OLD-FASHIONED HOT FUDGE SAUCE
This is a very classic hot fudge for all your chocolate whims. Of course it is perfect for ice cream, but consider using it as a sauce over cheese cake ...yum.

Steps:
- Fill the lower pot of a double boiler half way and bring to a boil. Melt chocolate, butter, and salt together in upper pot. Add the sugar, 1/2 cup at a time, stirring after each addition.
- Gradually add the evaporated milk, a little at a time and continue stirring until well mixed. Serve hot over ice cream. Extra sauce maybe stored in refrigerator and reheated in microwave.

- Add all ingredients to a small saucepan.
- Heat over medium heat, whisking constantly until the mixture boils and thickens.
- Serve over ice cream. Cool, cover and store in the refrigerator.
15-MINUTE OLD-FASHIONED HOT FUDGE RECIPE
Steps:
- Gather the ingredients.
- In a medium bowl, whisk together the sugar, flour, and cocoa powder.
- In a medium saucepan over medium heat, combine the milk, butter, and vanilla. Cook, stirring, until the butter has melted.
- Add sugar mixture to the milk mixture while constantly whisking.
- Bring to a boil, stirring constantly until thick and smooth, about 5 minutes.
- Remove the pan from the heat, transfer the sauce to a bowl, and let it cool completely.
- Use right away or cover and refrigerate (once refrigerated, it will last for a week).

Steps:
- Grease an 8x8 inch square baking pan. Set aside.
- Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.
- Place candy thermometer in pan and cook until temperature reaches 238 degrees F(114 degrees C). If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
- Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen. Do not under beat.
- Pour into prepared pan and let cool. Cut into about 60 squares.

- In a large, heavy saucepan, bring the cream, corn syrup and salt to a boil over medium-high heat. Whisk until blended. Remove the pan from heat. Immediately add the chocolate and vanilla to the pan and whisk until smooth. Set aside for about 2 hours to cool completely, whisking every 15 minutes or so to keep the ganache emulsified. When cool, transfer the ganache to a rigid plastic or glass container, cover, date and refrigerate overnight before using. Ganache will keep refrigerated for up to three months.
