HOBO BREAD
This is an old fashioned recipe that goes back to the pioneers! Easy to make and absolutely delicious. Great reviews!

Steps:
- Bring water to a boil, remove from heat, add raisins and let sit for one hour Do not pour off extra water. Whisk together flour, sugar, salt, baking soda in a large bowl. Pour in soaked raisins with extra water, vanilla extract and butter. Mix with a spoon
- Fold in nuts. Spray a 9 x 5 loaf pan with cooking spray. Spread dough in pan. Bake in preheated 350 degree oven for 45 to 50 minutes or until center tests done. Remove from oven and cool in pan for 10 minutes before removing. You could add a powdered sugar glaze to this bread if desired. Makes 1 loaf
HOBO'S DELIGHT
This recipe combines hamburgers with onions, baby carrots, and potatoes in individually cooked foil packets. This makes clean up a snap, and keeps the grill clean, too. This also works well with round steaks.

- Preheat grill for medium-high heat.
- Form the ground beef into individual patties, and place each patty on a piece of foil large enough to hold the patty and some vegetables. Layer each patty with onion slices, carrots, and potato slices. Season with seasoned salt, salt, and pepper to taste. Wrap foil around food, and seal each packet tightly.
- Grill 30 minutes, or until the potatoes are tender. Carefully open each packet (the steam that escapes will be very hot), and serve.

CAMPER'S HOBO DINNER
My kids had this at their summer camp. My version's a bit easier, they had to peel the potatoes with their teeth!

Steps:
- Place veggies and hamburger pattie in middle of large sheet of aluminum foil.
- Sprinkle with seasoned salt.
- Bring up the two long sides of the foil to meet above the food, fold (crimp) the foil several times until it is snug against the food.
- Fold (crimp) the short ends of the foil several times until snug against the food.
- This will seal the food in and prevent leakage.
- Place package directly on hot charcoal and cook for about 15 to 20 minutes each side (or, you can place package in a 350-degree oven for 45 minutes to 1 hour).
- Make as many packages as needed.

- Preheat oven to 400 degrees F (200 degrees C). Line a 9x13 inch baking pan with aluminum foil.
- Shape the ground beef into patties and place in pan. Layer the vegetables on top of the beef patties, starting with the potatoes, then carrots and finally onion rings. Season with salt, pepper and garlic salt to taste.
- Cover with aluminum foil and seal edges. Bake in preheated oven for 1 hour, or to desired doneness.

OLD FASHIONED HOBO DINNER
I have been making these for 40 years and eating them since I was a kid. My Momma used to put cabbage in hers. I like the zucchini squash and broccoli also. You can pretty much use any veg you want in these. Be sure to use butter or margarine for a sauce that is yummy. Otherwise it will be too dry. It may not look very pretty but...

- 1. Pre heat oven to 400 degree. First I get a heavy duty aluminum foil and make 2 sheets where they cross each other in the middle. (to make it larger than a regular sheet). Place a good portion of hamburger, in a patty, approx. 7 to 9 inches in diameter and about 1/2 to 3/4 inch thick, on the foil. Salt & pepper to taste.
- 2. Place sliced onions and potatoes next on top of the hamburger. Salt & pepper again. (some will slide off to the side) That is ok. Then place the squash and broccoli (or what ever veggies you have) on top of that. Pyramid style. Again, it's ok if they slide to the side a bit.
- 3. Salt & pepper to taste again. (we like salt & pepper) Add the butter or margarine on top of all of the veggies. I use about 2 - 3 Tbsp. on each serving depending on the amount of veggies added.
- 4. I then fold it up around the whole thing. Try to keep it as triangular as possible. Add another piece of foil underneath of this and fold it up around the whole thing. This is to catch any liquid that might seep out. Seal it up on top.
- 5. Bake at 400 degrees for approx. an hour. Check it at 45 minutes and see it the potatoes are soft. The meat should be done if it is not too thick of a patty. The juice is what is great with this meal it is the best tasting veggies ever. And you just dump it onto a plate and enjoy it. Throw the aluminum foil away. And not much left to clean up too.

- Place the brisket and contents of spice packet in a Dutch oven. Add the peppercorns, bay leaves and enough water to cover; bring to a boil. Two kinds of raisins beautify this humble quick bread. This is an unusual bread baked in 3 coffee cans. It must be started the night before.

- Place the dark and golden raisins in a medium bowl. Dissolve baking soda in boiling water, and pour over raisins. Let stand overnight without stirring.
- Preheat the oven to 350 degrees F (175 degrees C). Grease three 1 pound sized coffee cans.
- In a large bowl, stir together the flour, sugar and salt. Stir in the raisins with their water, and the oil until well blended. Batter will be thick. Divide the batter evenly between the 3 cans.
- Bake for 1 hour in the preheated oven, or until a toothpick inserted into the crown comes out clean. Lay cans on their side to loosen the bread as it cools.

- coat meat with flour then brown in the oil in a skillet on stove top.
- takes about 2 minutes on med heat.
- lightly salt and pepper while browning.
- In a stew pot place meat and cover with water.
- Add onion, rosemary, celery seed, and boullion cubes.
- Simmer on medium heat for 2 1/2 hours or until meat real tender.
- May have to add more water occasionally.
- After meat is tender, add potatoes and carrots and cook till vegetables are tender.
