Packed with just the right amount of garlic, dill, and spice to give it a classic taste that you will love on hamburgers, sandwiches and more! Learn how to make these easy pickles in 40 minutes or less!

Number Of Ingredients 7

8 pounds of pickling cucumbers
14 cloves of garlic
7 Tbs. pickling salt
7 tsp. pickling spice
7 dill heads
8 cups of water
8 cups of vinegar

Steps:

  • Wash and remove the spines on the pickling cucumbers. Cut into rounds or icicles if desired or leave them whole.
  • Combine vinegar and water in a large stockpot and bring to a boil.
  • In each quart-sized canning jar place 1 head of dill, 2 cloves of garlic, 1 tsp. of pickling spice, 1 tbs. of pickling salt.
  • Pack the cucumbers into the canning jars, then cover with hot brine leaving 1/2 inch of headroom.
  • Remove any air bubbles from the jars, wipe the rims clean and place the jar lids on finger tight.
  • Process in a water bath canner for 15 minutes or according to your altitude.
  • After canning remove the jars and place on a towel in a draft-free place to sit for 24 hours. Any jars that have not seeled in 24 hours need to be reprocessed or placed into the refrigerator.

Number Of Ingredients 7

15 garlic cloves, peeled and halved, divided
15 fresh dill heads
4 pounds small cucumbers (3 to 4 inches long)
6 cups water
4-1/2 cups white vinegar
6 tablespoons canning salt
3/4 teaspoon crushed red pepper flakes

Steps:

  • Place five garlic clove halves and five dill heads in each of three hot 1-quart jars. Pack cucumbers into jars to within 1/2 in. of the top., In a large saucepan, bring water, vinegar, salt and pepper flakes to a boil. Carefully ladle hot liquid over cucumbers, leaving 1/2-in. headspace. Add remaining five garlic clove halves to each jar. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

My family famous recipe for crunchy dill pickles. Makes about 7 quart jars of pickles. Please let them rest in a cool dry place for 2 months before trying.

20 small to medium sized cucumbers (amount depends on size and how many fit in a jar)
2 heads dill (divided amongst the jars)
1 onion (cut into strips)
1 clove garlic (crushed)
1 quart vinegar
1/8 tsp alum
2 quarts water
1 cup canning salt

Steps:

  • If using your own cucumbers, pick them from the garden in the morning. If using store bought cucumbers, proceed to step 2
  • Place cucumbers in an ice water bath in the fridge for about 5 hours. This will make them crunchy.

17 -18 lbs pickling cucumbers (3-5-inch Long)
1 1/2 cups pickling salt
32 cups water
6 cups vinegar
3/4 cup pickling salt
1/4 cup sugar
9 cups water
2 tablespoons whole mixed pickling spices
2 tablespoons alum
14 teaspoons mustard seeds
17 garlic cloves
21 heads fresh dill

Steps:

  • Wash cucumbers using cloth and cold water.
  • Drain, Place in large crock or pot.
  • Mix 1 1/2 cups salt and 32 cups water to make 5% brine. If you need to, mix more in same proportions to cover cucumbers.
  • Poor brine over cucumbers and let stand 24hrs, then drain.
  • Wash and sterilize jars and lids. Keep jars in boiling hot water untill ready to use. Keep lids with seals in simmering (NOT BOILING)water untill ready to use.
  • Combine Vinegar, 3/4 cups salt, sugar, and 9 cups water.
  • Tie mixed pickeling spices in cheese cloth and add to vinegar, sugar, salt and water.
  • Heat to boiling then discard cheese cloth.
  • Pack cucumbers in clean HOT jars.
  • Add 2 teaspoons mustard seed, alum, 1-2 garlic cloves, 3 heads dill or 1 tabelspoon dill seed to each jar.
  • Cover with boiling water, filling jars 1/2" from top.
  • Put seals and lids on, process in a canner. If you don't have a canner, you can cover the jars with BOILING water and place in your oven at 200F for about 20 minutes. The jars and liquid need to be hot in order for it to seal.

5 cups white vinegar
1 cup canning salt
12 pounds pickling cucumbers, quartered or halved lengthwise
9 dill sprigs or heads
18 garlic cloves
18 dried hot chilies

Steps:

  • In a stockpot, bring water, vinegar and salt to a boil; boil 10 minutes. Pack cucumbers into nine hot quart jars within 1/2 in. of top. Place one dill head, two garlic cloves and two peppers in each jar. , Carefully ladle hot mixture into jars, leaving 1/2-in. headspace. . Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water.
