OLD FASHIONED HAM AND BEANS

Old Fashioned Ham and Beans image

Grandma always made bean soup in the week after Easter with the left-over ham bone and meat.

OLD FASHIONED BEAN SOUP RECIPE

Old Fashioned Bean Soup Recipe image

This old fashioned recipe for ham and bean soup is full of flavor. It is easy to make and can be made on the stovetop or in a slow cooker.

Provided by RecipeTips

Number Of Ingredients 8

2 cups dried navy beans
water
1 1/2 pounds ham butt, or large ham bone
1/2 cup sliced onion
1 cup chopped celery (with leaves)
3 carrots - medium (optional)
1/8 teaspoon black pepper
1/4 teaspoon italian seasoning

Steps:

  • Rinse beans, picking out any bad ones. Cover with water so there is a couple of inches of water over the top of the beans; soak overnight. Drain and add 4-5 cups water (enough to cover beans) in a large soup pot. Bring to quick boil over high heat. Reduce heat and add remaining ingredients. If soup bone is not mostly covered with water add a little more. Bring soup back to a boil and then reduce heat to low; cover and simmer for 2 1/2 hours, until beans are very tender. When beans are tender, remove the soup bone and cut off any meat and add back into the soup. If you have additional leftover ham, some can be added to the soup to provide a little more meat to the soup if desired. If mixture appears too thick, add a little boiling water. SLOW COOKER: Use basically the same directions only after bringing the beans to a quick boil, pour them and the water into the slow cooker. Add all the remaining ingredients, cover and turn slow cooker on low. Cook for 10 hours or until beans are tender. To speed cooking time you can cook on high for the first hour and then turn down to low and cook for 7 hours. Note: A small amount of baking soda added to the soup during cooking will reduce the amount of gas in the beans.

OLD FASHIONED BEAN AND HAM SOUP

  • Combine drained, soaked beans with diced celery, grated carrot, and chopped onions in slow cooker.
  • If you are using pan juices (i.e.,ham juice from the bottom of the roasting pan):Refrigerate pan juices for at least four hours, until very cold.Using a fine mesh sieve, strain the pan juices to filter out any fat solids and other bits you might not want in your soup.Use 16-24 ounces of pan juices in your soup; less if your ham was particularly salty or the juices very thick.Add enough water to the pan juices to make a total of 1½ to 2 quarts of liquid, depending upon how thick you like your soup. (i.e., more liquid=thinner soup) Add liquid to the ingredients in the slow cooker. If you DO use pan juices as part of your liquid: Hold off on adding any additional seasoning until after the first 4 hours. If you DO NOT use pan juices as part of your liquid: Add the brown sugar and black pepper at this time.DO NOT add any salt to your Navy Bean Soup at this time. Ham bones are notoriously salty, and it is easier to know how much salt to add once the ham bone has cooked out into the soup.

  • Rinse the beans and pull out any bad/shriveled ones. Place in a large dutch oven with ham bone and water.
  • Remove the ham bone and any large chunks that fall off. Don’t worry about small ones. Allow to cool. Pull meat off bone & break into bite-size pieces. During the same time the ham is cooling, fat will form on the top of the bean/broth mixture. As it “hardens” skim it off.
  • Add the shredded ham back into the pot. Add celery, carrots, potatoes, and spices. Bring to a boil. Reduce heat and allow to simmer for 20 to 30 minutes or until vegetables are tender.
