Here's a really quick and simple recipe for some delicious southern fried comfort food. Next to fried chicken, these Southern Fried Pork Chops are a long time family favorite. It really is the "other white meat" as the Pork Council tells us.

4 Center Cut Pork Chops about 1/2 inch thick each.
1 Cup of All Purpose Flour
2 Tablespoons of Corn Starch
1 Egg
2 Tablespoons of Buttermilk
1 teaspoon of Garlic Powder
1/2 teaspoon of Salt
1/2 teaspoon of Black Pepper
1/2 teaspoon of Paprika
Cooking oil for frying.

Steps:

  • Begin by making the breader.
  • In a small mixing bowl, add the Flour, Corn Starch, Garlic Powder, Salt, Black Pepper and Paprika. Stir all ingredients well. Set aside.
  • Prepare the egg wash next.
  • Break one egg into a small low sided dish.
  • Add the buttermilk. Use a fork and stir mixture well.
  • Setup your dredge station for convenience.
  • One at a time, dip a pork chop in the flour and coat both sides.
  • Dip the chop into the egg mixture, coat both sides well.
  • Lift and let any excess drip off.
  • Place the chop back into the flour mixture and coat both sides and edges.
  • Place about 1/2 inch of cooking oil in a skillet over medium heat.
  • Test the oil before adding the chops to fry.
  • Gently lower the chops into the hot cooking oil, one at a time.
  • Watch the bottoms of the chop and when they start to brown, flip the pork chops over. Don't overcrowd the skillet.
  • Let the chops fry for about 6-8 minutes or until done but not over cooked.
  • Remove the cooked chops from the skillet, place on a paper towel lined plate and let drain.
  • Serve warm and Enjoy.

1 can (10-1/2 ounces) condensed chicken with rice soup, undiluted
1 medium onion, quartered
1-1/2 teaspoons dried parsley flakes

Steps:

  • In a large resealable plastic bag, combine the flour, mustard, garlic salt and pepper. Add pork, a few pieces at a time, and shake to coat., In a large skillet, brown chops in oil on each side. Transfer to a 3-qt. slow cooker. Top with soup, onion and parsley. Cover and cook on low for 5-6 hours or until meat is tender.

4 bone in pork chops ((1/2 inch thick))
1 cup all purpose flour
1/2 cup canola or vegatable oil ((enough to cover bottom of pan for frying))
2 tbsp butter
1 tsp seasoned salt ((extra to season chops to taste))
1 tsp black pepper ((extra to season chops to taste))
cayenne pepper to taste

Steps:

  • Season Salt and pepper both sides of the pork chops.
  • Combine all dry ingredients. Dredge each side of the pork chops in the flour mixture, then set aside on a plate. Or dredge before going into oil. (Less dishes)
  • Heat canola/vegtable oil over medium to medium-high heat. Add butter. When butter is melted and butter/oil mixture is hot, cook 2 to 3 pork chops at a time, 4 to 5 minutes on the first side; 3 to 5 minutes on the other side. (Make sure no pink juices remain.) Remove to a plate covered with paper towels and repeat with remaining pork chops.

4 pork chops, 1″ thick (Bone-in or boneless will work- but I prefer bone-in, as they have more flavor)
1 teaspoon sea salt (I use Redmond Salt)
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon ground black pepper
2 tablespoons lard, bacon grease, or coconut oil (for frying)

Steps:

  • Thirty minutes before cooking, remove the chops from the fridge and allow them to come to room temperature.
  • Preheat your oven to 350 degrees. Mix the seasonings together in a small bowl.
  • In a cast iron skillet (or other oven-safe skillet), heat the lard or oil until it's just barely starting to smoke. We want the skillet nice and hot so we get a nice sear on the chops.
  • Sprinkle the seasoning mix over the pork chops (both sides). Pat it or rub it in a bit too- just to make sure it sticks.
  • Place the pork chops in the hot pan (you may need two skillets, if your chops are on the large-side). The oil will likely pop a bit, so be careful.
  • Sear the meat until both sides have a lovely brown crust. This usually takes 2-3 minutes per side.
  • Once you are nice and crusty, transfer the pan(s) into the preheated oven. Finish the pork chops in the oven for 8-10 minutes, or until the internal temperature of the pork is 145 degrees.
  • Remove from the oven and allow to rest 8-10 minutes before serving.

Steps:

  • Melt Butter in a medium-high skillet.
  • Season both sides with both seasoning salts. Do not have to use the full tablespoon of each on the four chops, but season liberally to your salt liking.
  • Place pork chops in the melted butter of the medium-high skillet, cooking 2-3 minutes on each side.

1 tablespoon butter
1 tablespoon vegetable oil
2 - 4 thick-cut bone-in pork chops ((about 1 - 1 ¼ - inch thick, about 12 ounces each))
2 teaspoons seasoned salt (such as Lawry's brand)
½ teaspoon pepper
¼ cup all-purpose flour
Optional garnish: chopped fresh parsley or sage

Steps:

  • Place flour in a shallow dish.
  • Pat pork chops dry and season liberally with seasoned salt and pepper on both sides. Dredge the pork chops in flour, shaking off the excess.
  • Melt butter and oil in a large, heavy skillet over medium-high heat.
  • Add chops to the hot skillet and cook until browned on both sides and a meat thermometer registers 140°F - 145°F (about 7-10 minutes per side). Smaller bone-in pork chops will cook in 5-6 minutes per side, so just keep an eye on your chops and use the thermometer to know when they're done. The internal temperature of the pork chops will continue to rise after you remove them from the pan.
  • Transfer pork chops to a plate, tent with foil, and allow to rest for about 5-10 minutes before serving.
  • Note: Depending on the size of your pan (and pork chops), you might need to cook the pork chops in batches of two. Just make sure that you don't overcrowd your pan by trying to squeeze too many chops in at once!

1 c. all-purpose flour
1 tsp. seasoned salt

Steps:

  • Rinse pork chops. (Yes, I rinse my pork chops. Please don't be hatin'.) Salt and pepper both sides of the pork chops.
  • Combine all dry ingredients. Dredge each side of the pork chops in the flour mixture, then set aside on a plate.
  • Heat canola oil over medium to medium-high heat. Add butter. When butter is melted and butter/oil mixture is hot, cook 3 pork chops at a time, 2 to 3 minutes on the first side; 1 to 2 minutes on the other side. (Make sure no pink juices remain.) PAN FRIED PORK CHOPS

The old fashioned way pan fried pork chops. This won't take you but a few minutes to fry these chops in the skillet.

Number Of Ingredients 7

4 Pork chops (I prefer center cut)
salt and pepper
1 stick of margarine
1 cup of breadcrumbs
1 tbsp olive oil
diluted cornstarch
optional 1 tsp of nutmeg

Steps:

  • Rinse and dry the pork chops. Season the pork chops on both sides with salt pepper and (optional)nutmeg. Rub them in with some olive oil. Then rub them in with bread crumbs.
  • Put the skillet on high, feel if the skillet is hot. Put your hand over (not on) the skillet, if it feels hot add the margarine and a little bit of olive oil in the skillet. Never cook something in a cold skillet. Because it will make it stick to the skillet. Wait till the margarine gets slightly brown.
  • Add the pork chops. Fry them on medium high, not longer then 2½ -3 min on each side, depending on the thickness of the pork chop. Turn over when brown. Check if the pork chops are done by cutting in the middle of the chop. Then you will see if it is done or not. Make the gravy with the left over drippings by adding ½ cup of water and the diluted cornstarch.

Go into any of the wonderful family-style restaurants in the South and order a pan-fried pork chop, and you are served a thing of beauty. For some reason, this no-fuss, easy method has fallen out of favor with home cooks (maybe because most recipes are so vague..."Season pork chop, cook in frying oil until done".) Follow my instructions and you will yield a beautifully browned, moist chop...serve with Macaroni & Cheese and some greens, and you will have a fast, old-fashioned weeknight supper.:)

1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Combine the garlic powder, paprika, salt, pepper, and cayenne in a bowl. Place the flour in a shallow dish. Pat the chops dry with paper towels. Cut 2 slits about 2 inches apart through the fat on the edges of each chop (Since pork chops have a tendency to curl when cooked at high heat, cutting the slits will prevent this from happening). Season both sides of the chops with the spice mixture, then dredge the chops lightly in the flour (do NOT discard the flour). Transfer to a plate and let rest for 10 minutes.
  • Meanwhile, cook the chopped bacon in a large nonstick skillet over medium heat until the fat renders and the bacon is crisp, about 8 minutes. using a slotted spoon, transfer the bacon to a paper towel-lined plate and reserve for another use. (if having baked potatoes with the pork chops, serve with sour cream, chopped chives, and sprinkle on the cooked, chopped bacon -- YUM!) Do NOT wipe out the pan!
  • Add the oil to the fat in the pan and heat over medium-high heat until just smoking. Return the chops to the flour dish and turn to coat. Cook the chops until well browned, 3 to 4 minutes per side.
  • Serve and enjoy!

  • If you have time, allow the pork chops to rest at room temperature for 30 minutes. The pork chops should be 3/4 to 1 inch thick. They can have a large rim of fat. If it is thick, trim it down to 1/4 inch. Also, slicing through the fat every inch or so helps prevent cupping of the chop.
