- In a large bowl, whisk milk, pudding mix and vanilla for 2 minutes (mixture will be thick). Fold in 3 cups whipped topping. , Pour 1-1/3 cups of pudding mixture into pie crust. Layer with banana slices and remaining pudding mixture. Top with remaining whipped topping. If desired, garnish with additional banana slices. Refrigerate until serving.

Old Fashioned Banana Cream Pie is a homemade pie recipe, like the one your grandma used to make. If you're crazy for classic cream pies, this needs to be on your Easter table! A tender, flaky crust piled high with bananas and creamy vanilla pudding, topped with a fluffy cloud of fresh whipped cream, more bananas and chocolate shavings on top.

- Mix flour, salt and sugar in a medium-size bowl. Add pieces of chilled unsalted butter. Using a pastry blender, cut in butter until mixture resembles coarse meal.
- Add 2 tablespoons ice water and using your hands knead until dough comes together , DO NOT OVERDO IT!!! (If it's still crumbly, add water a tablespoon at a time, up to 2 more tablespoons, but don't use too much water or the crust will shrink while baking).
- Flatten the dough into disks, wrap in plastic and refrigerate at least 1 hour.
- Roll the dough on a floured surface into a 14-inch round, wrap around rolling pin and carefully unroll over a 9-inch pie plate and gently press into bottom and side of plate. Trim dough to a 1-inch overhang, fold under, and seal to form a rim, then crimp the rim with fingertips. Using a fork poke the bottom of the crust or use pie weights. Wrap with plastic wrap and set in the fridge or freezer. The dough must be well chilled before baking!!!
- Bake in preheated oven at 375 F until golden brown. Cool completely and set aside.
- In a large saucepan, stir together sugar, cornstarch, salt and milk until smooth. Cook and stir over medium-high heat until thickened and bubbly(about 8 minutes) then reduce heat and cook and stir 2 minutes longer. Remove from heat and stir a small amount of hot filling into eggs stirring well (be careful not to scramble the eggs) return all to pan and bring to a gentle boil. Cook and stir 2 minutes longer.
- Remove from heat and stir in butter and vanilla. Transfer to a bowl, cover, and chill for 30 minutes.
- Spread half of the vanilla pudding into cooled pie crust. Slice bananas and arrange over filling. Pour remaining pudding over bananas, cover and set in the fridge until thicken (for 6 hours or overnight).
- Before serving, make the whipped cream. Beat the heavy whipping cream on high speed until stiff peaks form, adding 1/2 tablespoon of powdered sugar slowly during mixing.
- Top pie with whipped cream and banana slices. Sprinkle with chocolate shavings if desired.

If you are using a vanilla bean, scrape well and add to pot, along with empty bean (you will remove this later). In a large saucepan, combine the sugar, flour and salt; If you used a vanilla bean, you may now remove it. Gradually stir in the scalded milk, whisking constantly. Cook until thickened over medium heat, stirring constantly. Cooking times will vary, depending on your stove top. Once mixture thickens, reduce heat to medium-low and cook for another 2 to 3 minutes, stirring occasionally. Meanwhile, separate your eggs. In a small bowl, lightly beat the 3 egg yolks; DO NOT ADD to the saucepan yet, you will need to temper the egg yolks first! To do so, add the hot mixture a little at a time, stirring continuously (start out by adding a tablespoon at a time) and once you have added enough of the mixture to slowly bring the temperature of your egg yolks up, you may add the yolks to the saucepan. Continue to cook for one minute longer, stirring constantly. Your mixture should look about the same thickness as this, and should be able to easily coat the back of a spoon without dripping off. Remove saucepan from heat and blend in the butter. Set aside and allow to cool until lukewarm; your mixture will continue to thicken as it cools. When custard is cooled: slice bananas and layer in pie shell. Pour custard over bananas. Refrigerate for 2 to 3 hours, or until custard is set. Top as desired. * Whole milk is recommended; if you are using anything less (1-2%) I suggest substituting a portion of it with heavy cream to obtain the necessary consistency for the custard.

GRANDMA'S BANANA CREAM PIE
My grandmother was a wonderful cook, made great pies, and this was my favorite. She always used a homemade pie crust and served it with a dollop of Cool Whip or whipped cream on top. She didn't give me any idea how many bananas to use...so I guessed. She would also use the same custard, making a half batch, for the filling in cream puffs.

- TO MAKE FILLING: Mix flour and constarch with 1/3 cup cold milk to make a thin smooth paste, and set aside.
- In a separate bowl, beat egg yolks, then add sugar and salt and beat well.
- In a medium saucepan, scald remaining milk, stirring constantly.
- While you continue stirring the milk in the pot, add a small amount of the scalded milk to the flour paste and a small amount to the egg/sugar mixture.
- Pour both mixtures into the pot with the scalded milk and stir well.
- Cook over medium heat, stirring constantly, until thickened. Remove from heat.
- Add butter and vanilla, and stir well.
- TO ASSEMBLE PIE: Pour a layer of custard filling in in the pie shell.
- Place a layer of sliced bananas on top of the filling, then repeat with custard & bananas, and ending with a final top layer of custard.
- Refrigerate once the custard has cooled.
- Serve with whipped cream or Cool Whip.

- 1. Pie Crust. Pre-heat the oven to 425 degrees (F). Prepare a pie crust for a 9 inch deep dish pie pan (I use acrylic). Flute the edges and prick the bottom with a fork. Press aluminum foil against the inside of the pie dough and weight it to stabilize the crust. Bake for 20 minutes. Remove from the oven and remove the aluminum and the weights. Reduce the oven to 375 degrees and return the pie crust and bake for an additional 10 minutes. Crust should be nicely brown.
- 2. Custard mixture. Mix together the sugar, cornstarch and salt. Add, the milk and the egg yolks. Put the mixture in a medium saucepan an cook on medium to medium high, whisking the mixture constantly until large boil bubbles form. (Note: unless the custard begins to boil. the corn starch will not sufficiently thicken the mixture). Reduce heat until the custard thickens. Remove from heat and add the cut up butter and the vanilla and whisk well. Add one half of the custanrd to the prepared pie shell. Cut up the bananas and completey cover the custard. Add the remaining custard to cover the banana layer.
- 3. The Meringue. With a hand mixer, mix the egg whites and the cream of tarter until frothy. Gradually add the sugar and the vanilla and beat at high speed until stiff. Spread evenly over the top of the pie. Bake in a 400 degree oven for 15 minutes until the meringue is nicely brown. Allow the pie to cool.
