ORANGE DATE CAKE

- 1. FOR THE CAKE: Mix 1/2 cup of the flour with dates, coconut, and nuts. Set aside. Cream together butter and sugar, add eggs, grated orange peel, flour (1 cup at a time), vanilla, buttermilk, baking soda and salt. Blend with mixer just until blended well.Stir in flour mixture with the dates, coconut and nuts. Pour into non-stick tube cake pan.
- 2. Bake in 350 degree oven for 45-60 minutes or until top is golden brown and toothpick inserted comes out clean. When cake comes out of oven poke holes in cake so the icing/filling can run into cake.
- 3. FOR THE FILLING/ICING Mix powdered sugar, orange juice and grated orange peel until blended. Spread over hot cake

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in orange juice and zest. Add flour to the creamed mixture alternately with milk, beating well after each addition., Pour into two greased and floured 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., In a large bowl, beat butter until light and fluffy. Add the confectioners' sugar, orange juice and zest; beat until smooth. Spread glaze between layers and over the top and sides of cake.

- Preheat the oven to 375°.
- Grease and flour 3 8-inch round cake pans.
- Mix the dry ingredients together and set aside.
- Beat the egg yolks until they are light, thick, and lemon colored and form a ribbon when you pull the beaters out.
- Set aside.
- Cream the butter thoroughly.
- Add the sugar gradually and beat until light and fluffy - 5 minutes on high.
- Add the egg yolks and beat well.
- Mix the milk, orange juice, vanilla, and orange zest.
- Add the flour alternately with the milk mixture beating thoroughly after each addition.
- Spoon into prepared pans.
- Bake for 20 - 30 minutes or until cake tests done.
- Cool in pans 5 minutes.
- Turn out carefully to cool completely.

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in orange juice and peel. Add flour to the creamed mixture alternately with milk, beating well after each addition.
- Pour into 2 greased and floured 9"-inch round baking pans. Bake at 350 for 25-30 minutes or until toothpick inserted near center comes out clean. Cool for 10 minutes before moving from pans to wire racks to cool completely.

- Preheat oven to 350°F Grease and flour two 9-inch round cake pans.
- To prepare cake, combine sugar and butter; cream with a mixer at medium-high speed. Add eggs and orange zest; blend well.
- Reduce speed to low and beat in orange juice. Add flour alternately with milk; beat well. Pour into pans.
- Bake 22 to 25 minutes, until a wooden toothpick inserted in the center comes out clean. Cool in pans for 15 minutes. Remove from pans and cool completely on wire racks.
- To prepare icing, combine butter, orange zest, orange juice, and half the confectioners' sugar. Using a mixer at low speed, beat until well blended. Gradually add remaining sugar; beat until smooth.
- Spread about ¾ cup of the icing on top of one layer. Place second layer on top. Spread remaining icing in a thin layer over top and sides.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
- Squeeze the orange and reserve 1/3 cup of the juice. Grind the orange peel and pulp, raisins and 1/3 cup walnuts together. Set aside.
- In a large bowl, combine flour, sugar, baking soda and salt. Add milk, shortening, and eggs. Beat for 3 minutes at medium speed. Stir in orange-raisin mixture.

OLD-FASHIONED ORANGE SLICE CAKE

- Gather the ingredients.
- Preheat oven to 250 F. Grease and flour a 10-inch tube cake pan .
- Cream butter and sugar together in a mixing bowl with an electric mixer, until light and fluffy.
- Add eggs, one at a time; beat well after each addition.
- Dissolve baking soda in buttermilk and add to batter.
- Place flour in large bowl and add dates, orange slice candy, and nuts. Stir to coat all pieces thoroughly.
- Add flour mixture and coconut to creamed mixture. At this point, batter will be stiff. It might be easier to mix with hands or a sturdy spoon.
- Spoon batter into prepared cake pan and spread evenly.
- Bake in preheated oven for 2 1/2 hours.
- Just before cake comes out of the oven, make topping. In a medium bowl, combine orange juice and confectioners' sugar. Stir until smooth and well blended. Gradually pour juice mixture over hot cake as soon as it comes out of the oven. Use a toothpick to prick cake in several places, if desired. Let orange slice cake stand in pan overnight.
- Carefully invert cake onto a cake plate; slice and serve.

- European Sponge Cake. Beat fourteen eggs and one pound of fine sugar well in a kettle, then set in a hot water bath and beat until thoroughly heated. Beat cold again, until light and firm; add one tablespoonful of water.

Beat up well in a bowl the yolks of eighteen eggs with one pound of powdered sugar; beat very stiff the whites of eighteen eggs and arid one-fourth of it to the sugar in, the bowl, then mix in lightly one pound of sifted pastry flour (one-half pound of cornstarch and one-half pound of flour mixed, is still better), the rest of the whites of egg and lemon or vanilla.
- Vienna Sponge Cake. Beat the whites of twenty-eight eggs very stiff (it is best to use it two or three days old); add by handfuls one pound of powdered sugar, then the yolks of twenty-eight eggs, and last one pound of fine cake flour; mix as light as possible; bake quick in deep, square mould.
- Pound Cake. One pound of powdered sugar and one pound of good dry butter, rubbed to cream; add slowly, one at a time, ten eggs, which you beat a little first, and in warm weather, keep in ice water; then mix in one pound (good weight) of pastry flour, mace and vanilla.
- American Sponge Cake. Beat up one pound of powdered sugar with twelve eggs, set in hot water bath until warm, beat until it does not run down quick from the beater, when raised; then add lightly one pound of pastry flour, sifted, with one-half of an ounce of baking powder.
- Gold Cake. One-half of a pound of butter, three-fourths of a pound of sugar, rubbed to cream; add slowly five eggs, one-third of a pint of milk, and then one pound of pastry flour with one teaspoonful of baking powder, a little egg coloring and vanilla.
- Marble Cake. Take the above gold cake mixture. Place one-half of a teaspoonful of red coloring in a china bowl and mix in enough dough to make it a bright red.
- Citron Cake. Rub one and one-half pounds of butter with one and three-fourth pounds of powdered sugar to cream; add slowly one and one-half pints of egg whites, then two pounds of flour with one-half of a teaspoonful of baking powder; beat the eggs a little first; add one and a half pounds of citron, sliced thin and rolled in flour; almond flavor.
- Lady Cake. Cream together two pounds of powdered sugar with one and one-half pounds of butter; rub in slowly the whites of eight eggs, then beat the whites of eight more eggs to a froth and add part of it to the above, the rest alternately with two and one-fourth pounds of pastry flour.
- Silver Cake. One-half of a pound of butter, one-half of a pound of lard, one and one-half pounds sugar, all creamed together; add one pint of egg whites slowly, then three-fourths of a pint of milk with one-fourth of an ounce of soda in it; then two pounds of flour with one-half of an ounce of cream of tartar; mix light.
