With four sons in service during World War II, my mother sent these favorite cookies as a taste from home to "her boys" in different parts of the world. These days, my 11 grandchildren are enjoying them as we did, along with my stories of long ago.- Pearl Cochenour, Williamsport, Ohio

1 cup water
2 cups raisins
1 cup shortening
1-3/4 cups sugar
2 large eggs
1 teaspoon vanilla extract
3-1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup chopped walnuts

Steps:

  • Combine water and raisins in a small saucepan; bring to a boil. Cook for 3 minutes; remove from the heat and let cool (do not drain). , Preheat oven to 350°. In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, baking powder, baking soda, salt and spices; gradually add to creamed mixture and mix well. Stir in nuts and raisins. , Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake 12-14 minutes or until golden brown. Remove to wire racks to cool.

1/2 cup sugar
1-1/2 teaspoons cornstarch
1/4 teaspoon ground cinnamon
1 cup chopped dates
1/2 cup raisins
1/2 cup water
DOUGH:
1 cup butter, softened
2 cups sugar
3 eggs
1 teaspoon vanilla extract
4 cups all-purpose flour
1/2 teaspoon salt

Steps:

  • In a small saucepan, combine the first six ingredients. Cook and stir over medium heat until thickened and bubbly. Cool. , In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour and salt; gradually add to the creamed mixture and mix well. Cover and refrigerate for 2-3 hours or until easy to handle. , On a lightly floured surface, roll half of the dough to 1/8-in. thickness. Cut with a 2-in. round cookie cutter. Place 1 in. apart on ungreased baking sheets. Place 1 teaspoon of raisin filling in the center of each cookie. , Roll out remaining dough. Cut with a 2-in. cookie cutter. With a 1-in. round cookie cutter, cut a hole in the center of each; place over filling. With a fork, press edges to seal. , Bake at 400° for 10-12 minutes or until edges begin to brown. This is an old classic Christmas cookie that will bring back many fond memories to those who eat these delightful cookies

Number Of Ingredients 17

3 ½ cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
⅔ cup butter, softened
¾ cup packed brown sugar
¾ cup white sugar
2 eggs
⅓ cup milk
1 teaspoon vanilla
1 ¾ cups raisins
1 cup packed brown sugar
1 cup water
1 pinch salt
1 teaspoon lemon juice
1 ½ tablespoons cornstarch
2 tablespoons water
½ cup chopped walnuts

Steps:

  • To Make The Dough: Sift the flour, baking powder, and salt together; set aside.
  • Cream the butter with 3/4 cup of the brown sugar and the white sugar. Beat in the eggs, milk and vanilla. Mix at high speed for 2 minutes, then reduce speed and gradually blend in the flour mixture. Cover and refrigerate dough for at least 3 hours.
  • To Make Raisin Filling: Grind the raisins. In a medium saucepan combine the ground raisins, 1 cup brown sugar, 1 cup water, salt and lemon juice. Bring to a boil, and simmer for 3 minutes.
  • Combine the cornstarch and 2 tablespoons of the water and mix until smooth. Add to the raisin mixture and continue to simmer until thick. Remove from heat and let cool. Once cool, stir in the chopped nuts.
  • Preheat Oven to 350 degrees F (175 degrees C). Lightly grease baking sheets.
  • On a floured surface, roll out the chilled dough to 1/8 inch thick. Cut into 2 3/4 inch rounds. Place rounds on the prepared baking sheet. Place a heaping teaspoon of the raisin filling on the cookie round and top with another round. Crimp the edges closed.
  • Bake at 350 degrees F (175 degrees C) for 8 minutes. Allow cookies to cool on sheet until just barely warm.

Raisin Filled Cookies have a slightly crisp cinnamon outside and are chewy and gooey on the inside. A MUST if you are a raisin fan!

2 cups sugar
1 cup shortening
3 eggs
6 1/2 cups flour
1 cup sour cream
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 pound raisins
1/2 cup sugar
1/2 cup brown sugar
dash of lemon juice
1/2 teaspoon nutmeg

Steps:

  • Cover the ingredients with water and bring to a boil in a medium sauce pan. Then add 1/2 c. melted butter and 5 Tbsp. of flour to thicken. Once thick, remove mixture from heat and set aside to cool.
  • Cream together the sugar, shortening, and eggs. Then mix in all the other ingredients.
  • Roll out into Tbsp sized balls and flatten into rounds. Put down one round, add filling in the center, then top with another round and seal around the edges with finger tips. Bake at 400 degrees for about 8 minutes, or until light brown in color. Cool completely. (optional: sprinkle with a little cinnamon and sugar)

2/3 cup sugar
2/3 cup water
1 tablespoon lemon juice
1 tablespoon butter
1 cup sugar
1 cup butter
1 egg, beaten
3 cups sifted flour
3 teaspoons baking powder
1/4 teaspoon salt
1/3 cup milk
2 teaspoons vanilla

Steps:

  • Filling:.
  • Cook raisins with sugar and water for 10 to 15 minutes, or until thick, stirring occasionally.
  • Remove from heat and add lemon juice and butter.
  • Let cool while preparing dough.
  • Cookie Dough:.
  • Cream sugar and butter; add egg and mix well.
  • Combine flour, baking powder, and salt, and add alternately to sugar mixture with milk and vanilla extract.
  • Roll out a portion of the dough to 1/8-inch thickness and cut into rounds with a biscuit cutter.
  • Place a teaspoonful of filling on the center of a round, then cover with another round and press edges together.
  • Bake at 350 degrees F until golden brown (10 to 15 minutes).

This 100 year old recipe is a family fovorite from the kitchen of Darlene Dorey and found on the Internet. I love raisn cookies and this one truely looks a winner. The original posting did not offer cooking times or yield, but I'm estimating for this untried recipe based on baking experience. Once tested, I will modify.

2 cups sugar
1 cup shortening (lard or butter)
6 cups flour
2 eggs
1 teaspoon vanilla
1 cup milk
2 teaspoons baking powder
2 teaspoons baking soda
2 cups ground raisins
2 cups water
1 cup sugar
2 tablespoons flour
1 1 /2 cups chopped walnuts

Steps:

  • Cook filling ingredients in a medium saucepan until it thickens. Add walnuts.
  • Roll dough out very thin. Using a 3-inch wide biscuit or doughnut cutter, cut enough to fill a cookie sheet.
  • Put a tablespoon full or a nice big blob of filling in the center of each cookie.
  • Now, using the same cookie cutter, cut tops of each cookie.
  • Using a thimble, cut a hole in the center of each of the "top" cookie on each of the raisin blobs, sealing all around with fingertips.
  • Bake at 375 until done, usually not being brown at all.
