years ago, our family often gathered to pick wild blueberries. Mother canned them and saved them for special pie treats during the holidays. If there were any leftover she made them into these delicious blueberry muffins. -June Morris, Water Mill Long Island, New York

1 cup all-purpose flour
1/3 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 egg
1/4 cup milk
2 tablespoons butter, melted
1/2 teaspoon vanilla extract
3/4 cup fresh or frozen blueberries

Steps:

  • In a small bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the egg, milk, butter and vanilla; stir into dry ingredients just until moistened. Fold in blueberries., Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

¾ cup orange juice
2 teaspoons grated orange zest
2 cups all-purpose flour
¾ cup white sugar
1 ½ teaspoons baking powder

1 ¼ cups finely chopped rhubarb

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
  • In a medium bowl, stir together egg, oil, orange juice and orange zest. In a separate bowl, combine flour, white sugar, baking powder, baking soda and salt. Stir egg mixture into flour mixture, just until combine. Fold in chopped rhubarb.

1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 ¼ cups brown sugar
½ cup vegetable oil
1 egg
1 teaspoon vanilla extract
1 cup buttermilk
1 ½ cups diced rhubarb
½ cup chopped walnuts
1 tablespoon melted butter
⅓ cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 12 cup muffin pans or line with paper cups.
  • In a medium bowl, stir together the flour, baking soda, baking powder and salt. In a separate bowl, beat the brown sugar, oil, egg, vanilla and buttermilk with an electric mixer until smooth. Pour in the dry ingredients and mix by hand just until blended. Stir in the rhubarb and walnuts. Spoon the batter into the prepared cups, filling almost to the top. In a small bowl, stir together the melted butter, white sugar and cinnamon; sprinkle about 1 teaspoon of this mixture on top of each muffin.
  • Bake in the preheated oven until the tops of the muffins spring back when lightly pressed, about 25 minutes. Cool in the pans for at least 10 minutes before removing.

Steps:

  • Preheat oven to 400 degrees.
  • In medium bowl, combine dry ingredients and mix well.
  • Cut in butter and shortening until mixture resembles fine crumbs.
  • Combine milk, vanilla and eggs and blueberries.
  • Add to dry mix until just moistened.
  • Spoon into prepared pan filling each cup 3/4 full.
  • Bake 30-35 minutes.
  • Cool five minutes before serving.
  • *Variation: leave out the blueberries and reduce cooking time to 20-25 minutes.

1/4 cup unsalted butter (chilled and cut into 1/4" pieces)
1/4 cup unbleached all-purpose flour
1/4 cup old-fashioned oats
2 tbsp brown sugar
1 tsp ground cinnamon
1 tsp turbinado sugar (optional (sugar in the raw))
2-1/2 cups unbleached all-purpose flour
1-1/4 cups brown sugar (I used dark brown sugar but either is fine)
1 cup old-fashioned oats
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 cup whole milk
1 tsp white vinegar (or lemon juice)
1 tsp vanilla extract
1/2 cup vegetable oil (or canola)
1 egg (lightly beaten)
2 cups rhubarb (chopped - reserve 1/4 cup for topping)

Steps:

  • Preheat oven to 350°F. Line two standard muffin pans with cupcake liners or spray with a non-stick cooking spray.
  • Combine crumble ingredients in a small bowl. Use two forks to cut butter into other ingredients. I use a pastry cutter to cut the ingredients together until it resembles coarse crumbs. If the butter gets too warm it will not crumble. Refrigerate the butter if it gets too soft before crumbling if necessary.
  • In a large mixing bowl add flour, brown sugar, cinnamon, oats, baking soda, and salt. Whisk together to combine.
  • in a medium bowl combine milk, vinegar, vanilla extract, oil, and egg. Whisk together.
  • Add wet ingredients to dry ingredients and mix together until just combined. Fold in 1-3/4 cups chopped rhubarb.
  • Fill muffin cups 1/2 to 3/4 full. Top with remaining rhubarb and crumble. Sprinkle with turbinado sugar.
  • Bake 20 to 25 minutes rotating pans halfway through baking. Remove from the oven when a toothpick inserted in the middle of the muffin comes out clean. Cool muffins 10 minutes in the pan and then remove them to a baking rack to finish cooling or serve warm.
  • Store in an airtight container at room temperature or in the refrigerator. May be frozen for a longer period of time.
