This was one of my father's favorite dishes, a staple of Depression-era cooking when fresh meat was scarce and soup stretched everything. Simmered until thick, with chunks of ham - even lima-bean-haters enjoy this hearty soup.

- Place beans in a large pot; cover with 2 inches water. Bring to a boil. Remove from heat, cover, and let stand for 1 to 2 hours. Drain and rinse. Transfer beans to another container.
- Combine ham bone and 8 cups water in a large saucepan. Simmer over medium-low heat until remaining meat falls off the bone, about 2 hours. Remove and discard bone. Use a slotted spoon to transfer meat to a bowl.
- Heat oil in a skillet over medium heat. Add celery and onion; cook and stir until onion is translucent, 7 to 10 minutes. Add cooked ham bone meat, lima beans, and diced ham. Reduce heat and simmer, adding additional water as needed, until soup is thickened to desired consistency, about 90 minutes.
- Stir carrots, salt, pepper, and parsley into the soup. Let simmer until carrots are soft, about 30 minutes more.

- Fill large pot 1/2 with water. Add limas and about 1 teaspoon salt. Bring to a boil, then turn down heat and simmer for about 20 minutes. Add one can petite tomatoes and simmer for 20 minutes more. Add one can whole corn with juice and one stick of butter. Bring to boil and add dumplings, breaking them into about 3-inch strips. Turn down heat and allow to simmer about 20-30 more minutes. Season to taste with salt and pepper. Stir and check to make sure dumplings do not stick together.
OLD FASHIONED BEAN SOUP RECIPE
This old fashioned recipe for ham and bean soup is full of flavor. It is easy to make and can be made on the stovetop or in a slow cooker.

- Rinse beans, picking out any bad ones. Cover with water so there is a couple of inches of water over the top of the beans; soak overnight. Drain and add 4-5 cups water (enough to cover beans) in a large soup pot. Bring to quick boil over high heat. Reduce heat and add remaining ingredients. If soup bone is not mostly covered with water add a little more. Bring soup back to a boil and then reduce heat to low; cover and simmer for 2 1/2 hours, until beans are very tender. When beans are tender, remove the soup bone and cut off any meat and add back into the soup. If you have additional leftover ham, some can be added to the soup to provide a little more meat to the soup if desired. If mixture appears too thick, add a little boiling water. SLOW COOKER: Use basically the same directions only after bringing the beans to a quick boil, pour them and the water into the slow cooker. Add all the remaining ingredients, cover and turn slow cooker on low. Cook for 10 hours or until beans are tender. To speed cooking time you can cook on high for the first hour and then turn down to low and cook for 7 hours. Note: A small amount of baking soda added to the soup during cooking will reduce the amount of gas in the beans.

- Wash beans, discarding imperfect ones. Cover beans with 2 1/2 quarts water; refrigerate, covered, overnight.
- Next day, turn beans and water (there should be 6 cups) into 6-quart kettle.
- Add ham hocks, onion, garlic and bay leaf. Bring to boiling; reduce heat, and simmer, covered tightly, about 2 hours, or until the beans are almost tender.

- Sort Dried Lima Beans. Scatter a handful of dried lima beans on a white plate. Examine the beans carefully, tossing any dirty, wrinkled or broken beans.
- Place Sorted Beans in Bowl. Pour the beans into a large bowl. Repeat steps one and two until all beans have been inspected, sorted and poured into the large bowl.
- Cover in Water. Fill the bowl with cold water until the beans are completely covered. Ideally, use at least three times the amount of beans, as recommended by Michigan State University Extension.
- Soak Beans Overnight. Soak the beans overnight. By the next day, you should find that the beans have doubled in size. In fact, most of the water should have been absorbed.
- Rinse, Drain and Repeat. Rinse and drain the beans at least three times. When you are finished, the water should run clear.
- Cover With Fresh Water. Pour the beans into a heavy pot or saucepan. Add fresh water to the pot until the beans are covered. Ideally, there will be at least 1 inch of water above the beans.
- Boil Your Beans. Bring the beans to a boil over medium-high heat. The amount of time it takes to produce a boil depends on the size of the pot you use, the amount of beans you are cooking and the temperature you use to cook them.
- Cook Lima Beans. Reduce the heat to low once the beans have boiled. Cook lima beans by simmering them for 40 to 60 minutes or until tender. During the simmering process, stir the beans regularly to avoid sticking.
- Remove, Strain and Serve. Remove from heat once the beans are cooked completely. The beans are completely cooked once they can be mashed easily with a fork or your fingers.
