Old-Fashioned Porridge and Molasses Bread image

I have had this recipe for over 40 years and it has never failed. The aroma of it baking is wonderful, and it also makes great toast. Also a great addition to have with baked brown beans. This freezes very well; I cut the loaf up before I freeze, that way I take out just the slices I need.

3 cups boiling water
2 cups rolled oats
¼ cup shortening
2 teaspoons white sugar
1 cup warm water (100 degrees F (38 degrees C))
2 (.25 ounce) packages active dry yeast
⅔ cup molasses
4 teaspoons salt
8 ½ cups all-purpose flour, or as needed

Steps:

  • Pour boiling water over oats and shortening in a bowl. Stir until shortening melts; let stand for 20 minutes, giving it a stir once in a while.
  • Meanwhile, dissolve sugar in lukewarm water. Add yeast and let stand for 10 minutes. Stir briskly with a fork.
  • Stir yeast mixture into the partially cooled oat mixture with molasses and salt. Let cool to lukewarm, 5 to 10 minutes. Beat in 2 1/2 cups of flour, gradually adding remaining flour as needed.
  • Turn dough onto a floured surface and knead, 8 to 10 minutes. Shape into a smooth ball and place in a greased bowl, rolling the dough so the top is greased. Cover and let double in size, about 1 1/2 hours.
  • Punch dough down and shape into 4 loaves. Place into greased 8 1/2x4 1/2-inch bread pans. Cover and let rise until doubled in size, about 1 hour.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bake in preheated oven until tops are golden brown, 30 to 35 minutes.

1 cup old-fashioned oatmeal
2 ⅓ cups boiling water
⅓ cup molasses
½ cup butter
2 teaspoons salt
6 cups bread flour, or more as needed
2 teaspoons active dry yeast

Steps:

  • Pour boiling water over oats in a large bowl; let soften, about 1 hour. Add molasses, butter, and yeast; mix well. Add flour, 1 cup at a time, mixing well after each addition until dough sticks together. Cover with a towel and let rise in a warm place until doubled in volume, about 1 hour.
  • Butter two 9x5-inch loaf pans.
  • Punch down dough and turn onto a lightly floured surface. Shape into 2 balls and let rest for 10 minutes. Form balls into loaves and place into the prepared pans. Cover loaves with a damp cloth and let rise until doubled in volume, about 30 minutes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake loaves in the preheated oven until tops are golden brown, about 40 minutes.

1 2/3 cups rolled oats
2/3 cup raisins or 2/3 cup chopped dates
1/2 cup maple syrup
1/4 cup molasses
1/4 cup packed dark brown sugar
1/4 cup chopped walnuts or 1/4 cup pecans
2 eggs, beaten
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
milk or whipping cream

Steps:

  • Preheat oven to 350°F
  • Bring the water and salt to boil in a heavy saucepan.
  • Reduce heat to medium-low.
  • Add oats and cook 5 minutes, stirring frequently.
  • Transfer oatmeal to 6-cup casserole dish.
  • Add all remaining ingredients except milk and stir until well combined.
  • Bake until set, about 1 hour.
  • Divide the porridge into bowls.
  • Serve with milk.

2 cups milk
2 cups quick-cooking rolled oats
¼ cup brown sugar (firmly packed)
1 tbsp salt
2 tbsp butter
1 pkg active dry yeast
½ cup warm water (110 to 115°)
5 cups flour (sifted)
1 egg white
1 tbsp water
rolled oats

Steps:

  • Scald the milk. Stir in 2 cups rolled oats, brown sugar, salt and butter. Remove from the heat and cool to lukewarm.
  • Sprinkle yeast on the warm water; stir to dissolve.
  • Add the milk mixture and 2 cups flour to the yeast. Beat with a mixer on medium speed, scraping the bowl occasionally, for about 2 minutes. (You can also beat with a spoon until the batter is smooth.)
  • Add enough remaining flour, a little at a time, first with a spoon and then with your hands, to make a soft dough that leaves the sides of the bowl. Turn onto a floured surface and knead until dough is smooth and elastic, about 8-10 minutes. Place in a lightly greased bowl; turn dough over to grease the top. Cover and let rise in a warm place until doubled, about 1 to 1½ hours. Punch down and let rise again until nearly doubled, about 30 minutes.
  • Turn onto a floured surface and divide in half. Round up to make 2 balls. Cover and let rest 10 minutes. Shape into loaves and place in greased 9x5x3" loaf pans. Let rise until almost doubled, about 1 hour 15 minutes. Brush the tops of the loaves with egg white beaten with water and sprinkle with rolled oats.
  • Bake in a 375° oven for about 40 minutes. (If the bread starts to brown too much, cover loosely with a sheet of aluminum foil after baking 15 minutes.)

I have posted the original recipe, it is from "The Governor's Inn" in Vermont, however for my liking I cut the sweets in half. It is really good either way. In the restaurant it is served with vanilla ice cream on top and a drizzle of pure maple syrup.

  • Cook for 5 minutes.
  • Transfer the oatmeal to a 6 cup souffle dish.
  • Add all the remaining ingredients, except milk.
  • Stir until well combined.
  • Bake until set (approx 1 hour).
  • Spoon into bowls and pour milk, cream on it.

1 cup all-purpose flour
1/2 teaspoon baking soda
3/4 teaspoon fine sea salt
1/4 teaspoon ground cinnamon
2/3 cup unsalted butter, melted and slightly cooled
1/2 cup light brown sugar, packed
1/2 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
2 cups old-fashioned oats

Steps:

  • Preheat the oven to 350°F and have ready a baking sheet lined with either parchment paper or a silicone baking mat.
  • In a small mixing bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside until ready to use.
  • Add the melted butter, light brown sugar, and granulated sugar to the bowl of a stand mixer fitted with a paddle attachment. If you don't have a stand mixer use a large mixing bowl and a handheld mixer. Mix on medium-high speed for about 2 minutes. Add the egg and vanilla extract and mix until evenly distributed.
  • Add the dry ingredients and mix on low to combine. Scrape down the sides of the bowl and mix once more. Add the oats and mix on low until evenly distributed.
  • Add a generous tablespoon of batter to the prepared baking sheet, spacing each cookie about 2" apart. Bake for 10-12 minutes. Remove from the oven and place on a cooling rack to cool for about 10 minutes.
