1 pkg. (11 oz.) KRAFT Caramels
2 Tbsp. 2% milk
1/2 cup butter or margarine
1 can (5 oz.) evaporated milk (about 2/3 cup)
1-1/2 cups sugar
1 pkg. (10 oz.) JET-PUFFED Miniature Marshmallows
4 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate, chopped
1/2 tsp. vanilla
1 cup coarsely chopped walnuts

Steps:

  • Line 13x9-inch pan with foil, with ends of foil extending over sides; spray with cooking spray. Cook caramels and 2% milk in medium saucepan on low heat 5 to 7 min. or until caramels are completely melted and mixture is well blended, stirring constantly. Remove from heat.
  • Cook butter, evaporated milk, sugar and marshmallows in large saucepan on medium heat 8 to 10 min. or until mixture comes to full rolling boil, stirring constantly. Cook 5 min., stirring constantly. Remove from heat. Add chocolate and vanilla; stir until chocolate is completely melted and mixture is well blended.
  • Pour chocolate mixture into prepared pan; spread to cover bottom of pan. Pour caramel mixture over chocolate layer; swirl slightly with knife.
  • Refrigerate several hours or until firm. Use foil handles to remove fudge from pan before cutting into squares.

This old fashioned fudge recipe will make you very happy, but only if you make it correctly. Pay close attention to the instructions, because they are universal to pretty much all fudge making.

2 cups sugar, (14 oz)
1 heaping Tablespoon cocoa*, (See Notes)
1 Tablespoon corn syrup, (light or dark. Any liquid sugar will work here such as maple syrup, honey or molasses)
1/2 teaspoon salt, (my addition. Rounds out the flavors and keeps the fudge from seeming too sweet)
1 cup whole milk, (8 oz)
1 Tablespoon butter
1 teaspoon vanilla
1 cup toasted pecan halves or pieces, (use whatever nut you prefer or leave them out altogether)

Steps:

  • Line an 8"x8" pan** (See Notes) with parchment or non-stick foil with a piece that is long enough to line the bottom and come up and over two opposite sides of the pan. (use these as "handles" to get the cooled fudge out of the pan). Spray with pan spray. You can also spray or butter the pan well, but using parchment or non-stick foil will make it easier to get the fudge out of the pan.
  • Place the sugar, cocoa powder, corn syrup, salt and milk in a heavy-bottomed saucepan that is much larger than you think you need. 3 quart size will work just fine.
  • Stir well, and cook over medium heat until the mixture comes to a boil. You can stir it and scrape the sides of the pan until it starts to boil.
  • Allow the mixture to boil until it reaches 234F. This is just under the soft ball stage, but this is the correct temperature for making cocoa fudge. (If you're making chocolate fudge, cook to 238F, which is the soft ball stage.)
  • Move the pan off the burner and drop in the butter and the vanilla. Don't stir them in (if you stir too soon, you'll end up with grainy fudge).
  • Let the mixture cool to 110F. The pan will feel warm but by no means hot. If you're using a "leave-in" candy thermometer, there will be no question. If you don't have one, occasionally check the temperature with your instant read thermometer (that's what I do).
  • Once the candy has cooled to the correct temperature, begin stirring vigorously with a wooden spoon. You can also scoop up a bunch of the warm candy and let it pour back into the pot. This will make you feel fancy, and it will help to bring the temperature of the candy down more quickly. Keep stirring and stirring until the candy is just starting to lose its gloss and thicken up.
  • Dump in the pecans if using, and stir them in quickly.
  • Scrape the now-quite-thick fudge into the pan and moosh it into the corners with a spatula. I sprinkled some flaky sea salt on top of mine. You can too if you want. Or not.
  • Allow the candy to set up for at least an hour before slicing with a sharp knife.
  • Store at room temperature in a tightly-sealed container for 3-4 days. But it will be gone before then.

½ cup unsweetened cocoa powder
2 cups white sugar
¼ teaspoon salt
1 tablespoon light corn syrup
1 cup milk
1 tablespoon vanilla extract
2 tablespoons butter

Steps:

  • In a medium saucepan, stir together the cocoa powder, sugar and salt. Mix in corn syrup, and milk until well blended. Add butter, and heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Stir occasionally.
  • Remove from heat, and beat with a wooden spoon until the mixture is thick and loses its gloss. Stir in vanilla, and pour into a buttered 9x9 inch baking dish. Let cool until set. Cut into small squares to serve.

I always had trouble making caramel icing before I got this recipe from a friend's mother. Putting the cold butter in last made all the difference for me. It tastes so good too!

3 c white granulated sugar
1 1/3 c white whole milk
1 1/2 stick cold butter
5 Tbsp white granulated sugar

Steps:

  • 1. Combine 3 cups sugar and milk in a heavy sauce pan on medium heat. Stir together for a few minutes. Allow to continue to heat.
  • 2. While milk and sugar are heating, place a small black iron skillet on med. to med. high heat. Add the 5 tablespoons on sugar. Stir in the skillet until the sugar liquifies and then turns golden brown. It will be bubbling hot.
  • 3. Now the milk and sugar should be very hot. Carefully pour in the browned sugar from the skillet. Whisk together and cook for about 15 minutes or until the mixture reached the very soft ball stage. (test by dropping a little off a spoon into a small glass of cool water. When a small soft ball forms, it's ready.)
  • 4. Remove from heat and using an electric mixer, mix in 1 and 1/2 sticks cold butter...never margarine! Continue to beat until cooled to spreading consistency.
  • 5. If too thick, you can thin by beating in milk a tablespoon at a time. Make sure your cake in completely cooled or this heavy icing may cause the top to split. It'll still taste super though!

1 cup butter
2 1/4 cups firmly packed brown sugar
1 cup light corn syrup
1 (14-oz.) can sweetened condensed milk (not evaporated)
1 1/2 teaspoons vanilla

Steps:

  • Line 9-inch square pan with foil, extending foil over sides of pan. Lightly butter foil.
  • Melt butter in 3-quart saucepan. Add brown sugar; mix well. Stir in corn syrup. Cook over medium-low heat until sugar dissolves and mixture is well blended.
  • Remove saucepan from heat. Stir in sweetened condensed milk. Cook over medium heat for 20 to 30 minutes, stirring constantly, until candy thermometer reaches firm-ball stage (244°F.).
  • Remove saucepan from heat; stir in vanilla. Pour into buttered foil-lined pan. Cool 30 minutes.
  • When candy has completely set, carefully remove from pan by lifting foil. With thin bladed knife, cut candy into pieces, using a light sawing motion. Wrap individual pieces in waxed paper. Store in refrigerator.

4 cups granulated sugar
1 cup evaporated milk
1 stick butter cut into chunks
1 tablespoon good vanilla
1/8 teaspoon baking soda

Steps:

  • Mix 3 cups of the sugar and evaporated milk in a heavy 3-quart saucepan.
  • Bring to a boil over low to medium heat stirring with rubber spatula so sugar does not crystalize.
  • Bring to slow boil and keep it hot.
  • Caramelize the remaining 1 cup of sugar in a 10-12 inch cast iron skillet.
  • Cook over medium heat, stirring constantly and scraping side of skillet with silicone spatula, until sugar begins to melt.
  • Continue to cook until sugar melts and becomes syrup and turns to a medium-golden color.
  • Your candy Thermometer temperature will register between 320 degrees F to 350 Degrees F.
  • DO NOT SCORCH THE SYRUP
  • Slowly pour the syrup into the boiling sugar and milk mixture and cook to the soft ball stage.
  • This is about 238 degrees on your candy thermometer.
  • Stir in butter, vanilla and baking soda .
  • Pour HOT mixture into a bowl and beat with an electric mixer.
  • As the mixture cools the icing will become creamy.
  • This process takes about 15-20 minutes.
  • Keep your eye on the icing as it has a tendency to harden up quick so don't over beat.
  • Ice your cake with warm frosting.
  • If it begins to harden add a 1/2 teaspoon of hot water at a time.
