OLD POST OFFICE CHARLESTON CHEWY CAKE
A friend made these, and I had to have the recipe from her! It originated from The Post & Courier newspaper, May 2000. Wonderful flavor with a nice little chewy texture. YUMMY!

Steps:
- Combine butter and brown sugar in mixing bowl and beat well.
- Beat in eggs, one at a time.
- Add salt and sifted flour, mixing well.
- Stir in vanilla and pecans.
- Pour into a greased and floured (or use Bakers' Joy) 9x13-inch cake pan.
- Bake at 325 degrees for 30 minutes or until cake tests done.
- Cut into bars.
CHEWY CAKE
A cross between cake and candy with flavors of chocolate, coconut and nuts.

Steps:
- Preheat the oven to 350 °F. Lightly grease a 13 by 9-inch baking pan.
- In a large bowl, mix together the brown sugar, flour, butter, eggs, coconut, vanilla, pecans and chocolate chips until well combined. Spread the batter evenly in the prepared pan and bake for 30 to 35 minutes, until a toothpick inserted through the middle comes out clean. Cool the cake completely in the pan before cutting it into squares.
OLD FASHIONED CHEWY CAKE
I found this recipe when we were first married 48 yrs ago. My family had always loved it. I hadn't made it now for several years but came across it again a couple of months ago and we still love it just as much!

Steps:
- 1. In a large saucepan combine dried fruits, sugar, hot water, and butter. Bring to a boil and simmer for 5 minutes. Cool.
- 2. Combine flour, baking soda, cinnamon, cloves or allspice, salt. Stir into cooled boiled mixture.
- 3. Bake in 8X8 greased pan at 350 degrees for 35-40 minutes. Cool before cutting.
- 4. You could frost it, but we've always liked it just plain.

This is a wonderful chocolate cake that was made in the olden days. It is absolutely delicious, yet simple.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. In a saucepan, melt 1 cup of butter. Stir in 1 cup water and 4 tablespoons cocoa powder. Remove from heat and set aside.
- In a medium bowl, dissolve the baking soda in 1/2 cup of buttermilk. Stir in the eggs and vanilla. Mix in the cooled cocoa mixture.
- In a large bowl, sift together the flour, sugar, cinnamon and salt. Make a well in the center and pour in the cocoa buttermilk mixture. Stir until blended. Pour batter into prepared pan. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Ice the cake with Buttermilk Pecan Icing while it's still warm.
- For the icing: In a large saucepan, melt 1/2 cup butter with 4 tablespoons cocoa. Stir in 1/3 cup buttermilk, and heat until almost boiling. Stir in confectioners' sugar, vanilla, salt and pecans. Remove from heat. Mix well and pour over warm cake.
