Steps:
- Line 8 or 9 inch square pan with foil.
- Mix sugar, cocoa and salt in a heavy 4-quart saucepan.
- Stir in whole milk.
- Cook over medium heat, stirring constantly until mixture comes to a full rolling boil.
- Boil without stirring until mixture reaches 234 degrees on a candy thermometer or until small amount of mixture dropped into very cold water forms a soft ball.
- Remove from heat and add butter and vanilla. Do Not Stir. Cool at room temperature to 110 degrees.
- Stir in pecans.
- Beat with a wooden spoon until fudge thickens and just begins to loose some of its gloss.
- Quickly spread into prepared pan.
- Cool completely.
- Cut into square.
- Store in a tightly covered container at room temperature.

- Butter an 8x8 inch dish.
- Place butter, chocolate chips and vanilla in a mixing bowl. Set aside.
- In a medium saucepan over medium heat, combine sugar, milk and marshmallows. Bring to a boil, stirring frequently. Reduce heat to low and cook 6 minutes more, stirring constantly. Remove from heat.
- Pour marshmallow mixture over contents of mixing bowl. Beat entire mixture until it thickens and loses its gloss. Quickly fold in nuts and pour into prepared pan. Refrigerate several hours until firm.

- Line a 9x13 baking dish with buttered parchment paper. Set aside.
- In a good sized sauce pan, heat butter, sugar, milk and cream. Stir frequently and watch closely. When temperature reaches 236 degrees F (medium soft ball stage) remove it from the heat.
- Stir in marshmallow fluff and chocolate chips until smooth.
- Spread into prepared pan.
- Chill for a couple of hours in the fridge, until set.
- Remove by lifting the edges of the parchment. Remove paper and cut into squares. Store in a cool place. Can be frozen in an airtight container.

OLD FASHIONED CHOCOLATE MARSHMALLOW FUDGE
This a traditional fudge using both granulated and brown sugars. The addition of the marshmallow makes it oh so creamy. My mom made this every Christmas and we kids couldn't wait to get our hands on it! Now I never fail to make it myself! We always use walnuts in the recipe but pecans would work too!

- Measure out all the ingredients before starting.
- Melt the butter in a large stock pot over medium heat.
- Add the sugar and evaporated milk, then stir to combine.
- Bring to a rolling boil for 8 minutes. When the temperature reaches 285-degrees F, remove it from the heat.
- Quickly add the vanilla extract, peanut butter, marshmallow fluff, and chocolate chips.
- Beat vigorously for 3 minutes.

- Line an 8-inch square pan with foil or wax or parchment paper and grease the inside with softened butter.
- Combine the chocolate chips, condensed milk and salt in a medium saucepan. Stir over medium heat until the chocolate has melted and the mixture is smooth. Remove from the heat and stir the vanilla and the nuts, if using, into the chocolate mixture. Pour it into the prepared pan and smooth the top.
- Let the fudge sit in a very cool dry place until the fudge has set, or if your room is warm, chill but only after it comes to room temperature, about 1 hour more.

- Grease an 8x8 inch square baking pan. Set aside.
- Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.

- Add butter, sugar and evaporated milk in heavy bottom good quality saucepan. I use my 6 quart Le Creuset Dutch Oven.
- Turn heat on high. Start stirring and continually stir while the mixture comes to a rolling boil.
- Continue stirring constantly for about 5 minutes or until it gets to a "soft ball" stage. Your candy thermometer should read between 234 - 240 degrees. If you don't have a candy thermometer, after 5 minutes drop a small dollop of the sugar mixture into a glass of cold water. If it forms a soft ball "clump" the sugar mixture is hot enough. If the ball doesn't form, cook for another minute or so.
- Remove from the pan from the heat; stir in the chocolate chips, and marshmallow creme. After a few stirs, add the vanilla. Mix until well blended then add nuts and stir to combine.
- Pour into a buttered 9 x 13 inch pan.
- Let the fudge completely cool at room temperature before cutting into squares.
