2 (9 inch) unbaked pie crusts
7 cups peeled, cored and sliced apples
1 cup white sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
¼ teaspoon salt
2 tablespoons butter

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a bowl combine apples, sugar, flour, cinnamon, nutmeg and salt. Place mixture in a pastry-lined 9 inch pie plate. Dot with butter and adjust top crust that has been vented.
  • Place in oven and bake at 425 degrees F (220 degrees C) for 10 minutes. Turn oven temperature down to 275-300 degrees F (135-150 degrees C) and bake 40-50 minutes or until crust is golden brown and apples are tender. Let cool and serve.

A good old-fashioned apple pie really takes some beating for comfort. This recipe is both quick and easy a lovely dessert or perfect tea time treat.

For the Pastry:
1 2/3 cups (200 grams) all-purpose flour
Pinch of salt
4 ounces (110 gram) cubed butter, or an equal mix of butter and lard
2 to 3 tablespoons cold water
For the Filling:
1 1/2 pounds (700 grams) cooking apples (peeled, cored and quartered)
2 tablespoons lemon juice
4 ounces (110 grams) sugar
4 to 6 tablespoons cold water
1 teaspoon ground cinnamon, optional
1 ounce (25 grams) butter
1/4 cup milk, more or less, to glaze

Steps:

  • Gather the ingredients.
  • Place the flour, butter and salt into a large, clean bowl.
  • Rub the butter into the flour with your fingertips until the mixture resembles fine breadcrumbs, working as quickly as possible to prevent the dough becoming warm.
  • Add the water to the mixture and using a cold knife stir until the dough binds together, add more cold water a teaspoon at a time if the mixture is too dry.
  • Wrap the dough in clingfilm and chill for a minimum of 15 minutes, up to 30 minutes. Heat the oven to 425 F / 220 C / Gas 7.
  • Gather the ingredients.
  • Simmer the apples with the lemon juice and water in a large pan until soft. Add the sugar and cinnamon to the cooked apples. Remove from the heat and add the butter and leave to cool.
  • Roll out half the pastry and line a 7-inch (18-centimeter) pie dish. Put the cooled, cooked apple mixture into the pastry case.
  • Roll out the remaining pastry to make a lid for the pie. Damp the edges of the pastry in the dish with a little cold water, cover with the lid, press the edges firmly together and crimp to decorate.
  • Brush the top of the pie with milk and bake in the middle of a hot oven for 20 to 25 minutes.
  • Serve hot or cold with cream, ice cream or custard sauce.

I got this recipe out of cook book called "Calling all Cooks". It is more like a cobbler/crisp type pie than the traditional apple pie, but it is oh so good. Serve it cold or hot with vanilla ice cream.

1 teaspoon cinnamon
1/2 cup melted butter
1 cup flour
1 teaspoon sugar

Steps:

  • Peel and slice apples and lay in deep dish pie plate.
  • Sprinkle white sugar on top of apples.
  • Sprinkle cinnamon on top of sugar.
  • In separate bowl melt butter and mix with dry ingredients.
  • Spoon and press this to cover apples.
  • Bake for 45 minutes on 350°F.

Pastry for one 9 inch pan

Steps:

  • Mix sugar and flour together and spread in pastry shell.
  • Pare apples and cut in quarters; fit tightly together in shell, on op of flour mix.
  • Sprinkle apples with cinnamon and dot with butter.
  • Pour milk over the mixture.
  • Bake at 350 for one hour.

I found this recipe in Ohio magazine this month (October 2005). Bramley's Seedling apples are good for cooking. They have a greenish-yellow skin with red and brown stripes and are commonly used for baking in the British Isles. This recipe is said to have come from Thomas Dawson of London in 1587.

6 large bramley's seedling apples
1/2 cup water
1 cup sugar
2 teaspoons cinnamon
1 teaspoon ginger
2 tablespoons butter
2 eggs, lightly beaten
2 tablespoons Applejack (apple brandy)
1 pie crust, refrigerated

Steps:

  • Gently boil the apples (it's not necessary to pare, core or slice them) in water in a covered saucepan until the fruit is very tender, about 30 minutes. Drain the apples, return to pot. Using a potato masher, mash the apples. Force the mashed fruit through a strainer with the back of a spoon.
  • Preheat the oven to 425 degrees. Flavor the mashed fruit with the sugar, cinnamon and ginger. Mix in the butter, eggs and applejack. Line a 9-inch glass pie pan with crust. Pour in the mixture and bake for 10 minutes. Reduce heat to 350 degrees and bake for an additional 30 minutes.

My Grandma's Old Fashioned Apple Pie recipe with an amazingly flaky crust and delicious apple cinnamon filling.

For Filling
8-10 apples peeled and sliced
1/2 cup brown sugar
1/2 cup white sugar
1 1/2 tsp cinnamon
2 tbsp Minute tapioca
For Pie Crust
2 1/2 cups all purpose flour
1 tsp salt
1 1/2 tsp sugar
1/2 cup butter (chilled)
1/2 cup lard (chilled)
5-7 tbsp ice cold water

Steps:

  • For the Pie Crust
  • Mix together flour, 1 1/2 tsp. sugar and 1 tsp. salt.
  • Using pastry blender, blend together chilled butter, lard and flour until crumbly (pea size chunks).
  • Start by blending 4 tablespoons of ice cold water into the flour/butter/lard mixture.
  • Add more water a tablespoon at a time until mixed and dough sticks together when pressed. Don't make too wet, just enough water to have dough come together.
  • DO not overmix or your pie crust will be tough.
  • Divide in half, cover with plastic wrap and chill for 30 minutes.
  • While dough is chilling, in large bowl toss together apple slices, white and brown sugar, tapioca and cinnamon.
  • Roll out pie dough to make two crusts that cover pie plate with about an inch excess.
  • Place one in bottom of pie plate.
  • Pile high with apple mix, cover with other pie crust, seal edges, cut slits for venting.
  • Sprinkle top with white sugar and cinnamon.
  • Bake 350 for about 1 - 11/2 hours until top is golden brown. Cover edge with a pie shield or foil if edge starts to brown too much while baking.
