Cut out cookies with a jam filling.

Provided by Regina

Categories     World Cuisine Recipes     European     Austrian

Time 2h

Yield 12

Number Of Ingredients 7

1 ¼ cups unsalted butter, softened
⅔ cup white sugar
2 cups sifted all purpose flour, divided
1 ¾ cups ground almonds
⅛ teaspoon ground cinnamon
5 tablespoons raspberry jam
⅓ cup confectioners' sugar for decoration

Steps:

  • Beat butter and sugar together until the mixture is light and fluffy. Stir in 1/2 cup flour, the ground almonds, and cinnamon. Mix in remaining flour 1/2 cup at a time until the mixture becomes a slightly stiff dough.
  • Shape the dough into a ball; divide it in half. Wrap both halves in wax paper or plastic wrap, and refrigerate for about one hour.
  • Preheat oven to 325 degrees F (165 degrees C). Line a baking sheet with parchment paper.
  • On a lightly floured surface, roll half of the dough into a sheet 1/8 inch thick. With a 2 1/2-inch cookie cutter, cut as many circles from the sheet as you can. Knead the leftover scraps of dough into a ball and roll it out again into a 1/8 inch sheet. Cut out more circles. You should now have about 12 circles.
  • Arrange cookies on prepared baking sheet, leaving about 1 inch of space between them. Refrigerate while working with remaining dough.
  • Repeat the rolling and cutting process with the other half of the dough, but after placing the second batch on the baking sheet, cut out the center of each circle with a 1/2 inch cookie cutter.
  • Bake cookies in preheated oven until light brown, 10 to 15 minutes. Cool on wire rack for 20 minutes.
  • Spread a thin coating of jam on each of the cookie rounds. Set a cutout cookie on top of each, pressing the two together so they make a sandwich. Spoon a dab of jam into the opening of each tart and sprinkle the tops with confectioners' sugar before serving.

AUSTRIAN LINZER TORTE

Austrian Linzer Torte image

This recipe for an authentic Austrian Linzertorte is from my mother who grew up in Linz and still lives there. She always bakes the torte 3 days ahead because it develops its real flavor over a few days.

Time P3DT2h10m

Yield 12

Number Of Ingredients 9

2 cups all-purpose flour
2 cups finely ground almonds
1 ¼ cups white sugar
1 teaspoon baking powder
½ teaspoon ground cinnamon
⅛ teaspoon ground cloves
1 ⅛ cups unsalted butter
4 egg yolks, divided
6 tablespoons red currant jam

Steps:

  • Place flour, ground almonds, sugar, baking powder, cinnamon, and cloves on a clean work surface. Add butter and 2 egg yolks; knead quickly to form a smooth dough. Wrap dough in plastic wrap and refrigerate for 1 hour.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 10-inch springform pan with remaining 1 tablespoon butter.
  • Press 2/3 of the dough evenly in the pan so that the entire bottom is covered. Spread red currant jam on top. Divide remaining dough into several pieces and roll into 1/3-inch strands between your fingertips. Arrange the strips over the jam in a neat lattice pattern. Place the last strip along the sides of the pan to form a rim.
  • Beat remaining 2 egg yolks and brush over the lattice and rim, taking care not to splash onto the jam.
  • Bake in the preheated oven until golden brown, about 45 minutes. Watch carefully towards the end of the baking time to make sure the torte does not turn too dark. Let cool and remove gently from the pan. Store for at least 3 days in a cool place before serving.

LINZER TORTE

Linzer Torte image

Linzer Torte is a holiday classic in the Austrian, Hungarian, Swiss, German and Tyrolean traditions, often prepared for Christmas. The recipe for this rich dessert has been known since the late 1600s and is thought to have originated in Linz, Austria. A copy from 1696 can be found at the Vienna Stadt-und Landesbibliothek. In the 1850s, an Austrian traveler by the name of Franz Hoelzlhuber allegedly brought the Linzer Torte to Milwaukee, from where the recipe spread over the United States. PS Let common sense be your guide when turning on the oven to pre-heat.

LINZER TORTE

Linzer Torte image

This is based on a Jacques Pepin recipe of the same name. It's an elegant and scrumptious dessert that's simpler to make than it looks.

Provided by Arsenio

Categories     Tarts

Time 1h15m

Yield 8 serving(s)

Number Of Ingredients 11

1 3/4 cups flour
1/3 cup sugar
1 cup toasted almond, chopped and ground
8 ounces sweet butter, softened and cut into cubes
3 egg yolks
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg
12 ounces raspberry jam (I prefer Smuckers seedless red raspberry jam)
1 1/2 tablespoons kirsch liqueur
1/2 cup confectioners' sugar

Steps:

  • Combine the flour, sugar and ground almonds into a pile on a large workspace, then make a well in the middle of the mound.
  • Add the butter, egg yolks, vanilla extract, cinnamon and nutmeg into the well.
  • Knead the dry and wet ingredients with your hands until well-blended and the butter is thoroughly incorporated into the mix.
  • Prepare a springform pan by lining it with parchment paper.
  • Take roughly 3/4 of the dough and spread it all uniformly across the bottom of the springform pan. It should be at least 1/2 an inch thick, with a slight lip around the edges.
  • Combine the jam and brandy in a mixing bowl, then spread across the dough in the springform pan. The lip of the dough should still be higher than the jam; if not, use a little of the remaining dough.
  • Divide the rest of the dough into thin strips, and place them across the top of the dough, forming a lattice from edge to edge.
  • Bake the torte in a 375-degree oven for 35 minutes, until the jam is bubbling a bit and the dough is starting to turn golden brown.
  • Remove from the oven and let rest for 15 minutes.
  • Carefully peel down the edges of the parchment paper away from the edges.
  • Sprinkle the top of the torte with confectioner's sugar.

  • Beer. In ancient times, beer was often drank more frequently than water as its alcohol content generally kept it more sterile. So it’s little surprise the world’s oldest known written recipe is for beer!
  • Nettle Soup and Roast Hedgehog. In 2007, a team of researchers in Wales began the task of reverse engineering British cooking to discover the country’s oldest recipes.
  • Kishkiyya (and more than 600 other recipes) Drinking was prohibited in 10th century Baghdad, but that apparently didn’t prevent people there from needing the occasional hangover cure.
  • Spayed Sow’s Womb (and hundreds of other recipes) The oldest surviving western cookbook is attributed to Marcus Gavius Apicius, a Roman gourmand who was said to be so passionate about extravagant food that he poisoned himself when he could no longer afford the best cuisine.
  • Hen in Winter (and other recipes) In 2013, even older recipes were discovered in another medieval English cookbook, this time in Durham Cathedral. Dating from 1140 AD, the recipes originally were thought to be medicinal, but new research discovered a number of culinary recipes among the tinctures and salves.
  • Porpeys in broth (and approximately 200 other recipes) In 2009, researchers in England announced they had translated a handful of recipes from a medieval cookbook, written by the chefs of Richard II around 1390 AD.
  • Meat cooked in water (and 34 other recipes) The oldest written recipes in the world date from Mesopotamia around 1600 BC – about 35 different recipes were found inscribed on three clay tablets, including many meat and vegetable broths.

  • Linzer torte. The Linzer Torte is extolled as the world’s oldest recipe for a cake, but no one seems to know when exactly it was invented – or where – though it’s believed to be named for the Austrian city of Linz.
