Maryland Crab Cakes image

Maryland style crab cakes are well known for not having any filler and plenty of flavor. This is a copycat recipe of the Old Ebbitt Grill is located in Washington D.C.

1 pound lump crabmeat
1/3 cup mayonnaise
2 teaspoons Old Bay seasoning
1 tablespoon chopped parsley
1 tablespoon Dijon mustard
1 tablespoon water
4 Saltine crackers

Steps:

  • Pick the crab meat over to remove any shells or cartilage.
  • Combine the mayonnaise, Old Bay seasoning, parsley, mustard, and water and mix until smooth.
  • Add the mayonnaise mixture to the crab meat and mix, being careful not to break up the lumps of crab meat.
  • With your hands, crush the saltines into crumbs and carefully mix them into the crab mixture.
  • Form crab mixture into patties.
  • Pan-fry or broil the crab cakes until golden brown.

These are what crab cakes are supposed to be like. They are basically a fried lump of crabmeat, held together with a minimum of filler. Delicious!

8 saltine crackers, finely crushed
2 tablespoons mayonnaise
½ teaspoon Dijon mustard
½ teaspoon seafood seasoning (such as Old Bay®)
¼ teaspoon Worcestershire sauce
1 egg, beaten
salt to taste
1 pinch cayenne pepper
1 pound fresh crabmeat, well drained
¼ cup dry bread crumbs
2 tablespoons butter

Steps:

  • Mix saltine crackers, mayonnaise, Dijon mustard, seafood seasoning, Worcestershire sauce, egg, salt, and cayenne pepper in a large bowl.
  • Stir in crabmeat until mixture is combined but still chunky. Cover and refrigerate for 1 hour.
  • Sprinkle breadcrumbs on a plate.
  • Shape chilled crab mixture into 4 small thick patties; coat completely with bread crumbs.
  • Melt butter in a skillet over medium-heat; cook crab cakes until golden brown, about 4 minutes per side.

"ALL CRABMEAT" CRAB CAKES

Number Of Ingredients 20

1 1/2 cups cornflake crumbs
1-pound jumbo lump crabmeat
1 1/2 teaspoons homemade mayonnaise, or best-quality store-bought
1 1/2 teaspoons Old Bay seasoning
1/3 teaspoon cayenne pepper
1 large egg yolk
1 tablespoon red bell pepper, cored, seeded, finely diced
1 tablespoon yellow bell pepper, cored, seeded and finely diced
1 1/2 teaspoons fresh chives
1/4 teaspoon minced jalapeno pepper
2 teaspoons unsalted butter
True Orange Sabayon Sauce, recipe follows
Tartar sauce or spicy honey mustard sauce
2 large egg yolks
1 large egg
1 teaspoon grated orange zest
2 tablespoons fresh orange juice
2 tablespoons white wine
6 dashes hot pepper sauce
1/2 teaspoon salt

Steps:

  • Preheat oven to 375 degrees. Distribute the cornflake crumbs on a platter. Combine all the remaining ingredients except the butter and accompaniment in a nonreactive bowl and toss gently until well blended. Make 8 crab cakes no more than 3 inches thick, pressing the ingredients together well.
  • Place the cakes on the crumbs and coat lightly on all sides. Put the cakes on a baking sheet and dot each with a bit of butter.
  • Bake the cakes until just hot, about 6 minutes, and serve with one of the accompaniments.
  • Combine all the ingredients in a medium nonreactive bowl. Set up a double boiler, adding 3 inches of water to the bottom pot. Bring to the boil. Whisk the ingredients until frothy. Pour into the double boiler and continue to whisk until the sauce is lightly thickened, about 7 minutes. If the sauce seems to be thickening too rapidly, lift the top pot off the heat, whisking continuously to disperse heat. Return the pan to the double boiler and continue whisking until done.

These are the fastest, easiest crab cakes I have ever made and some of the best I have ever eaten! Serve with coarse mustard on the plate or your favorite mustard sauce.

1 egg
3 tablespoons mayonnaise
4 teaspoons lemon juice
⅛ teaspoon red pepper flakes
1 teaspoon dried tarragon
1 tablespoon minced green onions
8 ounces crabmeat
½ cup crushed buttery round crackers
1 tablespoon butter

Steps:

  • In a medium bowl, whisk together egg, mayonnaise, lemon juice, red pepper flakes, tarragon, and scallions. Gently stir in crabmeat, being careful not to break up meat. Gradually mix in cracker crumbs, adding until desired consistency is achieved.
  • Heat butter in a skillet over medium heat. Form crab mixture into 4 patties. Place patties in skillet, and cook until golden brown, about 5 to 6 minutes on each side.
