OLD-WORLD PORK ROAST
I REMEMBER this recipe from my childhood. My German grandmother made this roast every Sunday - it was our equivalent to everyone else's customary fried chicken dinner. There were many happy times spent around Grandma's kitchen table enjoying this tasty meal. -Mary Ann Morgan, Cedartown, Georgia

Steps:
- In a small bowl, combine caraway seeds, sage, 1 teaspoon salt and 1/4 teaspoon pepper; rub over roast. Place roast on a rack in a shallow roasting pan. Bake, uncovered, at 350° for 2 hours or until a thermometer reads 160°-170°. Remove roast from pan; keep warm. Pour pan drippings into a large measuring cup; add enough water to equals 2 cups. Pour into a small saucepan; add browning sauce if desired, cornstarch, and remaining salt and pepper. Stir until smooth. Bring to a boil; cook and stir until thickened and bubbly. Slice roast; serve with gravy and dumplings or potatoes if desired.

Very tender roast, wonderful rich gravy. Serve with mashed tatters or French fries. Wonderful as left over for hot pork sandwiches. I've made this type roast for over 50 years!

Steps:
- Pre-heat oven to 350°F.
- Melt lard in cast iron dutch oven, or very heavy bottomed pot with lid, over medium high heat.
- Salt and pepper all sides of pork roast.
- When lard just begins to give off smell of being hot, place roast in pot.
- DO NOT move it for a minute or so, then rotate it to brown all sides.
- Lay garlic cloves and onion slices around the roast and stir to brown them a bit.
- Mix Kitchen Bouquet into the 2 cups of water.
- Pour in the water mixture.
- Bring to a boil.
- Cover tightly and place in lower portion of the oven.
- Roast 1 hour for boneless roast; 1-3/4 hours for bone-in roast.
- Half-way through roasting time turn the roast over.
- Remove roast from pan and cover to keep hot.
- Mix 2 Tablespoons cornstarch into 1/2 cup water.
- Using a whisk, stir the cornstarch mixture into the pot drippings, breaking up the garlic cloves as you mix.
- Bring to a boil, taste and season if needed with salt and/or pepper.
- NOTE: Pork roast made this way is ALWAYS tender.
- It makes wonderful hot pork sandwiches!
- The gravy is out of this world!

- Preheat oven to 350º F.
- In a small bowl, combine the marmalade, mustard, cumin, coriander and pepper.
- Rinse the pork tenderloin under cold running water and pat dry with absorbent paper towels. Rub the pork with the marmalade and spice mixture.
- Heat the canola oil over medium-high heat in a large skillet. Once hot, add the pork loin and sear it on all sides. Transfer the pork loin to a roasting pan and roast until a meat thermometer inserted into the center of the loin reads 160º F, about 30 to 45 minutes. Transfer the pork loin to a cutting board, let rest for 10 minutes. Using a sharp knife, cut into 1/4-inch thick slices. Meat can be stored in the refrigerator until ready to use.
- In a small bowl, combine mayonnaise, chipotle peppers, lime juice, and orange zest. Spread both halves of the sandwich roll with the mayonnaise mixture. Layer the pork slices on the bottom layer of the roll and cover with the top half of roll. Slice each roll in half and serve.
OLD-FASHIONED SLOW-COOKED PORK BLADE ROAST FROM CHRISTIAN BéGIN

- Preheat oven to 180°C (350°F). Season pork well with salt and pepper. Pour a little oil into a roasting pan over high heat, sear the blade roast about 90 seconds per side, and then set aside. Reduce heat. Sauté onions until caramelized and, if necessary, add a little oil. Add garlic cloves, thyme, and oregano. Deglaze pan with half the white wine being sure to pick up all the browned bits. Allow wine to almost completely evaporate. Add the broth, remaining wine, and mustard, and then stir to blend everything together. Place blade roast in centre of roasting pan and bake covered for 2 hours. Remove roasting pan from oven, turn the meat over, and scatter potatoes and carrots around it. Bake for another hour and 15 minutes. Add the beans and bake uncovered for 45 to 60 minutes more, basting regularly. Add more chicken broth if needed. Check the doneness of the vegetables and meat (they should be fork tender). Squeeze garlic out of the cloves and discard their skins. Serve directly from the roasting pan at the table. Chef's secret: Roasted garlic is cooked whole and unpeeled (only the papery outer layers are removed). Roasting produces a milder, sweeter, and less pungent flavour.
PORK POT ROAST
Steps:
- Preheat oven to 350 degrees F.
- Place stock in a sauce pan and heat to hot. Keep burner on low while you sear the pork.
- Salt and pepper all sides of the pork butt. You may use all or some of the salt and pepper listed.
- Heat the olive oil over high heat in a large Dutch Oven and once shimmering hot, start searing the pork. Sear it for 4-5 minutes on each side, including top and bottom. Remove to a platter and lower heat to medium.
- Add the onion, celery and tomato paste and cook for three minutes, stirring often.
- Add pork back in along with hot stock and the parsley.
- Cover and place in the oven for two hours.
- While the roast is cooking, prepare the vegetables and make the roux.
- To make the roux, in a small sauce pan over medium low heat, melt the butter and add the flour. Stir with a wooden spoon and cook for 4-5 minutes until starting to a turn golden color. Set aside.
- After the two hours, remove the pot from the oven and remove the pork and parsley. Discard the parsley.
- With an immersion blender, puree the liquid, onion and celery.
- Add the carrots, potatoes and red onion back into the pot with the liquid and place the pork on top. Cover and cook 40 more minutes.
- Remove from oven and add the green beans. Cover and cook 20 more minutes.
- Remove the pot from the oven and remove the pork to your cutting board and the vegetables to a platter.
- Over medium heat, add all of the roux to the liquid in the pot while whisking and then add the gravy color. Cook for a few minutes and pour into gravy boats. Strain if necessary.
- Slice the pork against the grain into thick slices and serve with the vegetables and gravy.

- Mix together cream of mushroom soup and condensed French Onion Soup.
- Optional step: dredge thawed pork roast in 1/2 cup flour that has been seasoned with 1 teaspoon salt and 1/2 teaspoon pepper. Brown all sides of pork in a skillet of hot vegetable oil.
- If you do not brown the roast, season all sides with salt and pepper.
- Add pork roast to slow cooker insert. Pour soup mixture over top.
- Cook on low for 8-12 hours or high for 5-6 hours or until the pork is fork tender.

- Tie the roast 3-4 times crosswise, and once lengthwise.
- In a bowl, combine garlic, pepper, salt, rosemary, sage and fennel seeds. Rub this mixture well into all surfaces of roast.
- Place meat in a roasting pan. Place pan, uncovered, in preheated 300°F oven for about 3 hours.
- Add onion to pan around the meat. If there is not much fat in the pan, add the optional oil. Return pan to oven for 3½-4 hours more.
- Transfer meat to a dish. Transfer onions to a bowl. Pour drippings into a 2-cup measure. Add water to bring up to 1½ cups. When meat has cooled to room temperature, wrap meat and onions with plastic wrap and place in refrigerator overnight along with drippings.
- Remove fat from cold drippings and place in a saucepan with onions, cider, apple jelly and cider vinegar. Bring to a simmer.
- Slice cold roast, and layer in baking dish. Pour ½ cup of drippings over pork. Cover dish with foil, and place in a preheated 350°F for 40 minutes until hot.
- Bring drippings up to a boil and reduce for 15 minutes until dark, thick and syrupy.
- Serve with mashed potatoes on the side. Pour sauce over the meat.
